Chicken and Broccoli Stir Fry
The easiest stir-fry you will ever make! With the juiciest, tender chicken bites and sneaked in veggies!
Hello easiest-dinner-ever. It’s such a quick, speedy stir-fry using of course, chicken thighs (my favorite!), yielding the juiciest, most tender chicken bites ever. But don’t worry, you can swap them out for chicken breasts if dark meat is not your thing.
I also added some broccoli for those sneaky greens, soaking up all that saucy goodness. But you can use any veggies you have on hand – carrots, zucchini, cauliflower, snap peas, baby corn, you name it! They are all good here.
Chicken and Broccoli Stir Fry
Ingredients
- ½ cup chicken stock
- ¼ cup oyster sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon freshly grated ginger
- 3 cloves garlic, minced
- 1 teaspoon Sriracha, optional
- 1 pound boneless, skinless chicken thighs, cut into bite-size pieces
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons cornstarch
- 1 tablespoon canola oil
- 1 tablespoon sesame oil
- 3 cups broccoli florets
- ½ teaspoon toasted sesame seeds
Instructions
- FOR THE CHICKEN STOCK MIXTURE: In a small bowl, whisk together chicken stock, oyster sauce, vinegar, ginger, garlic and Sriracha, if using; set aside.
- Season chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper.
- In a medium bowl, combine chicken and cornstarch.
- Heat canola oil and sesame oil in a large skillet over medium high heat.
- Working in batches, add chicken to the skillet in a single layer and cook until golden brown, about 7-8 minutes. Stir in broccoli and CHICKEN STOCK MIXTURE until broccoli is just tender, about 3-4 minutes.
- Serve immediately, garnished with sesame seeds.

This is one of my go-to weekly recipes for my family ever since I discovered this recipe! The sauce is heavenly! The oyster sauce has a lot of sodium so I omitted the salt on the chicken but even then I love it all. Thank you for sharing this delicious gem!
This was okay. I don’t know if it was user error, but this was too salty for us. If I do this one again, I would add more veggies and less salt.

I had a bag of mixed fresh veggies and some peppers, so I doctored this up a tad. I also added a few cashews…just because.
The sauce is wonderful. I had been in a rut with soy sauce, and the oyster sauce gave much deeper flavor. Even with low salt soy, I get cotton mouth–which didn’t happen with this recipe.
I also like the trick of putting the cornstarch directly on the chicken. It gave a lovely texture and the meat didn’t get lost in a gloppy gravy.

One quick question. When I see sesame oil in a recipe , should I always assume untoasted? Is toasted sesame seed oil on when specified? Thanks. This has plagued me for awhile.

Very good and loved how light it was. Added carrots for color. My chicken did not look as brown as shown in the picture, though I did use chicken breasts instead of thighs. Either way, a keeper for sure.

This recipe is so freaking good. I don’t know why I’m amazed every time I try a recipe from this site, because they are all great. Prep everything 1st, definitely use fresh garlic and ginger. We had cauliflower rice with our meal. This will be a weekly meal. Thanks for a great recipe.
Yep, this is amazing! I made it with quinoa and it turned out so well. To those who have had problems with the chicken sticking, I’d recommend making sure the oil is quite hot before you put in the chicken, and then don’t touch the chicken until it gets brown on the bottom.
