Slow Cooker Sweet Potato Casserole
That ooey gooey marshmallow topping!!!! All made in a crockpot. So easy without taking any oven space. Double win!
Thanksgiving is in T-minus 48 hours.
Ummmmm, so how did we get here so quickly?
I thought we had another week or so.
And I’m not a last minute planner. At all.
I make lists.
Lots of them.
Months in advance, really.
Except this Thanksgiving really crept up on me.
Thank goodness I have this slow cooker though.
Between the scalloped potatoes and creamed spinach, I may not have to use the oven at all.
Plus, the marshmallows.
You always need marshmallows for Thanksgiving.
There’s no argument here.
You just do.
Now they will melt beautifully in the slow cooker from the residual heat.
BUT!
You know. I always love to pop this under a broiler for color.
Or a blow torch.
You pick.
Slow Cooker Sweet Potato Casserole
Ingredients
- ¼ cup unsalted butter, melted
- ¼ cup brown sugar, packed
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground allspice
- 4 pounds sweet potatoes, peeled and diced
- 1 ½ cups miniature marshmallows
Instructions
- In a medium bowl, whisk together butter, brown sugar, cinnamon, vanilla, nutmeg and allspice.
- Place sweet potatoes into a 4-qt slow cooker. Stir in butter mixture.
- Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours, or until tender.
- Top with marshmallows. Cover and cook on low heat for an additional 5-10 minutes, or until melted.
- Serve immediately.

Making this now for dinner tomorrow. So easy. My only concern is this enough syrupy topping. I will keep an eye on it and decide later. Easy to make, smells delicious!
This recipe is so amazing! We’ve made it 5 times now and it’s always a perfect winner. We usually use the slow cook feature of our insta-pot to make this one. The insta-pot is not our best slow cooker and can be a little finnicky but that’s a testament to the perfection of this recipe. Even a difficult slow cooker makes this one easy.
I am always trying to find really good recipes for the slow cooker and on holidays this makes our kitchen workflow so much easier – combine and forget it and enjoy the day. 🙂 My mom always used candied yams when I was growing up but as an adult now I really can’t go back to canned potatoes. My whole family raves about how excellent these turn out.

this ones a keeper. I made this for Thanksgiving. I used a whole stick of butter because a half didnt seem like enough and little more brown sugar, kept everything else the same. Got many compliments and its just so easy you can’t beat this for taste and if you use a crock pot liner the cleanup ease alone is enough to make this this was to go when having this side dish. absolutely is going to be a staple for our thanksgivings to come. Would this recipe work in a 6 qt slow cooker, as written, or would that require doubling the ingredients?

This would be the perfect side dish to make for thanksgiving. Its a warm dish so it would be good for that warm fall feeling. I would like to make this for freinds and family!
Could I make this is the crockpot for the most part but then transfer into a baking dish and top with marshmallows to get that toasty color?

I don’t normally write reviews but this was such a hit at my work’s Thanksgiving potluck today! I added some pecans and substituted the all spice with pumpkin pie seasoning as I didn’t have all spice and it was delicious. It was wiped out as people went back for seconds. I had a few coworkers come ask me for the recipe too. I will definitely be making these for my own Thanksgiving dinner. The best part is it’s quick and easy and who doesn’t love the crock pot?

Looks perfect for my work Thanksgiving potluck, to make fresh there. However, there’s some steps with the potatoes that are left out. For a first-timer, I need everything.
Do I peel, cube, boiled, or do anything to the potatoes beforehand?
Do I mash them when they’re done? Help.
Stephanie, the potatoes should be peeled and diced (this is indicated in the ingredient list: 4 pounds sweet potatoes, peeled and diced). The potatoes do not have to be mashed, unless that is what you prefer.
Boil them first or put them in raw and diced and peeled?
Raw -the slow cooker will cook them and make them soft.

You can pop this in the broiler for 1-2 minutes until lightly browned or a creme brûlée torch will also work! 🙂

Yes, but cooking time will have to be adjusted as needed.

No, the potatoes are cooked in the slow cooker.
