One Pot Taco Spaghetti
All your favorite flavors of tacos in spaghetti form – made in ONE PAN! So cheesy, comforting and stinking easy with no clean-up!
Tacos in pasta form? Um, yes, please. I mean, the answer is always yes, right?
And if not, the answer should always be yes when it’s made in one single pan.
No joke here – everything gets dumped right in, including the uncooked spaghetti. And no, the tomatoes should not be drained. The liquid is crucial to help cook the pasta.
When ready to serve, sprinkle on that cheese to let it get all ooey gooey on top.
It’s practically a spaghetti casserole with pretty much zero work and clean-up!
One Pot Taco Spaghetti
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef*
- 1 1.25-ounce package taco seasoning
- 1 10-ounce can Ro*Tel® Mild Diced Tomatoes & Green Chilies
- 1 tablespoon tomato paste
- 8 ounces spaghetti
- ½ cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 1 Roma tomato, diced
- 2 tablespoons chopped fresh cilantro leaves
Instructions
- Heat olive oil in a large stockpot or Dutch oven over medium high heat. Add ground beef and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; stir in taco seasoning. Drain excess fat.
- Stir in Ro*Tel®, tomato paste, spaghetti and 3 cups water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13-16 minutes.
- Remove from heat and top with cheeses. Cover until melted, about 2 minutes.
- Serve immediately, garnished with tomato and cilantro, if desired.

I made this twice. The first time as published. The second time I sauted onion, red bell pepper, and mushrooms. In addition I also added a small can of tomato sauce as the original was a bit spicy and with the added vegetables a little additional sauce was needed. Wonderful quick dish.

I only have a 1 ounce packet of taco seasoning (not a 1.25 ounce as the recipe states). Will this be okay?
Yes, but you might want to add some extra seasonings/spices to add some more flavor.
I have made this basic recipe twice now and both my wife and I have enjoyed it all three days each time. This last time I embellished a tad by sautéing a half cup of onions with the meat and I use 4 Tbls of Tone’s bulk taco mix instead of the packaged stuff. I also upped the spaghetti to about 10-11 oz. we also needed a healthy shot of Lowery’s Season Salt and I like some pepper flakes + Parmesan cheese. Really nice recipe, and thanks.

Whipped this up today because I had a hankering for tacos but wanted something with a twist, and it’s ridiculously good! I had a few modifications though – used bowtie pasta and a can of diced tomatoes with a can of diced green chilies (the local stores don’t seem to stock Rotel, so had to improvise), and cooked some onions and garlic in with the ground beef. Also used some beef stock in place of water for a little extra flavor. Definitely have to make this again – and again and again and again!
