Breakfast Stuffed Waffles
The most epic YET EASIEST portable breakfast. Biscuit dough is transformed into waffles, stuffed with cheesy scrambled eggs!
Didn’t we already discuss that anything that’s “stuffed” is an automatic win?
So we don’t need to go through that again, right? Because I basically stuffed biscuit dough with some scrambled eggs and cheese. Then I waffled it.
Wait. Is “waffled” a word?
I’m pretty experienced with waffles but I’m pretty sure it’s not a verb.
Nonetheless. It’s waffled.

Breakfast Stuffed Waffles
Ingredients
- 1 tablespoon olive oil
- ¼ cup diced red bell pepper
- ¼ cup diced green bell pepper
- 4 large eggs, lightly beaten
- Kosher salt and freshly ground black pepper
- 1 16-ounce tube refrigerated buttermilk biscuits
- 8 slices cheddar cheese
Instructions
- Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
- Heat olive oil in a large skillet over medium high heat. Add bell peppers and cook, stirring occasionally, until tender, about 3-4 minutes.
- Add eggs to the skillet and cook, whisking, until they just begin to set; season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; set aside.
- Separate biscuits into 8, cutting each biscuit in half lengthwise to create 16 pieces.
- Working in batches, place biscuit halves into the waffle iron. Top with cheese slices, egg mixture and additional biscuit half. Close gently and cook until golden brown and crisp, about 3-4 minutes.
- Serve immediately.

Made these for Mother’s Day this year as I was looking for something easy that my little ones could help with. WOW! I followed the recipe exactly as written and they were great!!
I was unsure about buying “flaky-layer” style biscuits, but I think that made it much easier to split them into halves.
The best part was that the filling got hot again on the grill, and the sandwiches seemed to stay hot for several minutes. So in other words, it didn’t matter that I made the filling first, and it cooled a bit on the plate before I got around to putting it on the waffle iron.
We will definitely make these again.
What a unique idea- I have not seen this elsewhere on the internet (I could have missed it!) My sandwiches came out tasting more like bread rather than the filling, but I think it is my fault for using “jumbo” biscuits. I would recommend using the thinnest biscuits you can find, so it doesn’t overpower the egg mixture. I also put a little bit of Curry in the eggs to give a touch more flavor. The last 2 I tried with jelly- don’t do this- it makes a mess to clean in your waffle maker! I will try this again with thin biscuits. Love the concept. Thanks for sharing!

Chungah, this recipe “Breakfast Stuffed Waffles” outstanding, with new, bubble waffle maker. I enjoy mushrooms, so I added that to the mixture to give it more flavor. YUM!

I would not recommend going longer than 12 hours. But as always, please use your best judgment.
Have you frozen and tried to reheat these? Looking for meal prep ideas, and as the recipe indicates they are less than a jimmy dean breakfast sandwich, as calories go.
Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself – there were no leftovers left to freeze! Please use your best judgment for freezing and reheating.

If biscuit dough is not available, you can go the old-fashioned route and use waffle batter! 🙂
