Fried Chicken Sandwiches

KILLER buttermilk fried chicken thighs! So crispy, so juicy. Served with Sriracha mayonnaise, coleslaw and pickles!
BUTTERMILK FRIED CHICKEN SAMMIES, guys. The only sandwich recipe you will need forever and ever. With a double coating, these chicken thighs are fried to absolute golden brown perfection. So unbelievably crispy and juicy.
To top it off, these bad boys are served on the butteriest brioche buns slathered with Sriracha mayonnaise (please feel free to add as little or as much Sriracha as your heat tolerance will allow you to do so), coleslaw (homemade or store-bought is totally fine here) and ALL the dill pickle chips.
Fried Chicken Sandwiches
Ingredients
- 1 ¼ cups buttermilk
- ¾ cup kosher pickle juice
- 1 tablespoon Sriracha
- 6 boneless, skinless chicken thighs
- 1 cup all-purpose flour
- ¾ cup yellow cornmeal
- 2 teaspoons baking powder
- 1 teaspoon cayenne pepper
- Kosher salt and freshly ground black pepper, to taste
- 6 cups vegetable oil
for the Sriracha mayonnaise
- ½ cup mayonnaise
- 2 tablespoons Sriracha
for serving
- 6 brioche hamburger buns, lightly toasted
- Coleslaw
- Dill pickle chips
Instructions
- In a large bowl, whisk together buttermilk, pickle juice and Sriracha.
- In a gallon size Ziploc bag or large bowl, combine chicken and buttermilk mixture; marinate for at least 4 hours to overnight, turning the bag occasionally.
- In a large bowl, whisk together flour, cornmeal, baking powder, cayenne pepper, 2 teaspoons salt and 2 teaspoons pepper.
- Working one at a time, remove chicken from buttermilk mixture and let excess drip off. Then dredge in flour mixture, dip into buttermilk mixture, then dredge again in flour mixture, pressing to coat.
- Heat vegetable oil in a large stockpot or Dutch oven over medium high heat until it registers 360 degrees F on a deep-fry thermometer.
- Working in batches, add chicken and fry until golden brown, turning occasionally, about 4-5 minutes. Transfer to a baking sheet fitted with a wire rack and keep warm.*
- In a small bowl, whisk together mayonnaise and Sriracha.
- To serve, spread buns with Sriracha mayonnaise, then top with chicken, coleslaw, and pickles.

This was quite tasty but I think I’d like to cook chicken in cast Ron pan. Really don’t like frying things. A nice tasty change from regular grilled chicken bunwich. Will make again.

I just got one, and have been amazed at how good everything has turned out! Let me know anyone, if you have tried them in the air fryer..trying to replicate this sort of fried chicken result!
So delicious!! I followed the recipe exactly and they came out so perfect, juicy and crunchy! Next time I will add Voodoo Signature Spice to the breading mixture but that’s literally the only change I would make!

Really great recipe. I used avocado oil and the oil got dirty (I think) and the ones cooked last didn’t have that golden buttery look to them and had a lot of black spots. Still delicious.
Any thoughts on how to keep the golden buttery look? Thanks

A couple changes!
I used creole seasoning on the chicken and in the batter. I also used broccoli slaw that I mixed with coleslaw seasoning. I also added honey to the Mayo based sauce. I fried in the air fryer 10 minutes on each side and added spicy pickle chips. Delicious!
Absolutely delicious!! I mixed the coleslaw with the Sriracha Mayo. So yummy! I even used chicken breasts as I didn’t have thighs. So good – a keeper!
How long would you cook these in an air fryer?

I did these in the air fryer at 360. 15 minutes, open and spray the flour with cooking spray, flip, and cook for about 5 more minutes. Turned out very similar! Key is to spray any parts where you see flour after 15 minutes.
I prefer them fried like Chungah says, but we were trying a healthier way 🙂 Next time I might decrease the corn meal if I am going to air fry them as it gave a slightly harder outside texture. Still yummy! Hope that helps.
Guys–leave the ‘air fryer’ alone…it ain’t frying by any measure.

What can I substitute pickle juice with ? I have a non pickle like in the house !!. For shame !!!
These look delicious but I truly hate the mess of frying. However, this post has given me a great idea to make your oven fried chicken thighs and slaw and make them into sandwiches on brioche buns with pickles. Slaw on the side or on top or both! We have loved your oven baked thighs for years! Thanks for the inspiration to serve them in a different way. Yum!

Love the addition of cornmeal. I made coleslaw with more pickle juice (no mayo) pickles and some pickled jalapenos, cilantro and green onion. Good stuff.
Also great with tapatio or chulula hot sauce instead of Sriracha.
