Slow Cooker Cheesy Breakfast Potatoes

This is the ultimate breakfast worth waking up to! Easily made right in your crockpot. Set it, forget, and devour!
If these potatoes make an appearance on my breakfast table every single morning, waking up will never be an issue.
Seriously. How can you resist breakfast potatoes, with andouille sausage and cheesy goodness?
You just can’t. It’s impossible.
And you know what? It’s just so stinking easy that you can actually make this every morning.
All you have to do is add in your ingredients right into the slow cooker. There’s no cooking, no sautéing nor searing. Throw it right in, set it and forget it.
It’s a true crockpot meal!
Slow Cooker Cheesy Breakfast Potatoes
Ingredients
- 3 russet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 1 12.8-ounce package smoked andouille chicken sausage, thinly sliced
- 1 ½ cups shredded cheddar cheese
- ½ cup sour cream
- ¼ teaspoon dried oregano
- ¼ teaspoon dried basil
- 1 10.75-ounce can condensed cream of chicken soup
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Place potatoes, bell peppers, onion, chicken sausage, cheese, sour cream, oregano and basil into a 6-qt slow cooker. Stir in chicken soup; season with salt and pepper, to taste.
- Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours.
- Serve immediately, garnished with parsley, if desired.

These look delicious, will definitely have to give it a go, i’ve been looking for these kinds of recipes where everything is just thrown in and left to become mouthwateringly good! I think they’d be great to wake up to on Christmas morning too, the chaos would start a little later that way.

What does “thinly sliced” in a recipe actually mean?
Because the photos show 1/4 or larger slices of sausage. I run into this often and thought I should ask.
I would appreciate recipes fully cooked in a slow cooker rather than partially cooked (if at all) for the photo of the finished dish. And are you gaining weight? I am with eating many of the slow cooker dishes.
Take a look at this one “Cheesy Breakfast Potatoes”; cheese, cream, condensed cream of chicken soup, sour cream, sausage. High in fat and salt. Are you feeding this to your kids with a couple of eggs or toast? Wow. Don’t think I’ll be making this one.
Chungah, (beautiful name), as a food blogger; how expensive is it to include the nutritional value with recipes? I guess there is a website that calculates this for you or do it myself, yeah that’s what I need to do.
BTW you never said this was a lo-cal recipe and I apologize if you find the tone of my comments harsh but yours is the only blog that I look forward to each time it arrives, in fact Damn Delicious is all I read!!

The slices don’t have to be exact here – that’s the beauty of a slow cooker recipe. There’s a lot of room for forgiveness.
Am I gaining weight? I sure hope not! I work out 7x a week doing a combination of pilates, spin and Barry’s bootcamp, and I also eat in moderation to maintain a healthy lifestyle.
Am I feeding this to my kids? I actually do not have kids. If you do not wish to try this recipe, that is completely fine. I did not mention that this was a healthy recipe by any means. It’s just one of those quick and easy recipes to whip up when having company over – perfect for Christmas morning! 🙂

Chungah, I commend you on your responses to such comments. My kids have encouraged me to start a food blog myself however the commenter above is one reason I will not. I don’t understand why people feel the need to comment in such a way. There are millions of recipes on the Internet, why can’t people just move on if they don’t like the ingredients? And asking if you’ve gained weight from the way you cook is ignorant and rude.I’m afraid I would be unable to be so polite. I love your recipes and visit your site often!
I agree! People are rude and try to follow up with “but I love what your doing!”. If you want to stay slim while eating this type of food, it’s called “moderation” and “exercise”.
I feel the same I read recipes all the time and the commits and it is ignorant to ask over and over to the same recipe if this can be changed or that if you dont like something in the recipe leave it out BUT if the recipe is a cheese based recipe and you cant eat cheese why in the heck are you even looking at it NO THERE IS NO REPLACEMENT FOR CHEESE people think before you ask such stupid questions sorry for the rant but the rude lady above pushed me over the edge

Heather- Wow are you judgmental. I would definitely feed this to my kids. Maybe not every week but what a nice treat every month or so. Its not going to kill them. I may find a way to make it a bit healthier if I wanted it more often. Why can’t you do the same? Or like you said: Dont make this one! You add nothing to the comments section by being rude to someone online that offers us nice recipes for free.

A southerner, our food is definitely not known for being “healthy” and NO I am NOT 300 lbs sitting on my couch eating Bon bons!!! If people do my like the recipe, why not just keep scrolling? That’s what I do!! I just search for a different recipe, oh and I just LOVE the comments, “I made it jay as is EXCEPT” and then they start listing all the changes they had done, pretty much making a totally different recipe!! I have overnight guest arriving soon, and this appears to be the answer to a quick and easy breakfast. As all of your recipes are, it looks colorful and delicious.
This recipe sounds delicious, but I am wondering about the cooking time. If you are going to wake up to these potatoes you would have to put them together in the middle of the night with a 4 to 5 hour cooking time. Do you think it would be alright to set the timer function on the slow cooker to start cooking later. I wonder about the safety issue with the sausages. This might be a better brunch dish. What do you think?
Mary, if you have a slow cooker with the WARM function, you can cook this overnight and have it kept warm until ready to serve.
