Winter Pear Salad with Meyer Lemon Vinaigrette

I discovered the magic of Meyer lemons just last year but by the time I found out about it, I couldn’t find them anywhere! So as soon as they were in season late December, I got a huge Costco-sized box of Meyer lemons.

I’ve made so many things with these lemons but my most favorite way to use them is in this vinaigrette. With just enough tartness and sweetness, it serves as the perfect complement to the fresh pears, crunchy walnuts and creamy goat cheese.

This salad will definitely be in rotation at our house, although I’m a bit worried for when Meyer lemons are out of season. Regular lemons just won’t cut it!

Winter Pear Salad with Meyer Lemon Vinaigrette

Ingredients

  • 4 cups mixed baby greens
  • ¼ cup crumbled goat cheese
  • ¼ cup walnuts
  • 2 tablespoons dried cranberries
  • 1 pear, thinly sliced

For the vinaigrette

  • ¼ cup olive oil
  • ¼ cup Meyer lemon juice
  • 1 zest of 1 Meyer lemon
  • 2 teaspoons sugar

Instructions

  • To make the vinaigrette, whisk together olive oil, Meyer lemon juice and zest and sugar in a small bowl; set aside. 
  • To assemble the salad, place baby greens in a large bowl; top with the goat cheese, walnuts and dried cranberries. Pour the dressing on top of the salad and gently toss to combine. Serve immediately topped with sliced pear.
