This is the ultimate breakfast worth waking up to! Easily made right in your crockpot. Set it, forget, and devour!
If these potatoes make an appearance on my breakfast table every single morning, waking up will never be an issue.
Seriously. How can you resist breakfast potatoes, with andouille sausage and cheesy goodness?
You just can’t. It’s impossible.
And you know what? It’s just so stinking easy that you can actually make this every morning.
All you have to do is add in your ingredients right into the slow cooker. There’s no cooking, no sautéing nor searing. Throw it right in, set it and forget it.
It’s a true crockpot meal!

Doyou actually make he soup or leave it condensed?
You can leave it condensed.
Yum! I tried this recipe yesterday and it was so delicious. My husband asked me, “how did you you make this sauce?” We both enjoyed every bite! I didn’t have time to make it in the crockpot. However, the stove top worked well! Instead of the chicken sausage, I used beef smoked sausage. Can’t wait to eat the leftovers. Thanks for a wonderful recipe.
I’m planning to make this for my side dish at my wedding reception in 2 weeks to 40 people! I will be serving brunch that includes:
– Croissant sandwiches (sausage/bacon, cheese, egg patties and either a pesto type or a chipotle spread)
– fruit (bananas, apples and strawberries)
– Fruit dip (cool whip, vanilla pudding mix, milk and amaretto).
– Water (with lemon/cucumber), coffee and orange/apple juice combo.
In your opinion, either how many would this feed so I know how much to make or an easier question for you is what is the total volume of this recipe as is?
LeJoy, this recipe yields about 8 servings.
My family is coming up next weekend and I am making this. I am going to steal your idea of the sandwiches, only not so many options
and fruit salad. Thank you for the idea. I cannot wait to have this crockpot recipe.
Hi Chungah, I tried these cheesy potatoes for my family yesterday and they were just in love with this delicious dish. Thanks for the great recipe 🙂
Love your site and recipes! I always come back to this site when trying new recipes. Inquiring about the overnight cooking option. I read in your comments to use the WARM function to keep it warm. Do you mean cooking on warm? Or cook it at either HIGH or LOW function then switch it to WARM? Just trying to see if it is a recipe I can set as I’m going to bed and then wake up to breakfast 🙂
You can cook at either HIGH or LOW, then switch to WARM.
I am going to try this with the Potato O’Brien, I’ll let you know how it turns out. I just don’t want to peel & diced the potatoes. Does that make me lazy? LOL! Good looking recipe. 😉
This looks delicious! Perfect for a set it and forget it addition to company staying over, I love my programmable crock pot!
It would be perfect with a fried egg on top too. Seems like a great breakfast for dinner choice too! https://www.afu.ac.ae/en/why-afu/
If you find a recipe that is not to your taste then don’t make it. If however, the recipe sounds good but you feel that it is to high in fat and you can sub fat free or low fat products then you make the changes. As in this recipe fat free or low fat sour cream Healthy request soup and reduced fat cheese. I have make comments about recipes that are ridiculously out of control but I would never get personal and attack the person who published the recipe. An apology is called for in this incidence. Being plain mean and rude is never acceptable.
Like all of your recipes, this sounds absolutely delicious. I can’t wait to try it!
What say you about substituting leftover Easter ham for the sausage?
(My grandma decided to make two of them and send an entire ham home with me as leftovers, so I’m scrambling to find things to do with it)
Sounds amazing!
Hi Chungah, I am enjoying your blog so much!! I’ve tried many of your recipes and haven’t had a failure yet. I think it’s fine that some of your recipes are calorie rich. I cherish a dish that’s yummy, great for a holiday meal that I can do ahead of time. I rather enjoy stress free intertaining. So, please carry on with your excellent work.
If I used O’Brien frozen potatoes for the potatoes and peppers, how much should I use? This recipe looks great! If someone doesn’t like it they can just keep looking. This is obviously a special occasion dish….everything in moderation!
I actually haven’t tried O’Brien frozen potatoes in this recipe so I can’t really say for sure. Maybe 1-2 bags? You can always add more as needed! 🙂
Here is my answer 🙂
Heather, This is only the second time I’ve left a comment on this or any food blog site. And not because I haven’t enjoyed many, many recipes here. I HAVE and I DO!
This comment is for you. Take your rude comments elsewhere? Do you have children? Tell me….. is this how you teach your children? To outwardly insult someone without any regard for their feelings???? I am convinced there are no bad foods out there. Ever hear of everything in moderation??? Is there anywhere here where Chungah insists you should eat her cheesy potatoes every single day for breakfast??? Trust me, my guests will pass up that boring veggie platter for these wonderful potatoes on any day of the week.
Forgive me, Heather but maybe it would do you good to find another food blog to follow. Your rude comments are NOT welcome here.
Does the 3 russet potatoes mean 3 pounds?
This looks delicious!! I’m trying it for Easter sunrise breakfast at church. 🙂
Generally, 2-3 medium russet potatoes is equal to one pound.
I love this recipe, but I will be entertaining vegetarians. Any suggestions for substitutions for the sausage?
Have you ever tried veggie sausage patties? They’re the best! 🙂
Is there a suitable substitute for the cream of chicken soup in order to make this gluten free?
Kate, there are actually many gluten-free cream of chicken soup recipes available online. Hope that helps!
Can I use frozen diced potatoes instead?
Yes, absolutely.
Thank you, I was scrolling for this answer. But must ask, have you tried them with frozen potatoes (Potatoes O’Brien)? If so, was there a variation in the cooling times?
This looks delicious! Perfect for a set it and forget it addition to company staying over, I love my programmable crock pot!
It would be perfect with a fried egg on top too. Seems like a great breakfast for dinner choice too!
Since I don’t get hungry until after noon, I am thinking this will make a super yummy dinner. My hubby will love it if we have some scrambled eggs loaded along with some of these yummy potatoes into a tortilla. Yum, yum, yum. Thanks for another great recipe.
LOVE your website! My Mom always told me, if you don’t have anything nice to say………don’t say it at all. You my friend carry yourself with grace and class! Keep the recipes coming.
Wonder how it would be to stir in some beaten eggs to your slow cooker cheesy breakfast potatoes?
That sounds like a great idea but without further recipe testing, I cannot answer with certainty. Please use your best judgment.
