Sausage, Potato and Green Bean Foil Packets
Sausage and veggies packed in easy foil packets. Perfect for camping or a quick dinner! Can be baked/grilled.
I have never been a fan of green beans. Like ever. I wouldn’t touch it with a 10-ft pole.
Except if you throw it in a foil packet with sausage, potatoes, mushrooms and cajun seasoning – you won’t know what hit me. Green beans instantly become my best friend.
I’m not sure what it is but green beans suddenly do not taste like green beans in these foil packets. They taste like gold. No joke. And your picky eaters might say the same.
Sausage, Potato and Green Bean Foil Packets
Ingredients
- 1 12.8- ounce package smoked andouille sausage, thinly sliced
- 1 pound baby red potatoes, quartered
- 1 pound green beans, trimmed
- 8 ounces cremini mushrooms, halved
- 1 onion, chopped
- 4 tablespoons unsalted butter, divided
- 4 teaspoons cajun seasoning, divided
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Preheat a gas or charcoal grill over high heat.
- Cut four sheets of foil, about 12-inches long. Divide sausage, potatoes, green beans, mushrooms and onion into 4 equal portions and add to the center of each foil in a single layer.
- Fold up all 4 sides of each foil packet. Add butter, cajun seasoning, salt and pepper, to taste; gently toss to combine. Fold the sides of the foil over the sausage, covering completely and sealing the packets closed.
- Place foil packets on the grill and cook until just cooked through, about 12-15 minutes.*
- Served immediately, garnished with parsley, if desired.

I ran across this recipe when prepping for a camping trip. I made them ahead of time and I’m sure glad I did! By the time we got to the campsite and set everything up, we were wiped out…and it was dark. Luckily, I had these packets ready to use. We put them on the grate over the fire and in about 15 minutes, they were ready. Now I’m trying them at home but in a skillet. Thanks for the healthy, easy recipe!
Love these super yummy and simple recipes. I happen to have a very picky family and I didn’t wanna deal with what packet had what, and which was who’s so I decided to add foil to a larger baking pan. I tossed everything in there and covered with more foil. Then everyone dug in. I do wish I had boiled the potatoes first only for about 5 minutes. They took longer to be totally done. Oh, and I did add a few more veggies I had on hand. Very simple and delicious.
The recipe doesn’t specify whether to precook the potatoes but they definitely should be. Potatoes roasted from raw take at least half an hour to cook through. Very yummy tho. I will be adding this to my menus at home. Thanks!
This isn’t true. If you use smaller pieces of potato, then they should cook within about 20-25 minutes. I’ve tried it and it’s worked perfectly fine.
Very true! I cube my potatoes & let them rest in cold water for an hour (removes some of the starch) then pat dry w/ paper towel and toss in oil; add sliced onion, garlic & onion powder, paprika, salt and pepper and thin slices of garlic butter and finish with dried parsley flakes. Wrap in tin foil…3 layers and BBQ, turning packet over every 10min. Usually done within 30min. So freaking good!

Is there a non-spicy sausage substitute for this recipe? I love cajun seasoning, but I’m afraid andouille sausage will be too spicy for me!
Yes, absolutely. Any other variation of sausages can be substituted.
We loved this but was a little to spicy for my kiddos what do you suggest to use instead of Cajun seasoning? I also substituted the spicy sausage for regular smoked sausage.

We prepped and made these for our camping trip this weekend. They were SO GOOD! We have plenty leftover so we are making it again at home tonight!
We are camping this weekend and want to try this recipe. We will be putting the foil packets on the fire did you have to precook potatoes or green beans prior or did it cook through okay on the fire? I will get orecooked meat or cook ahead but was concerned about the other items.

If baking in the oven, do you put foil packets directly on oven rack, or on a baking sheet?
I recommend using a baking sheet so it’s easier to pull out.
If doing in oven, can I just put it all in casserole dish?

Made this for the first time the other night, absolutely delicious. My husband, who is a very picky eater, said that this was the best thing I have ever made. I will say, I used salted butter instead of unsalted and it was a huge mistake; way too salty! Though my husband was in love, I will not be making that mistake again. Also, out of the four packets, two of them got a little burnt at the bottom when on the grill. Just make sure to watch carefully when cooking on there so you don’t ruin any part of the delicious meal!
We heat with wood and make these right in the woodstove! My husband’s favorite, and probably the closest I’ll ever get to camping 🙂 Burn the stove down to coals, 10 minutes per side.
My family LOVES this meal. We have it at least twice a week. So simple to make. For those having issues, I put in my oven at 425 for 40 minutes.
The flavor was GREAT but after 25 mins of cooking in oven at 425, my veggies were still basically raw! Potatoes were still very firm and almost impossible to eat. What did I do wrong?!
Bailey, I recommend using smaller-sized potatoes to ensure that the potatoes are completely cooked through.
This was amazing, and so easy! I roasted in the oven and added red bell peppers to the mix. My 20-month old kiddos apparently love mushrooms?! Thanks for the recipe.
