Mini Deep Dish Pizzas
These 5-ingredient mini pizzas are unbelievably easy, fool-proof, and completely addicting! Perfect for game day!
Remember when I started hoarding those mini pepperonis? Well, I found yet another great use for them in these awesome mini deep dish pizzas, which comes just in time for football season. And yes, if you ask me what my favorite season is, it’s definitely football season.
Football season is the best season of all because you have every guilt-free excuse to stuff your face with game day food, and these pizzas are no exception.
And with that crisp, deep dish tortilla crust, these babies are simply irresistible.
Now I still have about 4 mini pepperoni bags left so I’m sure I’ll be making these pizzas for every single football game!
Mini Deep Dish Pizzas
Ingredients
- 4 Old El Paso™ flour tortillas for burritos, 8 inch
- 1 cup pizza sauce
- ¾ cup shredded mozzarella cheese
- ¼ cup freshly grated Parmesan
- 36 mini pepperonis
Instructions
- Preheat oven to 425 degrees F. Lightly oil a 12-cup muffin tin or coat with nonstick spray.
- Working one at a time, lay tortilla on a flat surface. Using an empty can, cut 3-4 medium circles, pressing firmly enough in a rocking motion to cut through the tortilla.
- Fit a tortilla circle into each of 12 muffin tins, pressing carefully to make sure there is an opening in the center. Scoop 1 tablespoon pizza sauce into each muffin tin. Sprinkle with mozzarella and Parmesan cheeses, topping with 3 mini pepperonis each.
- Place into oven and bake for 10-12 minutes, or until cheese has melted.
- Serve immediately.

Gosh, I hope the answer to my question is not obvious, but when you wrote….” make sure there is an opening in the center”… did you mean a hole in the centre of the pizza tortilla? Why would you want a hole in the centre of the tortilla? Wouldn’t that just let the melting cheese run out of the tortilla and burn on to the bottom of the muffin tin?
I do want to make these mini pizzas, so I am looking forward to your answer.

“opening in the center” = “indentation in the center” which can hold the sauce, cheese and pepperonis.
Define Pizza Sauce?????
Just use a jar of sauce from the store or get creative and make your own.
These are delicious and a perfect game day snack! I ended up making a second batch they were so good! On the second batch I put the tortillas in the pan and toasted them alone for five minutes before adding toppings and baking 12 minutes. Helped them crisp up a little more and we definitely preferred them that way! I added some chopped onion and dried basil. A definite keeper!
While this is a pretty good recipe, I made it even easier–I found 6″ flour tortillas, and did several flavors, baking them on a cookie sheet and cutting into quarters. About half were simply pizza sauce, mozarella, and pepperoni, but I did more with other toppings–barbecued chicken, Montery jack, and sauteed onion; crumbled Italian sausage, provelone, and mushrooms; and a Greek veggie version with no sauce, onion, olives, bell pepper, diced tomato, mozzarella and feta. This was a trial run fed to a bunch of teens, but will get an encore tomorrow for the football game

Can these be frozen and reheated? Would they test good. I cook a lot but don’t always have left overs for lunch. These would be awesome for lunch!
Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself. Please use your best judgment for freezing and reheating.
By the way, these are the kids favourite snack on game days.
for the left over tortilla, let it dry out on the counter, till extremely dry, put in a old bread bag and using rolling pin, crush to make crumbs. Use as bread crumbs how ever you wish.

Has anyone ever tried to freeze them? Results? I’d love to make a bunch for my 4 year old twin boys to freeze and pull out for a quick meal/snack, but I’d love to hear if anyone has had success.
I don’t see why not. I freeze leftover pizza slices. Then reheat in oven or airfryer etc.

We made these as part of our Christmas Eve appetizer supper and they were delicious. Soon to be 16 year old great niece did most of the work. And they were one of her favs for the night.
