It’s barely 8:00PM and I’m ready to go to bed as I’m watching the second Twilight movie. I can’t stand any of the Twilight films yet I get kind of hooked when they’re playing on TV. It’s ridiculous, I know. I think I just keep watching it just to make fun of it. That’s what I do with Keeping Up With The Kardashians and Married to Jonas. Or maybe I just say that to myself because it’s secretly my guilty pleasure. I don’t know.

Anyway, let’s talk about something I do know. Granola. I love granola. Love it love it love it, especially when Nutella and banana chips are involved – my two most favorite things ever. It’s so great with milk, yogurt or over ice cream and you could seriously have it anytime throughout the day. It definitely serves as a healthy snack so you can munch on these constantly guilt-free!

One year ago: Mushroom Linguini

Banana Nutella Granola (adapted from Sally’s Baking Addiction):

Yields 5 cups

INGREDIENTS:

  • 3 3/4 cups old-fashioned rolled oats
  • 1/2 cup ground flax
  • 1 cup almonds
  • 1 teaspoon cinnamon
  • 1 banana, mashed
  • 1/4 cup Nutella
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup miniature chocolate chips
  • 1 cup banana chips

DIRECTIONS:

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside.

In a large bowl, combine oats, flax, almonds and cinnamon; set aside.

In a small saucepan over medium low heat, melt banana, Nutella, maple syrup, vanilla and salt until mixture begins to boil. Remove from heat; pour mixture over dry ingredients and stir using a rubber spatula just until moist.

Spread mixture onto prepared baking sheet. Place into oven and bake for 20-25 minutes, stirring the mixture halfway through baking. Stir in chocolate chips and banana chips.

Let cool completely.
