Mushrooms can be omitted completely if it’s not your thing. Eggplant, zucchini, or tofu can be substituted, if desired, as it can absorb all the good flavors and mimic the texture of mushrooms.

Detox Chicken Soup
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil, divided
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 ribs celery, diced
- 4 cloves garlic, minced
- 16 ounces cremini mushrooms, thinly sliced
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- 8 cups chicken stock
- 2 bay leaves
- ½ cup orzo pasta
- 1 sprig fresh rosemary
- 1 bunch kale, stems removed and leaves chopped
- 1 (15-ounce) can cannellini beans, drained and rinsed
- 3 tablespoons freshly squeezed lemon juice
- 2 tablespoons chopped fresh parsley leaves

- Season chicken with salt and pepper, to taste.
- Heat 1 tablespoon olive oil in a large stockpot or Dutch oven over medium heat. Add chicken, and cook, stirring occasionally, until evenly browned, about 6-8 minutes; set aside.
- Add remaining 1 tablespoon olive oil to the stockpot. Add onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes.
- Add garlic and mushrooms, and cook, stirring occasionally, until tender and browned, about 5-6 minutes. Stir in thyme and oregano until fragrant, about 1 minute.
- Stir in chicken stock and bay leaves; bring to a boil. Stir in orzo, rosemary and chicken; reduce heat and simmer until orzo is tender, about 10-12 minutes.
- Stir in kale and cannellini beans until the kale has wilted, about 3-4 minutes.
- Stir in lemon juice and parsley; season with salt and pepper, to taste.
- Serve immediately.

Hi! If I was to do this in the crockpot instead, would I just throw it in all at once? And put the orzo in at the last like 15 minutes?

I made this for my daughter who is sick with a fever. I didn’t put the chicken in it because frankly I forgot about it. I added 1/2 tsp Turmeric. It’s was so good! I love the lemon in it. It’s so light and flavorful. Great recipe!
I made this soup not really for the detox properties but more so, I wanted a health protein packed soup post surgery. This soup DID NOT disappoint. The flavors combined to give you a deliciously light-tasting soup that filled me up. I will be making this again!!

I’ve made this a good 5 times now with varying degrees of adherence to the recipe and it always turns out great. One tip is to use the Trader Joe’s ready chopped mirepoix and ready sliced mushrooms – makes it much quicker. I like a little spice too, so I often add some chili flakes with the herbs.

This has become an absolute favorite soup recipe in our house! It’s absolutely wonderful! I think I’ve made it pretty much once a week (per request) since October! Lol! I often can’t find Cremini mushrooms, so I just substitute in white mushrooms and I have used canned Navy beans for Cannellini beans if I happen to run out or can’t find them in the stores. I have also use shredded rotisserie chicken in lieu of making my own chicken breast when I’m feeling a bit lazy! Thanks for such a fantastic and easy recipe!

Just made this soup today, very happy with it. The flavor is exceptional, I did make a few alterations to the recipe but it still turned out amazing. First soup of fall, perfect for chilly weather. I didn’t have celery or parsley so I opted for zucchini instead, did not add in beans. Added some Kettle & Fire Ginger Turmeric Broth, and chicken broth as well. This is going to be my go to this fall!
