Grilled Cheese Roll Ups
So much easier/tastier than traditional grilled cheese! 3 ingredients is all you need for this epic cheesiness!

Yes, it’s the best month of the year. And to celebrate, I share with you my absolute favorite and easiest grilled cheese recipe of all time.
It’s grilled cheese literally rolled up with good quality American cheese slices, cooked in melted butter until you get that beautiful golden brown crust. From there, these work as the perfect dunkers into your tomato soup.
You know very well you can’t have any kind of grilled cheese without a piping hot bowl of tomato soup, right?

Grilled Cheese Roll Ups
Ingredients
- 8 slices white bread*, crusts trimmed
- 8 slices Wisconsin cheddar cheese*
- ¼ cup unsalted butter
Instructions
- Using a rolling pin, flatten bread squares to 1/4-inch thickness.
- Place cheese slice on top of each slice of bread, rolling up tightly.
- Melt 2 tablespoons butter in a large skillet over medium high heat. Working in batches, add roll ups to the skillet, cooking until all sides are golden brown and the cheese has melted, about 3-4 minutes, adding more butter as needed.
- Serve immediately.

So I know this is the simplest of recipes but It still did not come out right. First off there was no mention of temperature. I melted the butter on medium but an actual instruction would help. Secondly they crumbled and fell apart during rolling. I think I may have over-rolled them. I’s give it two stars instead of one, because it tasted good but with cheese, butter and bread- what wouldn’t taste good? However- it looks terrible and nothing like the photo. I will try one more time with thicker bread and thinner cheese. If that doesn’t work- then I’ll stick to my regular grilled cheeses.
Arielle, medium heat is just fine – an exact temperature isn’t really needed – it’s a very forgiving recipe! Also, as mentioned in the comments section, you can press the rolls down with a spatula or a pair of tongs to keep them from unfolding.
Just tried these and it worked pretty well for a first attempt. Very tasty!
A few notes:
– My cheese slices were a bit too thick, and cracked when rolling, which made it hard to roll tightly, an tore the bread in places. Next time I’ll use thinner slices.
– I don’t usually use straight-up white bread, but I saw comments about bread unrolling, and remembered that white bread tends to keep the shape you give it better, so I went ahead and used it. This was the right move. I used regular old Wonder classic white bread.
– When I rolled the bread, it very quickly became more like 1/8″ thick than 1/4″ thick. This actually worked well.
Summary: I think with white bread rolled 1/8″ thick and good, thin cheese slices I’ll get a really good roll that holds its shape next time, and the final product will turn out even better!
These are good, and the trimmed crust can be frozen for bread pudding.

These look delicious and I will definitely make them for my kids. They begged to be dunked! But I do need to chuckle at your description. If trimming crusts, flattening bread, and holding them together while frying is “so much easier than traditional grilled cheese,” than I must have been making it wrong all these years!
My normal grilled cheese takes about 10 mins each sandwich to make so who knows. My mom can make them quick but they taste no where near what mine taste like.

I keep trying your recipes, because they look so good. Nothing ever turns out like it looks like in your photos and I’m getting really bummed out. I am a good cook, and even the easiest ones just turn out terribly. The asparagus gratin was a disaster, this one, made with squaw and wheat bread, totally fell apart. 🙁
Avalon, I’m sorry that you are having so much trouble. Can you first explain what the issue was with the asparagus gratin? Also, please note that using substitutions such as squaw and wheat bread can result in a completely different outcome.

Well, I can’t think of many better ways to eat grilled cheese than this. It’s kind of like a cross between a mozzarella stick and a grilled cheese. Amazing!

How do you keep everything all rolled up while cooking?

I’ve found the best way to cook anything rolled up, is to start on the seam. Especially with these, the cheese will melt onto the seam and seal it for you! 🙂
