Korean Beef Bowl Meal Prep

I’m baaaaaaack. And back on meal prep, unfortunately.
Well, it’s not unfortunate. I just miss the mardi gras colored dumplings. The churros with soft serve ice cream. The Hello Kitty dim sum. The 32cm ice cream cone.
But hey. These meal prep boxes. They come to an obvious close second.
They are such comfort food for me right now, except they are perfectly portioned with brown rice, sautéed garlic spinach, and some eggs for added protein.
It’s a full meal without getting you to overeat, or lead you to a food coma mid-afternoon.
And you know you can always swap out the ground beef for pork or chicken, or even crumbled tofu for a meatless version.
And I won’t be mad if you snuck in some veggies to the ground beef like carrots, bell peppers, zucchini, etc.
I won’t be mad at. all.
Korean Beef Bowl Meal Prep
Ingredients
- 1 cup brown rice
- 4 large eggs
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 cups chopped spinach
Instructions
- In a large saucepan filled with 2 cups of water, cook rice according to package instructions; set aside.
- Place eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil and cook for 1 minute. Cover eggs with a tight-fitting lid and remove from heat; set aside for 8-10 minutes. Drain well and let cool before peeling and slicing in half.
- Heat olive oil in a large skillet over medium high heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in spinach until wilted, about 2-3 minutes; set aside.
- In a small bowl, whisk together brown sugar, soy sauce, ginger, sesame oil and Sriracha.
- Heat olive oil in a large skillet over medium high heat. Add garlic and cook, stirring constantly, until fragrant, about 1 minute. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.
- Stir in soy sauce mixture and green onions until well combined, allowing to simmer until heated through, about 2 minutes.
- Place rice, eggs, spinach and ground beef mixture into meal prep containers, garnished with green onion and sesame seeds, if desired.

The Korean beef is very good, but a little too sweet for me, and I only gently packed the brown sugar. I’ll definitely make it again, but next time I’ll try half the brown sugar.
I love your meal preps! I love your site in general, I visit it often and I’ve made MANY dishes from it.
I used coconut sugar and didn’t try to pack it. I think coconut sugar made it less sweet than brown sugar would have. If you don’t have a coconut allergy in the home, it might be worth a try 🙂

It sounds like a simple, a no-brainer thing, but we haven’t been doing lunch preps this way in out family until recently after reading your posts. It really simplified things during busy weeks and gave back a lot of time. The recipe ideas have been very good too. Thank you!

Yes, that is correct. You can reheat in 30-second intervals until heated through, about 2-3 minutes. Hope that helps!
Do you freeze some of the meals? I’m not sure I want everyday. Wouldn’t it be better to not peel the egg before hand?
Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself – there were no leftovers left to freeze! Please use your best judgment for freezing and reheating.
And yes, you can peel the egg beforehand if you wish.

Vanessa, if you use a service like MyFitnessPal, you can easily create the nutritional chart yourself 🙂 It’s pretty easy, and the mobile app will actually do a lot of the work for you. I’m kind of obsessed with it myself!
The calculations didn’t come out so great – those watching their waistlines could easily use slightly less olive oil, leave out egg (already 25 grams protein w/o egg) and use lean ground beef or alternative lower-fat meat. I might even sub most or all of the olive oil with vegetable broth to cook up spinach. It looks too good not to try, thanks for sharing!
If you can’t enjoy a meal without asking your calculator first, then maybe there are bigger issues here than the egg.
Some people are trying to lose weight, ANNA.
Some people are trying to make sure they are losing weight by not over eating. A calorie calculator is helpful with that as it keeps them on track. It’s not that they don’t enjoy the meal, it’s that they would rather know what they’re eating before they over eat. No need to be rude.
You could also try reducing or eliminating the brown sugar altogether rather than leaving out the good stuff like healthy fats.
I would be less concerned about the egg and the olive oil and more concerned with the sugar and sodium levels TBH
Definitely… too much sodium not good for anyone and the sooner that’s learned the better for you. .
I came out with 481 calories per boxed meal using lean beef (90/10) and not adding olive oil to fry the beef. Under 500 cal is not too bad for a lunch.
