5-Ingredient White Chicken Chili
All you need is 5 ingredients and 15 min from start to finish! That’s it! It doesn’t get any simpler, easier or tastier!
Greetings from Seattle!
I’ve had such a wonderful time here in this beautiful city, soaking up so much culture, meeting great people and spending time with great friends.
But before I attempt to catch a few hours of shut-eye to catch my early morning flight back to San Francisco, I just had to share this epic chili.
It takes just five ingredients and it comes together in fifteen minutes from start to finish.
Really.
All you need is chicken broth, leftover roasted chicken from the night before, beans, salsa verde and cumin. That’s it!
From there, you can add some fun toppings like fresh avocado and sour cream but either way, you’ll be so cozy with a piping hot, steaming bowl of this chili.
You’ll also be able to feed an army with this so you’ll be well fed for a couple of nights!
5-Ingredient White Chicken Chili
Ingredients
- 6 cups chicken broth
- 3 cups leftover diced rotisserie chicken
- 2 15-ounce cans Great Northern beans, drained
- 2 cups salsa verde
- 1 teaspoon ground cumin
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh cilantro leaves
Instructions
- Heat a large stockpot or Dutch oven over medium heat. Stir in chicken broth, chicken, beans, salsa verde and cumin; season with salt and pepper, to taste.
- Bring to a boil; reduce heat and simmer until heated through, about 5 minutes.
- Serve immediately, garnished with cilantro, if desired.

Absolutely LOVE this recipe!! I’ve been making it for years and it’s perfect just the way it is but I like to add corn in mine. Top with cilantro, cheese, and sour cream for the perfect bowl!
Love every one of your recipes!!! This one is so easy and delicious! I’ve shared this recipe with many friends who love it. A little shredded cheddar, sliced avocado and a squeeze of fresh lime juice makes this dish a 10 out of 10. Thanks for such fantastic recipes.
This recipe was so easy and delicious! We brought all the ingredients on our road trip and made it for dinner one of the nights we were on vacation. The only thing we forgot to bring was the cumin, so we replaced it with some cayenne to give a little kick. We also sautéed some onion, celery, and red bell pepper before adding the other ingredients, and it turned out great! We will definitely be making this again.
This is a dream of a life saver recipe. Delicious, cheap, feeds a crowd, easy, fast. Boom. Thank you! Strongly recommend this recipe and am grateful to have it in my back pocket. Like other reviewers I also occasionally add spinach or kale.
Wonderful recipe!! Definitely a keeper for me. My family loved it. I did add fresh spinach for color and a “veggie”. Thank you for sharing.
I love this quick and easy recipe! As a matter of fact, I’ve made it the past two years after Thanksgiving using left-over turkey. I’ve been requested to make it again this year. It’s light, tasty, and super-easy to whip up in a hurry. I didn’t think the traditionalists would enjoy it, but they managed to surprise me. Thanks for such a clever recipe! It’s a definite keeper.
Sure fire crowd pleaser! This has been a favorite and consistent monthly go-to for the past 4+ yrs. Its in the instapot as I type! It can be garnished with so SO much: Avocados, Greek yogurt, jalapeños, lime or lemon, cheese, cilantro, a side of tortillas or tortilla chips. I made it for my ex and he said it was a dish that would get me a marriage proposal. HAHA! Indeed he did end up proposing but I dodged a bullet & fortunately it was short lived. BUT alls to say it will win over the next suitor… won’t be able to resist my charm, informed mind body chakras AND my white chicken chili.
Pro-tip- find a Greek style rotisserie chicken or just any rotisserie chicken; put the bone in for flavor & immune boosting minerals. That flavor is fiiiirrrrreee
That’s such a great idea! Thank you for sharing your tip, Nina! 🙂
OMG such an easy recipe! I used La Victoria Green enchilada sauce as it is what I had on hand. I also added 1/2 cup heavy cream at the end which made it so awesome! Thank you for such easy Ideas!!
White chicken recipe Is still among many optimal/optimally cream recipes that’s clearly a little different in the customary as it’s maybe not curry established. This really is constructed from chicken, cream, yogurt and lots of spices therefore be certain the individuals who that you are serving it appreciate hot food items and don’t have any allergies . Just lately I attempted this mouthwatering recipe, this really certainly one of those dish that was yummy.
I made this soup today without the chicken and with veggie broth so easy and so good, I will say the dollop of sour cream I added does help to make it super delish. Oh and I also added corn since I wasn’t using chicken, a good healthy easy vegetarian dinner! Thank you!
Great way to make it vegetarian! Love it!
Hi there! I was just wondering how spicy this dish is…i’ll be feeding a 6-year-old and a one-year-old, and i’m wondering if 2 cups of salsa verde might make this a little too much for them. Would it be possible to leave it out? Or is there anything I can substitute with if it’s necessary for texture? I’m so excited to try this!!
You can lessen the amount as needed but I do not have a recommended substitute at this time. Sorry!
just a quick update…I left out the salsa verde completely, and the recipe turned out fantastic! everyone enjoyed, and no lack of flavour either. Though I’m sure the salsa would have given it more punch. I will be testing with maybe a half-cup of the salsa next time, just to play it safe with the kiddies. SO DELICIOUS!
I am so glad it turned out well for you!
Hi! Could you make this in a crockpot with fresh chicken?
Thank you!
Unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications. Sorry, Logan!
Could green Chile enchillada sauce be used in lieu of Salsa verde in a pinch?

I love your white chicken chili recipe but I was wondering is there a way to make it just a little thicker with out adding to many calories?
You can add cornstarch as needed, 1 TBS at a time, until the desired consistency is reached.
Take a half cup or so of the beans and mash them up until its like a paste, then stir it back into the beans until it’s the consistency that you like.
Now my go-to recipe for white chicken chili! So fast, easy and flavorful! Thank you!
Wow, you just put the ‘C’ in comfort foods. This looks so good. Thank you for sharing it. This will go on my list of , “good foods to eat this winter.”
This recipe is awesome. I make it at least 2 times a month. I add canned diced tomatoes. Family loves it.
Might have to try this when I have a cold (:
What salsa verde do you like/use? Thank you.
I love Trader Joe’s salsa verde!
Is there any way I could add something to make this a needed Italian dish for a church function? Everyone is raving and I really like the idea of simplicity.
What do you mean by a needed “Italian dish”?
