Now you can sleep in and eat a filling and hearty breakfast ALL WEEK LONG! Eggs, bacon or sausage, roasted potatoes and broccoli!
I’m finally home.
And I’m back to my old self with my favorite routine of meal prep.
Although I wouldn’t mind more of those pineapple buns for breakfast.
Actually.
I’d rather do the pineapple bun meal prep.
But.
For now, this will do.
The All-American breakfast diet.
So you can skip the sugary breakfast bars.
Don’t worry.
You can still sleep in.
You’ll just have eggs, bacon, potatoes and broccoli waiting for you.
You can even change it up to have a few sausage boxes as well.
Or use sweet potatoes instead.
The combinations are endless.
Now if we can only add a side of that pineapple bread…
Breakfast Meal Prep
Ingredients
- 12 ounces russet potatoes, diced*
- 3 tablespoons olive oil, divided
- 2 cloves garlic, minced
- ½ teaspoon dried thyme
- Kosher salt and freshly ground black pepper, to taste
- 8 large eggs, lightly beaten
- ¼ cup reduced fat shredded Mexican blend cheese
- 4 slices bacon*
- 12 ounces broccoli florets, about 2-3 cups
Instructions
- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- Place potatoes in a single layer onto the prepared baking sheet. Add 1 tablespoon olive oil, garlic and thyme; season with salt and pepper, to taste. Gently toss to combine.
- Place into oven and bake for 25-30 minutes, or until golden brown and crisp; set aside.
- Heat remaining 2 tablespoons olive oil in a large skillet over medium high heat. Add eggs, and cook, stirring occasionally, until they just begin to set; season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes. Top with cheese; set aside.
- Add bacon to the skillet and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
- Place broccoli florets into a steamer or colander set over a pan of boiling water. Cover and steam for 5 mins, or until cooked through and vibrant green.
- Place potatoes, eggs, bacon and broccoli into meal prep containers.

So if this makes 4 servings, each serving gets one slice of bacon/sausage? Your pictures look like they have more.
Yes, each box can have one slice of bacon/sausage but you can add more as needed.
But then how does that change for the nutrition label if more bacon or sausage is added?

This is such a great idea! I love having quick but diverse breakfasts throughout the week, but hate the morning prep work.
Breakfast is my favorite! Most mornings I cook egg whites with different ingredients thrown in but there are days when I don’t have time. This would be perfect!
I love this idea, but I would cut a few minutes by putting the bacon in the oven at the same time as the potatoes – cuts down on the mess of cooking bacon on the stove top!
Ok, please help a rookie out…
If I make this exactly as the recipe states, how many days in the refrigerator before they go bad? Also, approximately how long do I microwave them for?
I keep these in the fridge for 3-4 days, and I reheat for 1-2 minutes, or until heated through. But I am not an expert on food safety. Methods for optimal food storage and shelf life should be based on good judgment and what you are personally comfortable with.
I always prep lunch, but I never prep breakfast! I really should start because I am always in a rush in the morning…

Trend or not, meal prep is helpful for many individuals (myself included) to save time and money, and to ensure healthier eating habits rather than eating out, ordering take-out or hitting the fast food drive thru lane.

Also much easier and time saving to cook one larger batch and have one set of pots, pans, etc. to clean up than one set each day. This totally makes sense to me. But, I can see how you could prefer to wash all the pans everyday; I guess.
We all know breakfast is the most important meal of the day! Yet many people either lack a good breakfast or even skip breakfast. Thank you for sharing (:

Sounds wonderful. Making this soon. Best part? I’d have never thought of broccoli for breakfast but just think of all the treats I could get away with later in the day because, well, I did have broccali for breakfast.
Can this be freezed ? How do you reheat this, in microwaves ?
I recommend storing in the refrigerator and reheating in the microwave.
I started buying glass containers. They’re easy to store, easy to clean, more sanitary, microwavable and can be used to bake with. I recommend it to anyone who likes to meal prep.
I agree. Dont go to great lengths to be healthy then microwave in plastic? Yuck
