Instant Pot Spinach and Artichoke Dip

We all need that crowd-pleasing appetizer, the one that feeds an army but doesn’t require too much work. Oh, and preferably one that doesn’t require the oven.
Because, hello, we’re in the summer heat!
That’s where this spinach and artichoke dip comes in.
It is by far one of the easiest dips I have ever made with the help of the Instant Pot. It takes care of all the work for you in just 3 minutes using frozen chopped spinach that doesn’t require any kind of thawing or squeezing dry! This is too easy, right?
Once you release the pressure, you get to the best part – you get to stir in all that glorious Cabot cheese!

Instant Pot Spinach and Artichoke Dip
Ingredients
- 1 (10-ounce) package frozen chopped spinach
- 1 (14-ounce) can quartered artichoke hearts, rinsed and drained
- 1 (8-ounce) package cream cheese, cubed
- 1 cup sour cream
- ½ cup chicken stock
- 4 green onions, thinly sliced
- 3 cloves garlic, minced
- ½ teaspoon kosher salt
- ¼ teaspoon crushed red pepper flakes
- 2 cups shredded Cabot Seriously Sharp Cheddar Cheese
- 1 cup shredded Cabot Monterey Jack Cheese
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Place spinach, artichoke hearts, cream cheese, sour cream, chicken stock, green onions, garlic, salt and red pepper flakes into a 6-qt Instant Pot®. Stir until well combined.
- Select manual setting; adjust pressure to high, and set time for 3 minutes. When finished cooking, quick-release pressure according to manufacturer’s directions.
- Stir in cheeses until melted, about 2 minutes.
- Serve immediately, garnished with parsley, if desired.

I plan to make this tonight but didn’t realize the spinach stayed frozen. Can it be used thawed? If so should I drain it? Thanks!

I just made this for a holiday party, and it’s absolutely perfect. I couldn’t find the Cabot cheese, but made do with a white sharp cheddar and Monterey Jack cheese I found, and it was great. The only thing I added was a little bit more salt, as I found it a tad bland. But will be making this again over and over. Thanks, Chungah!
This is a question, not a review, but rating 5 stars cuz everything on this website is so damn delicious, so I have confidence this recipe is another 5-star 🙂 … My question is if anyone has tried this recipe in an IP MINI (3Qt)? My assumption is I give it LESS cook time, because I have read that the IP Mini comes to pressure faster, but I would love to learn from someone that has tried it. I’ve made this recipe once before and it was absolutely delicious! Portioned out and frozen in ziploc bags, it makes for a great, late night movie snack!
Whipping up a new batch as I write this, except this time around I forgot to hold back the cheese until after, and just dumped everything in. Oops. Guess I’ll see how it turns out in a few minutes! 😛

Hi Theresa! When using an 8qt Instant Pot, the timing should stay relatively the same. It would just take a little longer for it to come to pressure. But as always, please use your best judgment when making substitutions and modifications.
This may be a silly question, but what brand of tortilla chips are pictured? They look so good!

What other alternatives can I use instead of Cabot?
You can substitute a different brand of sharp cheddar and Monterey Jack cheese that is readily available, although we are partial to Cabot. 🙂
I put my instant pot duo nova in high pressure and I got a burn food notice! So I put it in on low setting and we will see
Same thing happened to me. We have the same instant pot. I shut it right down but it scorched it.
Don’t have an instant either can I use my crockpot instead and cook longer. No intentions of buying a instapot, as I have too many appliances
i chose this recipe because i was trying to use up fresh spinach & green onions in my fridge, and i loved it!! so, so easy! i was scared about using the fresh spinach instead of frozen but was dying to use it before it went bad and i think it turned out great! the texture/taste did not suffer because of the switch. will DEFINITELY make this again!
