Copycat Starbucks Chicken and Hummus Bistro Box

Meal prep for the week ahead!!! Filled with hummus, chicken strips, cucumber, tomatoes and wheat pita.
I don’t know about you guys but I’m kind of a pathological snacker.
And it’s not cute.
Maybe it’s because I work from home.
But sometimes I just can’t stop eating.
It’s not because I’m hungry.
I do it simply out of boredom.
But these little bistro boxes have been saving my butt.
From the hummus, chicken strips, cucumber, tomatoes and wheat pita, these boxes keep me entertained long enough so I don’t eat an entire box of Puffins cereal.
Believe me.
I’ve done that.
Twice, now.
Copycat Starbucks Chicken and Hummus Bistro Box
Ingredients
- 1 pound boneless skinless chicken breasts, cut into strips
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- Kosher salt and freshly ground black pepper, to taste
- 1 cucumber, thinly sliced
- 4 mini whole wheat pita bread
- 1 cup cherry tomatoes
- ½ cup hummus, homemade or store-bought
Instructions
- Season chicken with garlic powder, onion powder, salt and pepper, to taste.
- Preheat grill to medium high heat. Add chicken to grill and cook, flipping once until cooked through, about 5-6 minutes on each side; set aside.
- Place chicken, cucumber, pita bread, tomatoes and hummus into meal prep containers.

Are the ingredients listed all supposed to be split between 4 boxes? That means 1 tablespoon of hummus per box – a tiny amount. 2 oz of raw chicken would cook down to less than that weight. And 1/8th of a cup of cherry tomatoes would be maybe 3.
Except for the pita bread, the list of ingredients seems more reasonable as split between 2 boxes. Maybe I am confused and didn’t quite understand.
