Slow Cooker Cheesy Bacon Ranch Potatoes
The easiest potatoes you can make right in the crockpot – perfectly tender, flavorful and cheesy!
Potatoes. Cheese. And bacon. With these 3, you can’t go wrong.
And when you can throw these in a slow cooker, well that’s a double win right there.
Now the hardest part about these is not the prep.
It’s the part where you have to hold yourself back before you eat every single perfectly-textured potato chunk smothered in cheesy goodness and crisp bacon bits.
And I really don’t even know how to classify this. It could be an appetizer, side dish, snack or an entree.
I actually had it as all of the above, and devoured every last potato. And don’t think that Jason and I weren’t fighting for that last bacon bit at the bottom of the plate!
Slow Cooker Cheesy Bacon Ranch Potatoes
Ingredients
- 6 slices bacon
- 3 pounds red potatoes, chopped
- 1 ½ cups shredded cheddar cheese, divided
- 1 tablespoon Ranch Seasoning and Salad Dressing Mix, or more, to taste
- 2 tablespoons chopped chives
Instructions
- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
- Spread bacon in a single layer onto the prepared baking sheet. Place into oven and bake until brown and crispy, about 12-14 minutes. Let cool before crumbling; set aside.
- Line a slow cooker with aluminum foil, leaving enough to overhang to wrap the potatoes on top, and coat with nonstick spray. Place a layer of potatoes evenly into the slow cooker. Top with cheese, Ranch Seasoning and bacon, repeating 2 more times and reserving 1/2 cup cheese.
- Cover potatoes with aluminum foil. Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours, or until potatoes are tender. Sprinkle with remaining 1/2 cup cheese. Cover and cook until melted, about 1-2 minutes.
- Serve immediately, garnished with chives.

Can I cover the foil with oil instead of nonstick spray? ??

I doubled the recipe and set the timer for ten hours. It’s cooking as I post this comment. I will report back in. Yesterday I made the spinach and artichoke dip, doubled the recipe and it was wonderful. Thanks Chungah!

Just realized I bought the Hidden Valley Ranch Dip packet! Is that the same thing as the salad dressing packet?
They are actually not the same. The recipe calls for Hidden Valley The Original Ranch Salad Dressing Mix, not the dip packet. Sorry!

I would love to make these today but i only have actual ranch dressing, not the mix.will add that to my shopping list.
I made these yesterday but cut a few corners: bacon bits from a jar and pre-shredded cheese. It did not turn out well. There was a TON of liquid in bottom when I got home that night and the cheese didn’t really melt and turn creamy. What do you think made all that liquid?
Libby, you made some substitutions which may have caused the liquid, like the bacon bits from the jar. It is always best to use to the ingredients listed in the recipe to obtain the best results possible.
I want to make this wit dinner tonite and i don’t have red potatoes… Would regular russet potatoes work?

I like to use Colby and/or Monterey Jack cheese, cuz it takes the heat better, and is more creamy. What are your thoughts?

Is the Ranch Seasoning .. dry Hidden Valley Ranch in the packet? Same with the Salad Dressing Mix or is that liquid?
You will need the dry seasoning packet for this.
Just thought I would report back after making these potatoes today. They were wonderful and we all loved them. I wondered if that small amount of ranch dressing would be enough but it was perfect. This recipe is a keeper! Thanks!

Well, the recipe yields about 8 servings so I would recommend doubling the recipe, unless you think you need more than that!
Amazing!!! I was so happy I found this because I have an obsession with anything that has to do with potatoes!! My crockpot tends to burn things at the bottom so I did occasionally stir the potatoes. No, the foil does not stick to the bottom of the slow cooker. And the purpose of the foil is to allow the potatoes to steam rather than turning to mush.
