5-Ingredient White Chicken Chili
All you need is 5 ingredients and 15 min from start to finish! That’s it! It doesn’t get any simpler, easier or tastier!
Greetings from Seattle!
I’ve had such a wonderful time here in this beautiful city, soaking up so much culture, meeting great people and spending time with great friends.
But before I attempt to catch a few hours of shut-eye to catch my early morning flight back to San Francisco, I just had to share this epic chili.
It takes just five ingredients and it comes together in fifteen minutes from start to finish.
Really.
All you need is chicken broth, leftover roasted chicken from the night before, beans, salsa verde and cumin. That’s it!
From there, you can add some fun toppings like fresh avocado and sour cream but either way, you’ll be so cozy with a piping hot, steaming bowl of this chili.
You’ll also be able to feed an army with this so you’ll be well fed for a couple of nights!
5-Ingredient White Chicken Chili
Ingredients
- 6 cups chicken broth
- 3 cups leftover diced rotisserie chicken
- 2 15-ounce cans Great Northern beans, drained
- 2 cups salsa verde
- 1 teaspoon ground cumin
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh cilantro leaves
Instructions
- Heat a large stockpot or Dutch oven over medium heat. Stir in chicken broth, chicken, beans, salsa verde and cumin; season with salt and pepper, to taste.
- Bring to a boil; reduce heat and simmer until heated through, about 5 minutes.
- Serve immediately, garnished with cilantro, if desired.

This is one of the best recipes for chili or soup I have ever tasted!!! It is light and wonderfully filling as well. BTW I love many of your recipes! Can’t Stop Cooking
Good, but very salty. Use low sodium chicken broth and try to find green chili salsa that is low in sodium.
Hey it’s a elegiac here ! Love this post. Fed it to my monkey sister she went ape ! Hahah. I’m creative. Sure do love how you added the verde instead of a natural red salsa. VERDE DAY ! Love you.

Bonjour, Hello
Delicious !
Thank you very much
Made this tonight for dinner! Oh em gee! I LOVED it!!! I’ve already shared with family, friends, and coworkers. So delicious! Thanks for sharing the recipe!! 🙂
Made this and it was so easy and delicious. My husband said I knocked it out of the park with this one. Great recipe. Will be making it again. Thanks!
where can I buy the salsa verda in Canada?
If you cannot find salsa verde, you can always try a homemade version!
thank you! 🙂
Sobeys has Salsa Verde! Just bought it today!
As the temps are dropping in So Cal….I have to come to my “Go-To” site and tonight’s dinner is this White Chicken Chili!! I’ve made this several times and it’s my husbands favorite!
We’ve made so many of these recipes and it’s been my go to site for many special occasions or when I’m in need of a quick, yet tasty (act like I’ve slaved all day) meal.
Thanks for sharing your love with us!!
It’s been a while Chung-Ah, but how’s your Corgi doing?
Fellow Corgi and Damn Delicious lover!

Butters has been great, and being as cute as ever, of course! You can follow his adventures on Instagram here: http://instagram.com/butterscorgigram.
He is so adorable!!! OMGosh, that FACE!!! May I share one of your/his photos on my FB page?…with credit to you and your site, of course. (The one where you went to the bathroom and he took your spot in bed. Lol)
Loved seeing your sweet Butters!!! Thanks for sharing him with us!! 🙂
Awww, thanks, Kathleen! The share is fine but I just ask that you credit the source appropriately.
This was so easy to make and DELICIOUS!! My family ate every last drop 🙂
This looks so amazing, but I don’t care for beans. Do you think this recipe would work if I left out the beans??
Lauren, as this recipe has only five ingredients and requires 2 cans of beans, I do not recommend omitting it entirely. If you are not a fan of beans, this recipe may just not be for you.
You could try puréeing the beans lending to a thicker soup but still giving their flavor.

Just made this tonight and loved it! I actually prepared it two days ago and then put in fridge for tonight’s dinner. Family loved it too! I have to tell you I am fairly new to your site, but have made at least 10 recipes and we have loved every single one. Thank you for making delicious food so easy to prepare. My husband has commented on several tasting restaurant quality (you are making me look like a trained chef!!). Keep em coming!
hope you don’t find this stupid, but what is salsa verde? have no clue
Salsa verde is also known as “green sauce”, which consists of pureed cooked or raw tomatillos, jalapenos or other chili peppers, white onion, cilantro, and lime.
Wow! Just made this with Trade Joe’s frozen chicken and chicken broth, salsa verde, and northern beans from Kroger and TJ. I added Publix mexican cheese and sour cream with a crumbled up tortilla chip. Best soup ever! So glad I found this!
Hi! I love easy recipes. What kind of chicken works best? If I’m lazy, is cut up rotisserie ok to use? And what kind of salsa verde? I’ve never used it before. Thanks!
You can certainly use rotisserie chicken. As for salsa verde, I use the brand from Trader Joe’s but any brand will work just fine in this recipe.
Great recipe and very light as well, thank you for sharing! I have a question though, do you drain the beans before putting them in or do you put them in with the juice so it can thicken a little bit?
Patty, as the recipe states, you should drain the beans before adding.

Made this the other night, it was phenomenal! The chili is so good and the avocado, tortilla chips, sour cream and cheese are the perfect toppings. So fast and easy to make, I’ve shared it with several friends. I plan on making it again very soon. Thank you for posting!
Another winner! It’s Kelly again. I tried your quinoa chili and it was so good, I thought I’d try another one of your recipes. This one is unbelievably easy and fast to make, and really has a great flavor. Thanks again! You rock!
I’m so glad you tried out both recipes! This particular recipe is one of my favorites because it really is so easy!
