One Pot Taco Spaghetti
All your favorite flavors of tacos in spaghetti form – made in ONE PAN! So cheesy, comforting and stinking easy with no clean-up!
Tacos in pasta form? Um, yes, please. I mean, the answer is always yes, right?
And if not, the answer should always be yes when it’s made in one single pan.
No joke here – everything gets dumped right in, including the uncooked spaghetti. And no, the tomatoes should not be drained. The liquid is crucial to help cook the pasta.
When ready to serve, sprinkle on that cheese to let it get all ooey gooey on top.
It’s practically a spaghetti casserole with pretty much zero work and clean-up!
One Pot Taco Spaghetti
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef*
- 1 1.25-ounce package taco seasoning
- 1 10-ounce can Ro*Tel® Mild Diced Tomatoes & Green Chilies
- 1 tablespoon tomato paste
- 8 ounces spaghetti
- ½ cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 1 Roma tomato, diced
- 2 tablespoons chopped fresh cilantro leaves
Instructions
- Heat olive oil in a large stockpot or Dutch oven over medium high heat. Add ground beef and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; stir in taco seasoning. Drain excess fat.
- Stir in Ro*Tel®, tomato paste, spaghetti and 3 cups water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13-16 minutes.
- Remove from heat and top with cheeses. Cover until melted, about 2 minutes.
- Serve immediately, garnished with tomato and cilantro, if desired.

I absolutely love all of your recipies. They are fabulous. Can this recipe be made in the Instant pot? Would I need to add maybe another 1/2 cup of water in it? Again, love your recipes and your website.

Recipe sounds absolutely delicious. Kind of reminds me about a recent article that I read about Ethiopian lasagna and using less than traditional seasonings. Agree that an Instant Pot version of Taco Spaghetti would be fantastic. Going to play with this recipe and see what happens 🙂

I made this tonight for supper and it was amazing! The only thing I did different was add a can of Siracha black beans, drained, and a can of drained diced tomatoes. I also cooked my pasta separately and then added it all together. It taste GREAT!!!
How would you modify this if using Spaghetti Squash? Would that work?

Just made this and it was yummyyyyyyyy! I made a double batch so i cooked the spaghetti first. One more pot was worth the worry of it all cooking just right. I work nights so I make my dinners when I come home in the morning. Now i just have to forget about how good it taste and go to sleep..Thanks a million for this simple but DAMN DELICIOUS Taco Spaghetti!!!!

So you put the water and noodles in with the seasoned beef? Wouldn’t that kind of wash out the taco seasonings? Wouldn’t it make more sense to cook the noodles separately and then add them to the rest of the ingredients?
Then it won’t be a one pot meal! 🙁 But as always, please do what is best for you and your taste preferences. Isn’t that the beauty of home cooking?
Tried this today and my hubby said “damn this is good”. LOL! I didn’t have tomato paste so I used a tablespoon of ketchup (don’t judge me). I also added half a cup of onions and 2 cloves chopped garlic to the ground beef for more fresh flavor. At the end we topped it with parsley, mozzarella cheese, cheddar cheese, and a scoop of ricotta cheese (AMAZING!) Definitely will be in the rotation. For those who it did not work well for, I suggest after bringing it to a boil, only turn it down to medium heat and cover. I opened it for the last 5 minutes to help evaporate some of the liquid and mix the noodles around and it turned out perfect! Thanks for the recipe!
Great recipe I tweaked it a little put some hot sauce and I added black olives and a used orzo noodles and it was delicious I will definitely make it again so easy
This is a really good recipe, and it’s something we make often now. But make a vegan version: I sub the meat for the beefless crumbles and don’t add cheese.
This is delicious! The whole family loved it including my 7 & 4 year old. They all raved about how good it was!
I didn’t have tomato paste so I used 3 tablespoons of tomato sauce. At the end I stirred in black olives along with the cheese. I also used veggie spaghetti and it cooked perfectly with all water absorbed. This is a keeper!
I made this for dinner tonight; my man and I loved it. It was such a nice change from a normal spaghetti dish. I used turkey meat instead of beef, and it was fantastic!
