Garlic Parmesan Cauliflower Steaks
Your new go-to side dish! Roasted cauliflower is the best/easiest way to go! So crisp-tender and perfectly seasoned!
I came to really enjoy cauliflower about 2 years ago.
It’s weird, I know.
Cauliflower was just never incorporated into our very Korean diet.
Broccoli, yes. Cauliflower, no.
I’m also pretty sure my mom had no idea what cauliflower was.
Yet now, I can’t be without it. I just can’t.
I just made a mashed version for Thanksgiving, which was probably the best mashed potatoes I have ever had in my entire life.
And I have a roasted cauliflower soup coming next week.
But for now, I’m having cauliflower steak every single day.
ONLY cauliflower steak. Maybe a donut for dessert.
But hey, it’s just that good.

Garlic Parmesan Cauliflower Steaks
Ingredients
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- ½ teaspoon dried parsley
- 2 heads cauliflower, cut into 1/2-inch slices
- Kosher salt and freshly ground black pepper, to taste
- ¼ cup freshly grated Parmesan
Instructions
- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- In a small bowl, combine olive oil, garlic, oregano, thyme, rosemary and parsley.
- Place cauliflower slices in a single layer onto the prepared baking sheet. Brush each slice with the olive oil mixture on both sides; season with salt and pepper, to taste.
- Place into oven and bake until golden brown, about 20-25 minutes, flipping halfway.
- Serve immediately, sprinkled with Parmesan.

Over the years I’ve attempted baked cauliflower from the time back in the early 80’s when people were baking the heads whole with the Parmesan cheese. It always left me a little cold. But this was delicious! I think it’s really important to use the freshly grated Parmesan cheese. I used imported and grated it right before I used it. Sublime! This is on my regular rotation from now on.
All I can say is damn Delicious. I’m on a low-carb diet. And just tantalize my taste buds. Thank you for keeping us all in mind.

Excellent. I browned some panko in butter and put that on top after the parmesan for some extra texture.
Served with spring mix and lemon vinaigrette

This is one of the best cauliflower recipes I’ve ever made. I will say that I used only one head of cauliflower and twice the olive oil and spices. I would eat this as a meal by itself!
I might actually start eating this and only this every night. The first head lasted two nights, barely. I bought two more heads of cauliflower today. I don’t know what it is about the taste, but it’s satisfying my meat AND my bread craving.

Easy peasy and really good. Didn’t have garlic so I used garlic salt instead and put extra Parmesan in! Also sprayed it with spray olive oil. Loved it!
I had this as a main dish for a vegetarian dinner and it was AAMMMAAAZING. I used roasted garlic in the seasoned olive oil and it was delicious! The parmesan right at the end is such a nice touch!
This was very good! Easy to make. The only thing for us was it was a bit salty. So I cut back on the seasoning and did not use salt on my second time making it. Turned out great for our taste buds!
It’s so good there are no words. My tweak. Well I added cherry tomatoes a quarters red onion, whole baby bell as , carrots thick sliced and two zucchini cut into rounds. It was the full meal deal
