Sheet Pan Steak and Fries

The classic steak and fries easily made right on a sheet pan on ONE PAN! Bake your fries first, then add the steaks! EASY!
The term steak and fries has very strong date-night vibes associated with it. Like it’s something that you could only have on a special night, or a specific occasion.
But. I beg to differ.
I can do steak and fries anytime. Any day of the week, really. Breakfast, most importantly. Just throw a fried egg on top.
And now. You can actually have it any night of the week because it comes together on a single sheet pan.
I’m dead serious. Let the potatoes get a hard start so they get nice and crisp. Then, during the last 5-10 minutes of cooking time, throw on your steaks.
All you have to do is broil until desired doneness. So, no. We don’t need an occasion for this.
Sheet Pan Steak and Fries
Ingredients
- 4 1-inch-thick top sirloin steak, patted dry
- Kosher salt and freshly ground black pepper, to taste
For the garlic parmesan fries
- 2 russet potatoes, cut into 8 long wedges
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoons Italian seasoning
- ½ cup freshly grated Parmesan
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped parsley leaves
Instructions
- Preheat oven to 375 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- Place potatoes in a single layer onto one side of the prepared baking sheet. Add olive oil, garlic, Italian seasoning and Parmesan; season with salt and pepper, to taste. Gently toss to combine.
- Place into oven and bake for 20-25 minutes, or until golden brown and crisp, tossing occasionally.
- Preheat oven to broil.
- Season steaks with salt and pepper, to taste, and place onto the opposite side of the prepared baking sheet in a single layer.
- Place into oven and broil until the steak is browned and charred at the edges, about 4-5 minutes per side for medium-rare, or until desired doneness.
- Serve immediately with garlic butter, garnished with parsley, if desired.

Unless I missed it I don’t see mention of which rack this is all done on. Do you start middle and go up a rack or two when you’re about to broil? Or, do you broil unconventionally on the same rack? I’m thinking the latter ….. but unsure.
I had to take my potatoes off early because they were burning under the broiler. The steak turned out perfect at 4 minutes per side but the broiler was too strong for the potatoes. I would love to figure out how to keep this one sheet pan and have it all turn out perfectly cooked! We enjoyed it though! It was great.
Maybe stupid question-but do you think I can make this with chicken cutlets instead of steak?
Made this last night and it was great. My steaks didn’t turn out quite as pretty as the picture… may sear them on cast iron next time for a minute before placing on the sheet. Still, it was all delicious. When I started the broil I moved my pan up under the broiler and may not do that again. The potatoes didn’t like it! Still, I kept an eye on it and everything worked out. Delicious!
This recipe was immensely easy and so delicious! My husband said I could’ve cut the potatoes wedges more thin and get 10-12 wedges per potato but I thought they were just the right thickness. So if you want crispier wedges go thinner and get 10-12 out of a potato.
Mmmmmm I’m not much of a steak and potatoes gal, but you did make this combo very appealing! My husband would love it!
The steaks seem so thin will they not be totally over-cooked while the fries are getting done?
The potatoes cook for 20-25 minutes. The steaks are only on the pan for 10 minutes, so they probably won’t be overcooked.
This was delicious and there is nothing leftover. The compound butter I highly recommend on the steak. The fries were a big hit . I will definitely make this again. Thanks for sharing the recipe.

Potatoes need WAY more time! It’s been almost an hour and I’m at 400 degrees
How big were your potatoes? Maybe that’s the issue with the cooking time? Do you have an oven thermometer to check if your oven actually was at 375?
I’m going to try this for company next weekend along with the avocado egg appetizer and one of your veggie sides . Love so many of your recipes ,will post results.

Sounds so good. I’m going to use my cast iron pizza pans. And for all you skeptics about cooking steaks without firing up the charcoal grill; just give it a try. I’ve been doing it for years. Yes the grill is great, but sometimes the weather just doesn’t cooperate. The secret is to sear the steaks on all sides and then, pop into a VERY hot oven or broiler. My broiler is unreliable, so I just use a 500 degree oven.
My gas grill has been on the fritz for a year now. I have been cooking all my steaks on my stove in my 12″ cast iron fry pan. They come out yummy. You just need to make sure the pan is good and hot before you put the steaks in. I drizzle some olive oil on the steaks before I season with salt and pepper.

What temperature do you set for the broiler

I live in an apartment that has a smoke detector that very easily goes off. Does anyone know if this produces a high-or even moderate-amount of smoke when removing from oven? I really want to try this recipe, but also don’t want my neighbors to think our building is on fire!
My house is the same way! I just turn on the oven fan when I’m popping it out of the oven to alleviate some of the smoke. Hope that helps!
