Slow Cooker Sweet Potato Casserole
That ooey gooey marshmallow topping!!!! All made in a crockpot. So easy without taking any oven space. Double win!
Thanksgiving is in T-minus 48 hours.
Ummmmm, so how did we get here so quickly?
I thought we had another week or so.
And I’m not a last minute planner. At all.
I make lists.
Lots of them.
Months in advance, really.
Except this Thanksgiving really crept up on me.
Thank goodness I have this slow cooker though.
Between the scalloped potatoes and creamed spinach, I may not have to use the oven at all.
Plus, the marshmallows.
You always need marshmallows for Thanksgiving.
There’s no argument here.
You just do.
Now they will melt beautifully in the slow cooker from the residual heat.
BUT!
You know. I always love to pop this under a broiler for color.
Or a blow torch.
You pick.
Slow Cooker Sweet Potato Casserole
Ingredients
- ¼ cup unsalted butter, melted
- ¼ cup brown sugar, packed
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground allspice
- 4 pounds sweet potatoes, peeled and diced
- 1 ½ cups miniature marshmallows
Instructions
- In a medium bowl, whisk together butter, brown sugar, cinnamon, vanilla, nutmeg and allspice.
- Place sweet potatoes into a 4-qt slow cooker. Stir in butter mixture.
- Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours, or until tender.
- Top with marshmallows. Cover and cook on low heat for an additional 5-10 minutes, or until melted.
- Serve immediately.

Can I mash the sweet potatoes or do you recommend just dicing?
I recommend dicing to begin with – but you can choose to mash the potatoes once they are cooked!
I would like to leave off the marshmallows. Any problem with that?

YUM!!! I made the potatoes the night before and then set them on warm today. I won’t lie – the butter/brown sugar/spice mixture was so good. I bet it would make a great crumble topping for some type of fall dessert. I had to add a little bit more butter and some salt as well this morning because the potatoes dried out a little overnight. Otherwise, this was a HUGE hit. I did transfer the potatoes to a Pyrex and let the marshmallows broil. Perfect. Thanks so much for an easy and delicious recipe!
Can this be made the day before and then just put on warm to heat up?

Can you put the ceramic crock under the broiler to brown the marshmallows?

What about using canned sweet potatoes? How much time reduction is needed?

It would be nice to have this without the marshmallows, for us VeggieHeads. I’ve tried the vegan ones from the vegan store online, but they are either sold out, or really stale.
Any suggestions? I love, love Thanksgiving dinner, but it’s challenging to find delicious substitutes for some things…
