Korean Beef Bowl Meal Prep

Tastes like Korean BBQ in meal prep form and you can have it ALL WEEK LONG! Simply prep for the week and you’ll be set. EASY!
I’m baaaaaaack. And back on meal prep, unfortunately.
Well, it’s not unfortunate. I just miss the mardi gras colored dumplings. The churros with soft serve ice cream. The Hello Kitty dim sum. The 32cm ice cream cone.
But hey. These meal prep boxes. They come to an obvious close second.
They are such comfort food for me right now, except they are perfectly portioned with brown rice, sautéed garlic spinach, and some eggs for added protein.
It’s a full meal without getting you to overeat, or lead you to a food coma mid-afternoon.
And you know you can always swap out the ground beef for pork or chicken, or even crumbled tofu for a meatless version.
And I won’t be mad if you snuck in some veggies to the ground beef like carrots, bell peppers, zucchini, etc.
I won’t be mad at. all.
Korean Beef Bowl Meal Prep
Ingredients
- 1 cup brown rice
- 4 large eggs
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 cups chopped spinach
Instructions
- In a large saucepan filled with 2 cups of water, cook rice according to package instructions; set aside.
- Place eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil and cook for 1 minute. Cover eggs with a tight-fitting lid and remove from heat; set aside for 8-10 minutes. Drain well and let cool before peeling and slicing in half.
- Heat olive oil in a large skillet over medium high heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in spinach until wilted, about 2-3 minutes; set aside.
- In a small bowl, whisk together brown sugar, soy sauce, ginger, sesame oil and Sriracha.
- Heat olive oil in a large skillet over medium high heat. Add garlic and cook, stirring constantly, until fragrant, about 1 minute. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.
- Stir in soy sauce mixture and green onions until well combined, allowing to simmer until heated through, about 2 minutes.
- Place rice, eggs, spinach and ground beef mixture into meal prep containers, garnished with green onion and sesame seeds, if desired.

Could you substitute coco aminos for the soy? I am very allergic to soy
So delicious. Wouldn’t change anything!
This was my first attempt at a meal prep for a 7-day work week and it came out amazing! Really look forward to attempting more recipes from this site 🙂
A “go-to” favorite for my husband and I! Excellent meal prep or hot dinner. I do make some substitutes:
– Coconut aminos (v. soy sauce)
– Hot honey (v. brown sugar)
– Double the spinach 🙂
Thanks for a delicious recipe!
Love this recipe! It’s so easy and delicious! The kids even love it!
This was delicious! I have made it a few times already and it is a fave for both my husband and me. I do double the ingredients for the spinach because we just want more of it haha
This was delicious. I halved it since there is only two of us. Next time, I will make whole thing.
Super easy and very yummy! I overcooked my eggs but I will definitely be trying this one again.

Hey Chungah! Thanks for sharing your awesome Korean Beef bowl. This reminds me of the Japanese beef bowls I had in Japan. I’m eating it as I type 😉 It’s delicious and I love the punch of the ginger so healthy and refreshing! I added a few scoops of Kimchi and the sesame seeds on top and it made it so good 🙂 This might be my week day rotation as it’s so easy to prep too.
So good! I love to make this. I add in some other veggies like carrots and zucchini.
Making this tomorrow can’t u eat this hot or cold?
Hi! I haven’t tried this yet but it sounds delicious! I was just wondering how many calories is in a meal? Thank you!

I overcooked the eggs but the meal still tastes very good.
Thank you for the recipe! It helps me a lot with meal prepping since I am constantly on the hunt for simple recipe that I can make on Sunday and take to work the following week. I did add some salt to taste, but the ground beef tastes great. I will be making this again.
This is my top meal prep recipe of all time. I make it once every month or two. I use Jasmine Rice instead of brown rice. I recently started sauteeing mushrooms and adding them as well, so good!
