One Pot Taco Spaghetti
All your favorite flavors of tacos in spaghetti form – made in ONE PAN! So cheesy, comforting and stinking easy with no clean-up!
Tacos in pasta form? Um, yes, please. I mean, the answer is always yes, right?
And if not, the answer should always be yes when it’s made in one single pan.
No joke here – everything gets dumped right in, including the uncooked spaghetti. And no, the tomatoes should not be drained. The liquid is crucial to help cook the pasta.
When ready to serve, sprinkle on that cheese to let it get all ooey gooey on top.
It’s practically a spaghetti casserole with pretty much zero work and clean-up!
One Pot Taco Spaghetti
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef*
- 1 1.25-ounce package taco seasoning
- 1 10-ounce can Ro*Tel® Mild Diced Tomatoes & Green Chilies
- 1 tablespoon tomato paste
- 8 ounces spaghetti
- ½ cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 1 Roma tomato, diced
- 2 tablespoons chopped fresh cilantro leaves
Instructions
- Heat olive oil in a large stockpot or Dutch oven over medium high heat. Add ground beef and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; stir in taco seasoning. Drain excess fat.
- Stir in Ro*Tel®, tomato paste, spaghetti and 3 cups water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13-16 minutes.
- Remove from heat and top with cheeses. Cover until melted, about 2 minutes.
- Serve immediately, garnished with tomato and cilantro, if desired.

Previously reviewed this but have to tell you that it has become our go-to meal when time is a factor. I keep the taco seasoning and Rotel equivalent on hand now so all I have to do is make sure I have hamburger thawed. Thank you, thank you, thank you!!!
I’m making this recipe for the second time tonight. The first time I made it my husband asked that I never make regular spaghetti again! Love your one pot meals – I hate doing dishes!

Love your blog – this is my fifth recipe from here and I just found it a month ago! I’ve already made several twice. I did have one question – would whole wheat pasta work in the one-pot dishes? I have found that one pot recipes become a bit finicky when different types of pastas are used. But as always, please use your best judgment regarding substitutions and modifications.

I made this tonight for dinner and it was fabulous!! I didn’t have tomato paste but I did have tomato sauce so I used that instead and I cooked my noodles separately . Other than that I followed the recipe to a ” T ” and the meal was simply delicious. Easy to prepare and so filling. This is a def. keeper.
Ahhhh…the one dish meal! For me, there’s nothing worse than making a great meal and having tons of dishes to do afterwards. I wanna relax and savor the meal. I took a minute (literally) to rinse the skillet out and then fill it with soapy water so that before I went to bed, clean up was a snap! I made the One Pot Taco Spaghetti last night as directed with the exception of the cilantro (I didn’t have any) and it was wonderful. I did make a goof: I put three CANS of water instead of three CUPS but I just uncovered it after the spaghetti was cooked and the extra just evaporated. I do think it could use more veggies and think I’ll add some bell pepper next time (cook it up with the meat). There were only two of us last night and we have only leftovers for one….guess I’ll double the recipe next time! This will be a staple in our home! Thanks for the great recipe!!!
Kind of flavorless. It was fine but I won’t make again. I felt like I was eating in the cafeteria back at Science Camp.
I’m sorry that this recipe did not turn out the way you had imagined. I only post recipes that have been successfully tested in my own kitchen, and as you can see from the comments here, many of these readers have had great outcomes in the final dish as well. However, I understand that we all have different taste preferences, and I really appreciate your honest feedback.
How can it be flavorless, there is taco seasoning, rotel tomatoes and two kinds of cheese?
YUM! I made this last night, and it was outstanding! Hubby and I split the leftovers for lunch today, and it was a good lunch again! I love recipes that will make through more than one meal well and are easy to pack up!

If I double the pasta and other ingredients do I double the water also?
Yes, however, I have found that one pot recipes can be quite finicky when doubled. It may be best to make the recipe twice but as always, please use your best judgment.
Followed recipe exactly but added diced green peppers and substituted penne pasta for spaghetti and cheddar cheese for mozzarella because that is all I had and it was great, I’ve never made a one pot pasta dish and will do again. Thanks!

This is so good. I’ve made it several times now, and everyone loves it. I love that it’s a one pot dish and how the pasta cooks and absorbs all the liquid. Clean up is a breeze. My college son loves to make it with ground turkey. I just made it for my 85 year old mom and she went nuts for it. We’re planning on freezing the leftovers for her. I’m thinking it should hold up ok. Thanks for such a crowd pleasing recipe!

How can I change it up to not include the tomatoes and green chilies. Neither my boyfriend or I eat them.

You can use canned diced tomatoes and canned green chiles instead – they are sold separately.
