Baked Garlic Sweet Potato Fries
Ingredients
- 4 medium sweet potatoes, peeled and cut into
- 1/4- inch matchsticks
- 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper, to taste
- 5 cloves garlic, pressed
- ½ cup grated Parmesan
- 2 tablespoons chopped parsley leaves, for garnish
Instructions
- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- Place potatoes in a single layer onto the prepared baking sheet. Add olive oil and gently toss to combine; season with salt and pepper, to taste. Place into oven and bake for 35-40 minutes, or until golden and crisp, tossing occasionally.
- Combine sweet potato with garlic and Parmesan.
- Serve immediately, garnished with parsley, if desired.

I season my sweet potato fries with cinnamon sugar and make a yummy marshmallow dip to go with them! A fun, yummy, semi healthy (?) dessert! lol =)

I season my fries with Cajun seasoning.
I season fries with seasoning salt. My specialty dish is beef enchiladas. They take a long time to make, but they are worth it. The last time I made it, my boyfriend sneaked the leftovers out of the house and gave them to his friends. I also make drunken beans to go with the enchiladas.
I’m such a big fan of sweet potatoes and have made bunch of them boiled and fried frequently. But it’s noteworthy that this recipe makes use of garlic which I’ve never dared to match with sweet potatoes. I might as well try this out next time I’m in a cooking frenzy.
I season my sweets with cumin and some fresh oregano. So delicious, I start with Olive oil, than add salt & pepper to taste. To 4 sweets I add 1/2 tsp. cumin and tsp or so fresh chopped oregano. Enjoy!
