Turkey Spinach Pinwheels Meal Prep

Prep your lunches for the week with these turkey spinach and cheese pinwheels! No more overpriced snacks and lunches!!!
This is a box loaded with plenty of goodies.
First off, we have these mini pinwheels using deli turkey rolled with spinach and cheese, but you can have so much fun playing around with them.
- You can substitute the turkey for ham or chicken or even make a PB&J for a kids’ version. Although that may sell to adults too.
- You can use a different type of cheese depending on your preference like pepper jack for a kick of heat. I have one client who even adds a little bit of Sriracha!
- You can substitute the spinach for arugula or kale, or any other type of greens that you prefer.
- There are also so many amazing choices for wraps these days from sprouted grain, gluten-free to these awesome spinach wraps. They are much healthier than your average tortilla wrap and tastes a lot more exciting too!
Then, we have our snacks.
The baby carrots provide just enough crunch and are highly nutritious, providing beta-carotene, fiber, vitamin K, potassium and antioxidants.
The cucumbers provide healthy digestion and contain multiple B vitamins known to help ease feelings of anxiety and stress.
This box is also perfect if you have a sweet tooth. The grapes will help satisfy that craving and stop you reaching for the refined sugary snacks instead. You can also substitute the grapes for your fruit of choice.
Overall, this meal prep box always feels like a mini meal which I find I need mid-afternoon before my evening meal.

Turkey Spinach Pinwheels Meal Prep
Ingredients
- 1 slice cheddar cheese
- 2 ounces thinly sliced turkey breast
- ½ cup baby spinach
- 1 8-inch spinach tortilla
- 6 baby carrots
- ¼ cup grapes
- 5 cucumber slices
Instructions
- Place cheese, turkey and spinach in center of tortilla. Bring the bottom edge of the tortilla tightly over the spinach, folding in the sides. Continue rolling until the top of the tortilla is reached. Cut in sixths.
- Place wraps, carrots, grapes and cucumber into meal prep containers.

What brand tortilla are you using?
I am actually just using a generic brand from my local grocery store!
i’ve made pinwheels for my daughters lunch but the pinwheels don’t stay together. any tips?
You can secure with toothpicks if they are not staying together.
I spread a thin layer of cream cheese on mine, all the way to the edge of the tortilla. Wrap it up tightly in saran wrap for a few hours and then slice it up 🙂
I would use Havatti but I do love all cheeses!

The whole pinwheel box lunch ends up being about 290 calories per MyFitnessPal nutrition calculator. Could even add 2 tablespoons of low fat onion chive cream cheese to the pinwheel and still only be at 360 calories 🙂
