I love taking these snack boxes out and about with me for the day.
They provide a high protein, high fiber and nutritious snack anytime throughout the day.
- The turkey, almonds and egg provide a ton of protein and fiber.
- The tomatoes are a great source of antioxidants and vitamin C.
- The cheese contains calcium and vitamin D for healthy strong bones.
Plus, this box has something for every mood I go through.
The almonds and pita crackers have the crunch factor. The tomatoes are on the sweeter side. And then the cheese and turkey are for the savory fans.
And you know these are not only light on the wallet but they are also super simple to make ahead of time for the entire week!
Deli Snack Box
Ingredients
- 2 ounces thinly sliced turkey breast
- 1 large egg, hard boiled
- ¼ cup cherry tomatoes
- 1 ounce sharp cheddar cheese, cubed
- 4 pita bites crackers
- 2 tablespoons raw almonds
Instructions
- Place turkey, egg, tomatoes, cheese, crackers and almonds into meal prep containers.

Are these part of a weight watchers diet plan?
Hi Alice! This is actually not specifically part of a Weight Watchers diet plan.
I would suggest making your own “crackers”. There many cracker recipes that would give a higher fiber and lower carb content. Depending on the brand, most pita crackers are 2 grams per one cracker. Other than that, this is a great idea for lunch!

I am vegetarian and woukd love to have vegetarian option. Don’t eat meat so turkey is out. Eat cheese but in very small amounts.

I love this pre-packed lunch idea, and Have enjoyed many of your recipes. My concern is that your nutrition information is misleading, in particular, calling this item “high fiber”. By definition, a “high fiber” item must have at least 5g fiber per serving. And your analysis shows this only has 3g. Â Please check your terminology before making nutrition claims!

silly question…. but do you prep these all at once say on a Sunday evening and they remain fresh ALL WEEK? I’m curious about the lunch meat staying fresh not wrapped or the cheese getting hard. Sounds silly I know. Lol
Yes, you can prep this ahead of time but methods for optimal food storage and shelf life should be based on good judgment and what you are personally comfortable with.

Do the crackers get soggy if they’re in the same box with the other stuff for too long?
Not at all! 🙂
Yes, they do get soggy, even after one day. The almonds got a little soggy, too. The second time I built these boxes, I just put the almonds in a smaller container inside the larger box. I kept the crackers in a separate container (a reusable sandwich pouch). It worked out much better.
