Freezer Croissant Breakfast Sandwiches
Prep for the week with these make-ahead sandwiches for those busy mornings! Filling, delicious and microwavable!
It is day 2 here in Copenhagen! I have lost all feelings of my fingers and toes, and the color of my nose is worse than Rudolph.
But still, the architecture here is breathtakingly stunning. And the pastries! They’re pretty stinking amazing too. That’s all I’ve been eating – that and scrambled eggs and salmon.
And today we are headed to Tivoli Gardens. An amusement park right in the center of town with ebelskivers.
And a cup of varm gløgg in hand. It’s basically their version of mulled wine in 30-40 degree weather, which is the best kind of combination, really.
But what I really need with a glass of varm gløgg is this. Mini, adorable ham, egg and cheese croissant sandwiches because they’re just so cute and freezer-friendly.
Freezer Croissant Breakfast Sandwiches
Ingredients
- 1 tablespoon olive oil
- 4 large eggs, lightly beaten
- ¼ cup half and half
- Kosher salt and freshly ground black pepper, to taste
- 8 mini croissants, halved horizontally
- 4 ounces thinly sliced ham
- 4 slices cheddar cheese, halved
Instructions
- Heat olive oil in large skillet over medium high heat. Add eggs to the skillet and cook, whisking, until they just begin to set. Gently whisk in half and half; season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; set aside.
- Fill croissants with eggs, ham and cheese to make 8 sandwiches. Wrap tightly in plastic wrap and place in the freezer.
- To reheat, remove plastic wrap from the frozen sandwich and wrap in a paper towel. Place into microwave for 1-2 minutes, or until heated through completely.
- Serve immediately.

I made these last night and had a couple for a quick breakfast this morning. They were great! Thanks for the recipe.
One tip for convenience, I used the plastic snack bags for each sandwich instead of wrapping each one individually. They were the perfect size and kept the sandwiches in place.
Do they have to thaw out before microwaving? If so, how long? Do they get soggy after microwaving? I plan on doing this but with an English muffin, egg whites, and turkey bacon. It just seems like they would get soggy.
There is no need to thaw. If you are worried about sogginess, you can also reheat in the oven. However, it will take longer than reheating in a microwave.

Most grocery stores should carry them in the bakery aisle.
I make very similar sandwiches but have always assembled normally then freeze. It works just fine and less time consuming.

Want to make these for my church’s media and band ministry….approximately 20 people. Need to heat them at home and then bring to the church services. Just wondering if keeping them warm as they sit will cause them to get soggy/soft? Don’t want to serve soggy sandwiches. Any suggestions?
Sogginess shouldn’t be too much of an issue!
I’m sure you already made these but it seems like the order that you put the ham/eggs/cheese would make a difference with the sogginess (put the ham on the bottom to prevent any liquid from the eggs running out, then egg then cheese).
You could always assemble the croissant/ham/cheese at home, and put the scrambled eggs in a prewarmed crock pot to transport them to the church and keep them warm.

I cook several pounds of bacon at a time (in the oven) and then wrap and freeze it all in portions, so easy to take out and heat for several seconds in the microwave or in a hot oven when you want bacon but not the pain of cooking it!!

I see that you are on what is called the Walking Street in front of the Royal Danish porcelain store. What on earth are you doing there in the middle of winter where the days are at best 6 hours long and usually cloudy and/or raining. In the summer, that street is filled with outdoor tables and chairs. The Danes love their food and alcohol.
There is a bakery shop on just about every other corner, usually near a pub and church, and to my way of thinking, they have the best baked breads and pastry in the world. 🙂 It might interest you to know that Danish pastry actually originated in Austria and that the Danes took it and improved on it. And unless it has improved since I left there 30 years ago (I’m American but married a Dane and lived there nearly 30 years) the food in not anywhere near as interesting as yours. Thanks for your fabulous recipes. P.S. Their cheeses are out of this world delicious. It seems each small island (if the 500 or so in Denmark) makes their own cheese. My favorite is from the island of Samsø.
Your photo looks like you heated and toasted them in the oven, rather than reheating in microwave. Is that if you’re serving a bunch right away (like a brunch/breakfast for a crowd) ? Or did you toast them in oven, then cool, wrap, and freeze them for reheating in microwave later?
