Greek Quesadillas
All the best Greek favors come together in this EPIC cheesy quesadilla, topped with an easy homemade Greek yogurt tzatziki sauce!
Butters and I have basically locked ourselves in our house during this LA heat wave, sipping on these, while also trying to figure out the appropriate tzatziki sauce-to-quesadilla ratio.
I’m not going to lie – it took some time to get the perfect set of measurements just right to ensure that each quesadilla has enough sauce to go around.
But sometimes I get carried away with my dipping practices and there’s just not enough for the last few slices.
Or maybe I just solve everyone’s problems here and double it.
Greek Quesadillas
Ingredients
- 8 8-inch flour tortillas
- 1 10-ounce packages frozen chopped spinach, thawed and drained
- ½ cup julienned sun dried tomatoes in olive oil, drained
- ½ cup chopped pitted kalamata olives
- 1 cup shredded mozzarella cheese
- 1 cup crumbled feta cheese
- 1 tablespoon fresh dill
For the tzatziki sauce
- 1 cup plain Greek yogurt
- 1 English cucumber, finely diced
- 2 cloves garlic, pressed
- 1 tablespoon chopped fresh dill
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon chopped fresh mint, optional
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
Instructions
- To make the tzatziki sauce, combine Greek yogurt, cucumber, garlic, dill, lemon juice, lemon zest and mint in a small bowl; season with salt and pepper, to taste. Drizzle with olive oil. Refrigerate for at least 10 minutes, allowing the flavors to meld; set aside.
- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
- Top tortilla with spinach, sun dried tomatoes, olives and cheeses, and then top with another tortilla. Repeat with remaining tortillas to make 4 quesadillas.
- Place quesadillas onto the prepared baking sheet. Place into oven and bake until the cheese has melted, about 8-10 minutes.
- Serve immediately with tzatziki sauce, garnished with dill, if desired.

I would have given this 5+ stars, BUT for the flour tortillas (ugh). I love Greek style food, so personally…. I’d never insult this lovely combination of flavors by pairing it with anything Mexican. We loved this w/Pita, and also on Nan Bread.
Not quite sure how to read this comment, Angelina. I’m going to assume you didn’t mean this in the way it reads. This is a fusion dish – it’s Greek quesadillas so we used Greek flavors in an otherwise Mexican staple. Does that make sense?

This recipe is amazing! The flavors that are layered in this quesadilla are incredible. Best part for me was that it turned out EXACTLY AS PICTURED! That is NOT the case with most of the recipes I try. LOL!

Made these the night before last. They were delicious. My wife enjoyed the tzatziki but I, less so. I guess I’m a purist – I like my tzatziki, but not with lemon zest and without the dill (to each their own). Another easy hit, Chungah! Thanks for sharing…I’m waiting patiently for the beginning of September for my copy of your book!

Unfortunately, I do not have a recipe for a Greek-flavored meat at this time.
Quesadillas are the best–the possibilities are endless! I LOVE playing around with different flavor combos, and this one is definitely going on my list of ones to try. Thanks for the inspiration!

Yum! I love Greek food and am always looking for fun, new, delicious recipes. I baked a couple chicken breasts with salt, pepper, oregano, and lemon zest, chopped it up and put it into the quesadilla on top of the olives! My fiancé loved it! What a great twist on a classic recipe!

Hi – I love your blog so much! I am a bit confused – if each quesadilla has 2 tortillas (one on bottom and topped with one) Wouldn’t 4 quesadillas need 8 tortillas or are you folding them over or are you stacking the 4 tortillas like a cake? Thank you !

Confused also…..quesadillas are folded over (like the picture) But the recipe calls to top with another tortilla. Which ever way, it sounds delicious!!!
