Save time, money and calories when you prep for the entire week! Made SKINNY with whole wheat spaghetti and chockfull of veggies!
I know.
It’s not fair to be posting any kind of meal prep recipes right now.
As I’ve been eating all sorts of fried street food.
Like these churros with soft serve ice cream.
Or these egg breads by the dozen.
Or a 32 cm soft serve ice cream cone.
But the minute I touch down in LA, I’ll be on a mission with these boxes.
Its my favorite lo mein recipe made a little bit skinnier, loaded with even more veggies. And the noodles are swapped out for whole wheat spaghetti.
Of course you can use your noodles of choice.
But you might as well cut down on the calories where you can.
I promise.
You won’t taste a difference!
If you do, I’ll hand deliver one of those churro thingies.

- 1 red bell pepper, julienned
- 1 carrot, julienned
- 1 cup snow peas
- 3 cups baby spinach, chopped
- ½ teaspoon sesame seeds
For the sauce
- 2 tablespoons reduced sodium soy sauce, or more, to taste
- 1 tablespoon freshly grated ginger
- 1 teaspoon honey
- 1 teaspoon sesame oil
- ½ teaspoon Sriracha, optional
Instructions
- In a small bowl, whisk together soy sauce, ginger, honey, sesame oil, and Sriracha, if using; set aside.

- Place into meal prep containers, garnished with sesame seeds, if desired.

This is so yummy, I would double the sauce though. But overall really tasty.
Easy and yummy. I doubled the sauce, used lo mein noodles, subbed broccoli for mushrooms, subbed edamame for snow peas (store was out of snow peas), and then I added water chestnuts and chicken. Will definitely make this again.
Made with broccoli instead of mushrooms and doubled the sauce. Delicious!! You can add chicken or any veggie you like to change it up a bit. Will definitely make many times.
Very delicious meal, I substituted the mushrooms with broccoli and was really good. It does need a little more sauce, but the flavor of the sauce is great. Will be making again, my kids loved it.
WOW. This recipe is simply delicious. It will be a new favorite on the weekly menu.
This was really yummy with all of the veggies. I didn’t mention the whole grain spaghetti and nobody in my family (including me) noticed the difference. I doubled the sauce and it was great for us. I may have used more than 8 oz of spaghetti. I didn’t measure exactly. I’ll definitely make this again!
I made this for my husband’s work lunches. He works hard and eats hard, so I doubled the recipe. Also, I subbed broccoli for red bell peppers because he finds bell peppers too slimy for his taste (and he loves broccoli). It’s not as colorful without the red, but he’s not complaining!
I personally hate veggies, but even I have to admit that it smelled awesome when I was cooking it up. The garlic makes it. Also, I added some Taco Bell Diablo sauce to the dressing, and he seems to like it.
Thanks for the recipe! It makes me feel good to know my husband is eating healthy at work!
I didn’t do this for meal prep, but I made it for a healthy dinner tonight. This is really, really good, and so versatile. I added spiralized zucchini because I had some that needed to be used up, and some cooked shrimp because my husband does daily workouts and needs the protein. The sauce is so good that my veggie-hating 12 year old actually ate some plants. He asked for leftovers for lunch tomorrow! The prep does take a bit of time, but after it’s all said and done, the meal comes together really quickly. Will definitely be making this again. Thanks!
Hi there,
The sesame oil you used in this recipe is regular and not toasted, cortect?
Either sesame oils should work just fine in this recipe. 🙂
Looks so delicious! What a fun idea for meal prep and it looks like it would freeze well!
Hello,
I am allergic to sesame. Any suggestions for substitutions?
You can omit the sesame oil. 🙂
This was beyond amazing! Thank you so much and especially the sauce! So very good. (Filipino neighbor is going to be so happy I found him a easy home-made delicious ginger sauce!)
So great to hear!
This looks quite lovely – do you think a chow Mein noodle would work – Spagetti noodles and Asian cooking just don’t seem to work for me.
Yes, it should work. But please use your best judgement when it comes to modifications!
I put this recipe into weight watchers app and if you cut the olive oil in half it’s only 6 points!
Does this freeze well?
Freezing sounds like an amazing idea but unfortunately, I cannot answer this with certainty as I have never tried freezing this myself. Please use your best judgment for freezing and reheating.
I put the recipe in my Weight watcher create a meal app and 4 servings are 7 smart points each.
Excellent – Thank you!
realistically, how long will these stay fresh and tasty once prepped?
A few days at least but as I am not an expert on food safety, I cannot really say with certainty. Methods for optimal food storage and shelf life should be based on good judgment and what you are personally comfortable with. Hope that helps, Angel!
Where cn you find the special containers?
You can find them on amazon 🙂
What can I use instead of oil in the sauce.
Unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.
You can always substitute oil with butter. Look up the modifications, though, as you cannot use the same amount of butter as you would olive oil.
Is the 8oz spaghetti cooked or uncooked??
Uncooked.
