Ham Egg and Cheese Pockets
Homemade copycat hot pockets are so easy to make! You can freeze and reheat as needed – for breakfast or late-night cravings!
I have to admit. I lived off of Hot Pockets as a child.
And for someone who ate American food a few times a week, I remember thinking that this is as good as it gets. A frozen pocket that goes into the microwave to magically turn into a flaky pastry with oozing cheese, scrambled eggs and ham in less than a few minutes.
Genius. Pure genius. Except now, well now, you can make your own version with extra cheese and extra ham. And then microwave these bad boys for your 2:31AM cravings.
Now this is as good as it gets, right?
Ham Egg and Cheese Pockets
Ingredients
- 1 tablespoon olive oil
- 4 large eggs, lightly beaten
- Kosher salt and freshly ground black pepper, to taste
- 1 8-ounce tube crescent rolls
- 4 ounces thinly sliced ham
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside.
- Heat olive oil in large skillet over medium high heat. Add eggs whisking, until they just begin to set; season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; set aside.
- Remove rolls from the can, separating them into 4 rectangles, 2 triangles each. Press each rectangle to form a 6x4-inch rectangle, firmly pressing perforations to seal.
- Top half of each rectangle with eggs, ham and cheese. Fold dough from the top over the filling, pressing the edges to seal.
- Place onto the prepared baking sheet and bake until golden brown, about 12-13 minutes.*
- Serve immediately.

Great idea! Pillsbury sells the crescent roll dough in rectangle sheets now! I use those when I make ‘pigs in a blanket’ with Hillshire’s cocktail beef sausages. No more reconstructing the dough!!
Great recipe we use it at least three times a month but I highly recommend you do not use parchment or wax paper. Just use non-stick pan or spray
I love these so good! I even got my 14 year old son to make them so easy.
Cathedral be made the day before and not baked until the next morning?
Made with pulled pork and cheese. Never can get the dotted seams tight so just wrapped each up. About 1 1/2 – 3 T in each.

Help! I am an Australian and have made quite a few of your recipes but what are these crescent rolls that you have in this recipe and what can I substitute for them? They sound delicious……
You could use puff pastry or your favorite flaky pie crust. It won’t be exactly the same, but should still taste pretty great!
These turned out bigger than I thought they would be. I wasn’t sure my seals around the edges would hold, but they held together no problem.
Overall, these were easy to make, and you could easily rotate different vegetables and meats into the mix
Once they’re frozen, do you thaw them before reheating or do you microwave them while still frozen?
There is no need to thaw. 🙂
I do something similar with pre made biscuit dough.roll out dough to about double its size, fill with eggs, bacon, cheese, mushrooms, & spinach (we done with meatballs & cheese, philly cheese steak, tacos, sloppy Joe’s the possibilities are endless) just fill & bake as directed

Since I am new to cooking, I have no idea how to make these. Now I do, but earlier I read the “Remove rolls from the can, separating them into 4 rectangles, 2 triangles each” and Had NO idea what it meant. I googled how to make it, images didn’t help, but this video did https://www.youtube.com/watch?v=AchZe9TIGEk I thought that is what the recipe meant then I saw an image and I knew i was wrong. But the food still turned out well. just messy.
Use some puff pastry sheets instead, turned out crispy and delicious!
Made these last night with some leftover ham I froze from Thanksgiving. They were delicious.
My kid said keep this on the rotation. I will be doubling the recipe next time to make more than 4.
I have to figure out my egg problem though. They were set but not all the way on top. Should I put a lid on it? I’m assuming you meant after whisking until they start to set you leave them alone right? Thanks!

I LOVE making homemade hot pockets!! I haven’t tried it with the crescent rolls, or egg either come to think of it. I usually do pizza or ham/cheese/broccoli. But this is going on the list! Thanks!
