Now you can sleep in and eat a filling and hearty breakfast ALL WEEK LONG! Eggs, bacon or sausage, roasted potatoes and broccoli!
I’m finally home.
And I’m back to my old self with my favorite routine of meal prep.
Although I wouldn’t mind more of those pineapple buns for breakfast.
Actually.
I’d rather do the pineapple bun meal prep.
But.
For now, this will do.
The All-American breakfast diet.
So you can skip the sugary breakfast bars.
Don’t worry.
You can still sleep in.
You’ll just have eggs, bacon, potatoes and broccoli waiting for you.
You can even change it up to have a few sausage boxes as well.
Or use sweet potatoes instead.
The combinations are endless.
Now if we can only add a side of that pineapple bread…
Breakfast Meal Prep
Ingredients
- 12 ounces russet potatoes, diced*
- 3 tablespoons olive oil, divided
- 2 cloves garlic, minced
- ½ teaspoon dried thyme
- Kosher salt and freshly ground black pepper, to taste
- 8 large eggs, lightly beaten
- ¼ cup reduced fat shredded Mexican blend cheese
- 4 slices bacon*
- 12 ounces broccoli florets, about 2-3 cups
Instructions
- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- Place potatoes in a single layer onto the prepared baking sheet. Add 1 tablespoon olive oil, garlic and thyme; season with salt and pepper, to taste. Gently toss to combine.
- Place into oven and bake for 25-30 minutes, or until golden brown and crisp; set aside.
- Heat remaining 2 tablespoons olive oil in a large skillet over medium high heat. Add eggs, and cook, stirring occasionally, until they just begin to set; season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes. Top with cheese; set aside.
- Add bacon to the skillet and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
- Place broccoli florets into a steamer or colander set over a pan of boiling water. Cover and steam for 5 mins, or until cooked through and vibrant green.
- Place potatoes, eggs, bacon and broccoli into meal prep containers.

My husband and I really don’t like broccoli, I have been trying to think of an alternative but have had no luck. Any ideas on what I can substitute?
April, you can substitute green beans or snap peas or omit altogether. 🙂
I think bell peppers would be awesome for breakfast!
I find baby spinach very easy to prep and heat. Also, goes great with all in this dish!

How do you reheat the meal in the morning?
I recommend reheating in the microwave.
I’m new to this.. at the end it says place in meal prep containers and in the nutrition facts it says servings per container is 4? I’m confused.. Help.
The nutritional information is for each individual serving.

What a great idea! But unfortunately, without having tried this myself, I cannot answer with certainty. As always, please use your best judgment when making substitutions and modifications.
Thanks for this idea…I never thought of prepping breakfast. I’m always just grabbing a bite at work, but now I think this would be much healthier than a bacon burrito from work.

How many gram or ounces of egg, bacon, broccoli, and potato for each container???
Technically 3 ounces of potatoes, 3 ounces of broccoli, one slice of bacon and 2 scrambled eggs. However, weight and amount of each might change when cooking, so it’s not an exact science. However, the recipe yields 4 servings, so my suggestion would be to divide what you have as evenly as possible. I hope that helps!
Is this really only an estimated 360 calories per meal? How is that possible? Yum! Totally making this next week.
I am so sorry for all the questions – I have never done anything meal prep before. Do I need to wait a certain amount of time to put the assembled containers with the hot ingredients in the fridge, or no? If so, how long? Thanks 🙂
Yes, please let it cool completely prior to refrigerating.
This looks like JUST what I need! I LOVE these breakfast foods and have good intentions of making them, only to run out of time to do it in the morning. If I only wanted to make say 2 or 3 of these meals for myself, how would I adjust the ingredients?
I just see now that this recipe looks like it yields 4 containers (aka four meals). So to do two meals, I would just cut the recipe in half, right?

Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself. Please use your best judgment for freezing and reheating.

Hi Ashley, our nutritionist Pam does the calculations and then we use a plug-in for the website, so the numbers show up as your traditional label. But there are resources out there to create your own label for free, if that’s what you’re looking for.

Possibly several ideas for a ketogenic diet?
OR ideas for calorie restrictive diet? below 2000 calories, below 2500 calories, 5000 calorie diet divided between 5 meals a day, etc…..Many people who meal prep are fitness addicts who are focused on nutrition and counting their calorie intake throughout the day everyday. coming up with new and fresh ideas to eat while having to be aware of what you’re eating is very time consuming. I hope you are able to help.

This meal looks amazing but I’d rather have it for lunch or dinner. Usually, my breakfast consists of coffee and a banana.
