Easy Burrito Bowls
Skip Chipotle and try these burrito bowls right at home. It’s easier, healthier and 10000x tastier!
I finally made a burrito bowl at home. Well, I guess it’s more of a burrito plate. But still. Burrito bowl, burrito plate – I’m in love.
With fresh veggies and just 10 min prep with a creamy chipotle drizzle, what’s not to love?
Plus, this is completely customizable to add in your favorite proteins. Or if you’re like me, you can keep it vegetarian. There’s plenty of goodies to go around here!
And if you really want to go that extra step and make these even healthier, you can use quinoa in place of the rice.
You’ll get that extra kick of protein, and be full for hours on end! So who still wants Chipotle for dinner tonight?
Easy Burrito Bowls
Ingredients
- 1 cup uncooked rice
- 1 cup salsa, homemade or store-bought
- 3 cups chopped Romaine lettuce
- 1 15.25-ounce can whole kernel corn, drained
- 1 15-ounce black beans, drained and rinsed
- 2 Roma tomatoes, diced
- 1 avocado, halved, seeded, peeled and diced
- 2 tablespoons chopped fresh cilantro leaves
For the chipotle cream sauce
- 1 cup sour cream
- 1 tablespoon chipotle paste*
- 1 clove garlic, pressed
- Juice of 1 lime
- ¼ teaspoon salt, or more, to taste
Instructions
- To make the chipotle cream sauce, whisk together sour cream, chipotle paste, garlic, lime juice and salt; set aside.
- In a large saucepan of 1 1/2 cups water, cook rice according to package instructions; let cool and stir in salsa; set aside.
- To assemble the bowls, divide rice mixture into serving bowls; top with lettuce, corn, black beans, tomatoes, avocado and cilantro.
- Serve immediately, drizzled with chipotle cream sauce.

Burrito bowls are a favorite at our house! I would probably use brown rice to make it a little healthier. I love your recipe for the chipotle dressing. I usually just use sour cream and salsa but that sounds a lot better!
I’ve made this recipe several times (adding diced grilled chicken), and our 13-year old son absolutely destroys this meal. Don’t get me wrong; I’m so glad he enjoys the food. Unfortunately, his appetite doesn’t leave many, if any, leftovers for my lunch the next day. All in all it’s not a bad problem to have. Thanks for the great recipe.

Looks so healthy and delicious! I’m going to have to keep an eye out for that chipotle paste. Much easier than opening up a whole can just for a couple peppers.
I made these last night and they were great and super easy. That chipotle cream sauce has the perfect amount of heat to it. I love spicy food, and I’ve made the mistake of overdoing it on those canned peppers in adobo sauce (I didn’t think food could get too spicy for me but I was wrong), so I was super careful just adding a little bit at a time, but in the end it was perfect!
i use greek yogurt instead of sour cream. i also use more lettuce and instead of rice, i smash up a handful of tortilla chips. i also shred some sharp cheddar on top of the black beans while they’re hot. & don’t forget some tapatio Yum!
Yes, Tapatio is a must! We use that on everything!
Butters is soooooooooo adorable. I am an ‘Auntie’ to a corgi. She is adorable too. I have a couple of little dogs too. The burrito bowl is perfect for a person like me who lives alone. The cream is very similar what I am using down which is my new favorite salad dressing and has been for a few months.

This looks delicious. Question… What is “pressed garlic”?
It’s another way to cut garlic. This is easily done with a garlic press. That way you don’t end up with huge chunks of raw garlic in your dish!
I love garlic in cooked food, but for this I will use a microplane or fine grater to basically “melt” the garlic. The taste is there but you will not bite into it!! When using a grater watch your nails and fingers!!
Looks great but Butters steals the show…So cute. Any idea what to substitute for the sour cream to make it vegan??? Would love to serve this when we have another couple over as one is vegetarian-ish (enjoys meat as a treat but not every day) but the other is vegan. As I am trying to look into other “alternative styles” not sure what I can or if I can swap out/exchange the sour cream……I will be enjoying this without the vegan at some point….teehee
For a vegan option, I recommend using a fresh vinaigrette, such as a lime or lemon vinaigrette.

I just went to Chipotle the other night because I was craving an easy dinner. These bowls are so gorgeous!
I like refried beans and ground beef with taco seasoning in my burritos so I would add those and take out the black beans and the rice…can’t eat rice with my lapband. Sounds good though!
MMm fantastic! USually when I have burritos for dinner, I have one and then I made a little burrito salad afterwards, compromise second helping 😛 And it’s got all the best bits, yum!
