Spinach and Artichoke Dip French Bread
The classic spinach and artichoke dip is upgraded into the cheesiest, crustiest French bread ever!
So we kind of got another corgi puppy last weekend.
No, wait. It actually happened. We flew to Sacramento, drove an hour further North, picked up the pup, and drove back about 400 miles back home to Los Angeles. All in one day. It was quite the trek, but worth every minute.
Since we brought him home, there’s been a lot of sleepless nights and quite a bit of adjusting but we are so happy with Ollie.
Butters is also coping with his new life, fighting over toys and getting a little jealous, but he loves him to death! Or at least I think he does.
But enough about these guys. Let’s talk about this French bread. This French bread that’s unbelievably crusty, cheesy and just loaded with everyone’s favorite spinach and artichoke dip.
Once you make this, you won’t ever want to have the dip by itself anymore. It was truly destined to be slathered and baked on top of a French bread loaf. And there’s no judgment here if you make a meal out of this. I did it at least twice!
Spinach and Artichoke Dip French Bread
Ingredients
- 1 (14-ounce) can artichoke hearts, drained and chopped
- 2 cups baby spinach, chopped
- 1 cup sour cream
- ⅓ cup mayonnaise
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- Kosher salt and freshly ground black pepper, to taste
- 1 cup shredded mozzarella cheese, divided
- ¼ cup freshly grated Parmesan
- 1 (1-pound) French bread loaf, cut in half crosswise
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, combine artichoke hearts, spinach, sour cream, mayonnaise, garlic powder and onion powder; season with salt and pepper, to taste. Stir in 1/2 cup mozzarella cheese and Parmesan.
- Place bread, cut-sides up, onto the prepared baking sheet. Spread artichoke mixture evenly over the bread slices; top with remaining 1/2 cup mozzarella cheese.
- Place into oven and bake for 10-12 minutes, or until the cheese has melted.
- Serve immediately, garnished with parsley, if desired.

A pizza sounds like a great idea! But I’m not entirely sure if the pizza dough will be able to hold all of this up.

OK your pups are so cute I can’t stand it!! We are trying to decide what kind of dog we want (we lost one to cancer a year ago) and everytime I see Butters I just want to squeeze him. Now you have Ollie and I am seriously dying from cuteness!!!

The recipe doesn’t say to cook spinach first and squeeze out liquid before mixing with artichokes. Isn’t that necessary?
Hope – this step is not needed as the recipe calls for fresh spinach, not frozen.

Butter and Ollie look soooo cute together and Butters is so much bigger than Olllie…I didn’t conceptualize quite the difference in size until seeing that pic…hopefully he will always be a protective big brother!
