Korean Beef Bowl Meal Prep

Tastes like Korean BBQ in meal prep form and you can have it ALL WEEK LONG! Simply prep for the week and you’ll be set. EASY!
I’m baaaaaaack. And back on meal prep, unfortunately.
Well, it’s not unfortunate. I just miss the mardi gras colored dumplings. The churros with soft serve ice cream. The Hello Kitty dim sum. The 32cm ice cream cone.
But hey. These meal prep boxes. They come to an obvious close second.
They are such comfort food for me right now, except they are perfectly portioned with brown rice, sautéed garlic spinach, and some eggs for added protein.
It’s a full meal without getting you to overeat, or lead you to a food coma mid-afternoon.
And you know you can always swap out the ground beef for pork or chicken, or even crumbled tofu for a meatless version.
And I won’t be mad if you snuck in some veggies to the ground beef like carrots, bell peppers, zucchini, etc.
I won’t be mad at. all.
Korean Beef Bowl Meal Prep
Ingredients
- 1 cup brown rice
- 4 large eggs
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 cups chopped spinach
Instructions
- In a large saucepan filled with 2 cups of water, cook rice according to package instructions; set aside.
- Place eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil and cook for 1 minute. Cover eggs with a tight-fitting lid and remove from heat; set aside for 8-10 minutes. Drain well and let cool before peeling and slicing in half.
- Heat olive oil in a large skillet over medium high heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in spinach until wilted, about 2-3 minutes; set aside.
- In a small bowl, whisk together brown sugar, soy sauce, ginger, sesame oil and Sriracha.
- Heat olive oil in a large skillet over medium high heat. Add garlic and cook, stirring constantly, until fragrant, about 1 minute. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.
- Stir in soy sauce mixture and green onions until well combined, allowing to simmer until heated through, about 2 minutes.
- Place rice, eggs, spinach and ground beef mixture into meal prep containers, garnished with green onion and sesame seeds, if desired.

This might be a dumb questions but do you heat up the egg too when you reheat these for lunch?
I’ve always had cold HB eggs but I’m not sure with this !
Yes, you can reheat or keep them cold – up to you!

I made this for my meal prep this week and used tofu. It was super delicious and meal prep keeper! I did everything the same, but I froze my block of tofu, defrosted, pressed and crumbled.

I did baby bok choy in flavored olive oil with garlic- avocado blood orange evoo_ added a great citrus tang!
What if i remove the EGGS, I dont like eggs and i would love to serve this at home and Office so i dont think everyone will eat Beef. I would love to change beef to chicken or lamb is that possible. Please tell me how to use Lamb or Chicken instead of beef.
Unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications. You can omit the eggs if you wish.
Along with your freezer breakfast burritos, I made these for my husband’s lunches for this week. He was very excited and said he can’t wait for the rest of the week.
