Yes, it’s the best month of the year. And to celebrate, I share with you my absolute favorite and easiest grilled cheese recipe of all time.
It’s grilled cheese literally rolled up with good quality American cheese slices, cooked in melted butter until you get that beautiful golden brown crust. From there, these work as the perfect dunkers into your tomato soup.
You know very well you can’t have any kind of grilled cheese without a piping hot bowl of tomato soup, right?

Grilled Cheese Roll Ups
Ingredients
- 8 slices white bread*, crusts trimmed
- 8 slices Wisconsin cheddar cheese*
- ¼ cup unsalted butter
Instructions
- Using a rolling pin, flatten bread squares to 1/4-inch thickness.
- Place cheese slice on top of each slice of bread, rolling up tightly.
- Melt 2 tablespoons butter in a large skillet over medium high heat. Working in batches, add roll ups to the skillet, cooking until all sides are golden brown and the cheese has melted, about 3-4 minutes, adding more butter as needed.
- Serve immediately.

Very delicious and goes over beautifully with little guests. In your opinion would these work if you prepared them early in the day and refrigerated until close to serving time, then bringing to room temperature and reheating them for about 15 minutes in a 350 degree oven before serving. Seems like that would work out well for a mixed group of adults and children.
These are super tasty. Even better if you add bacon bits to it. Make sure not to over roll or they’ll fall apart. Also, this recipe is very good for when you don’t want to throw away your last slices of bread but don’t know what to do with them!!
I cannot wait to try these with soup! Any ideas as to how I can keep them warm — particularly if I want to take them to work where there is no oven?

I made these yesterday for lunch and they were fantastic! I didn’t realize until later that I didn’t follow the directions! I rolled them after they finished in the pan and they were sooooooooo good! They weren’t too hot to roll so I’ll probably keep doing it my way so I don’t have to move them around in the pan. A fun take on a classic! We loved them!!

I made these and they were a lot better because they were cheesier and faster to make then the classic grilled cheese.
I need a way to make these without putting in skillet to fry. Could I put in toaster oven on broil ,keep turned and use butter brush work just as well?

Making this tomorrow for dinner!With fried okra with cummin, sprinkled with 3 differant cheeses & hot sauce(like serache) ,hot pepper flakes.salt & pepper, garlic& onion powder. Rolled up long finger size, & onion ouder. Served with lasagne. Put them in oven, keep turning till golden brown…Yummy!

Any suggestion on how to keep them crispy while I finish rest of them . Keep on warm setting in oven ? Anybody tried that way ? Like to serve as appetizers for parties

Yes, you can absolutely try to keep them warm in a low oven (about 200 degrees F). But please note that this is truly best when served immediately. 🙂

My mother always made these for our birthday parties but used toothpicks to secure ,brushed with melted butter & baked till golden .In those days no cheese slices so spread with softened Velveeta.
