Ham and Cheese Hash Brown Foil Packets
The EASIEST hash browns you will ever make. Simply prep, wrap and bake! No babysitting! So quick and simple!
Where has these hash browns been all my life?
I’m always babysitting hash browns on the stovetop, letting them get crisp, flipping, waiting for more crispness and flipping again and again.
But not anymore.
Instead, we have individual foil packets for your convenience using Reynolds Wrap® Heavy Duty Foil.
This is a heavier gauge foil than your traditional Reynolds Wrap, which makes it perfect for making multiple size packets for the grill, oven or even your camping trips.
Now I should mention. Full disclosure.
These are not your traditional crisp hash browns.
Instead, we have hash browns smothered in ham and cheese.
With nutrients and flavors sealed right in, and you can eat straight from the foil packet!
Ham, cheese and lack of dishes trumps crispness, right?
Ham and Cheese Hash Brown Foil Packets
Ingredients
- 1 (30-ounce) package frozen shredded hash browns
- 1 ½ cups chopped smoked ham
- 3 tablespoons olive oil
- Kosher salt and freshly ground black pepper, to taste
- 1 ½ cups shredded sharp cheddar cheese
- 2 tablespoons chopped fresh chives
Instructions
- PREHEAT oven to 400 degrees F.
- COMBINE hash browns, ham, olive oil, salt and pepper in a large bowl.
- CUT six sheets of Reynolds Wrap® Heavy Duty Foil, about 12-16-inches long. Lightly oil or coat with nonstick spray. Divide the hash brown mixture into 6 equal portions and add to the center of each foil. Sprinkle with cheese.
- FOLD up all 4 sides of each foil packet over the hash browns, covering completely and sealing the packets closed.
- PLACE foil packets on a baking sheet. Place into oven and bake for 20-25 minutes, or until the cheese has melted and the hash browns are heated through.
- SERVE immediately, garnished with chives, if desired.

Love this foil packer idea! I used the dry hashbrowns in the carton that you add hot water for 12 minutes. I drained it, added oregano and cooked echrich sauasge and the followed the test of the recipe. This is easy and versatile! Thank you for this idea!
I usually use parchment paper instead of aluminum foil because it’s easier to clean up afterward.
Have not tried this yet. Will do it today. I wanted to add an egg to this packet as they usually bake well. Any suggestions about that rather than cooking egg separately? I would do it without anyway, but like the idea of adding an egg for diversity of recipe. Thankx
So delicious. I added srambled eggs also. Cooked them a little first. Definitely will make this again & again
I’m planning to make this while we are camping. How long and what heat level do you think I should cook this on the stove top?
Unfortunately, without further recipe testing, we cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.
Do you think you could prep and freeze these?
Freezing sounds like an amazing idea but unfortunately, I cannot answer this with certainty as I have never tried freezing this myself. Please use your best judgment for freezing and reheating.
We are having a damn delicious Christmas at my house:) We had the ham and cheese hash brown packets for brunch and are making the PF Chang Mongolian beef copycat for dinner! Your recipes are the best! Thank you so much. From, Julie in Cleveland, OH
Do you thaw the potatoes first?
No, you do not.
PERFECT for me to start my day! Tmr breakfast it is!
Can they be made ahead and frozen?
Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself. Please use your best judgment for freezing and reheating.
I think this recipe sounds great…I was thinking for those of us that have to have our hash browns crispy why cant we just keep the foul packets open and maybe even go 1 step further and nest an egg in the middle then cook under broiler?
Absolutely – that sounds amazing!
Can we substitute raw grated potatoes for frozen hash browns do you think?
Yes, of course!
I like to cook shell fish this way. I use olive oil on the shell fish as it stops them from drying out.
Yum! This looks amazing! Wish I was eating this for breakfast this morning!

I don’t cook with aluminum foil but will try these in parchment paper.
Yes! I always use Parchment paper. Works great and you don’t find the odd bit of foil while eating. Soft metals aren’t good for you. That’s why aluminum chlorhydrate was removed from deodorant.
But I digress, Chungah rocks, she always has fun tasty ideas. I always can’t wait for the next E-mail idea.
My daughter made these yesterday and they are delicious! She said it was a quick, easy recipe-definitely a keeper!
