Instant Pot Beef Stroganoff
Ingredients
- 2 pounds stew meat, cut into 1-inch cubes
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 onion, diced
- 8 ounces cremini mushrooms, quartered
- 3 sprigs fresh thyme
- 2 tablespoons all-purpose flour
- ¼ cup dry sherry
- 3 cups low sodium beef broth
- 2 teaspoons Worcestershire sauce
- 12 ounces wide egg noodles
- ¾ cup sour cream
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Set a 6-qt Instant Pot® to the high saute setting.
- Season beef with salt and pepper, to taste.
- Heat olive oil; working in two batches, add beef and cook until evenly browned, about 3-4 minutes; set aside.
- Add garlic, onion, mushrooms and thyme. Cook, stirring occasionally, until tender, about 3-4 minutes. Whisk in flour until lightly browned, about 1 minute.
- Stir in dry sherry, scraping any browned bits from the bottom of the pot.
- Stir in beef broth, Worcestershire and beef. Select manual setting; adjust pressure to high, and set time for 12 minutes. When finished cooking, quick-release pressure according to manufacturer’s directions.
- Stir in egg noodles. Select manual setting; adjust pressure to high, and set time for 5 additional minutes. When finished cooking, quick-release pressure according to manufacturer’s directions.
- Stir in sour cream; season with salt and pepper, to taste.
- Serve immediately, garnished with parsley, if desired.

Made this last night. Absolutely fabulous! Husband devoured it. Lots of leftovers too. I used closer to a quart of homemade beef bone broth. Amazing!
I have made this recipe several times now. It is one of my husband’s favorites and even my picky son likes it. The cooking times are perfect for tender meat and perfectly cooked noodles.

I had to omit shrooms and use other pasta, however, everything else was done as in the recipe. Everyone in our house loved it. They cannot wait to have it again.
I had round steak in the freezer and wanted to make something without a tomato-base sauce. Since I love Damn Delicious and she came out on top in a quick Google search for beef stroganoff for the IP, I went with her recipe. I obviously subbed round steak and I sliced them into long strips. I didn’t have sherry but read I could sun vodka, which I did and I used penne pasta since I didn’t have egg noodles. I followed the recipe otherwise and the dish has come out simple and wonderful! I am only curious if I could’ve put rice in, instead of pasta?
Tried this for thr first time and it was delicious!! The meat was so tender and the sauce was so rich and beef. Will definitely be making it again!!
I’ve made this a few times now and the recipe is perfection. I was scared that the noodles would dissolve but they were great.My only warning is that on the quick release, the valve sprays a gravy volcano all over the kitchen. It happened all 3 times I made it. The last time I had a wet tea towel ready to block it.
Has anybody tried using a can of cream of Mushroom soup ?? Every time I cooked it on the stove I used the soup. Any comments ??

Cream of Mushroom is great in this! Reduce the beef broth by the ounces of the can. Also, don’t need to use as much thickener.
I tried it. My husband loved it and I will definitely cook again and again. Instant Pot makes cooking more fun for those of us who have not the cooking thumb. Next time will try the tomato paste and Dijon mustard for more flavor.

This was a delicious mess. As other commenters noted, it is a little bland until you add a generous amount of salt and pepper and a tablespoon of dijon mustard at the end. Then the stroganoff went from good to GREAT. I didn’t have sherry so used marsala. I also used a mix of sirloin tips and shaved beef. I used baby bellas instead of creminis. Finally, I am gluten free so I used gf flour and pasta (brown rice penne). I added one more cup of broth when I put the pasta in because the recipe calls for 12 oz and I had a 16 oz bag. I think without the extra broth there would not be any sauce once the pasta cooks. But, there was still not much sauce once the dish cooled and the IP wayyyyyy overcooked the pasta. And GF brown rice pasta can withstand some overcooking, so I can’t imagine how mushy egg noodles would have been. That said, the mushy pasta beef mess is delicious.
I’ve made this a few times now and always enjoy it. Has anyone tried freezing this? I’m assuming between the sour cream and onions, it’s probably not recommended?
I mix leftover noodles and beef together & freeze that all the time, it’s great when I reheat it.
Made it tonight and it worked out great. Only modification I made was to add some Dijon mustard in the last step, as recommended by other reviewers. Worked out good.
This was great! I followed the video and did not stir the noodles in before pressure cooking them for 5 minutes. I would recommend stirring them in beforehand
After making this recipe 3+ times, we decided the noodles are better when cooked separately. We know it’s a little more work, but turns out much better.
I just made this and it was very good. I followed the ingredients proportions as written. I think it would be good to brown the beef in three batches, rather than two, to make sure the Instant Pot is not crowded. I cooked the onion separately for 4 minutes before adding the mushrooms, thyme and garlic. After I added those last ingredients, I cooked for another 4 minutes. I would change the pressure cooking time for the beef to 15 minutes, and the noodle cooking time to 6 minutes. Other than that, the ingredients and proportions are good. Thank you, my family loved it!
Love this! Can you sub ground meat? Would that change the amount of liquid needed?
The first time we made this both my husband and I thought it lacked flavor, especially with two pounds of meat.
The second time we increased the garlic to four cloves, added about 8 sprigs of thyme vs 3, increased the worcestershire to about 1 1/2 tablespoons, added a tablespoon of tomato paste and a tablespoon of dijon, and increased the sour cream at the end to one cup. It turned out fabulous and was not overly rich or spiced.
I made this and it was wonderful! I did add Dijon as recommended and I did not have sherry so I used red wine.
The Worcester sauce and sherry make this so delicious! I just made it and will make it again! It came out perfect!

I’ve owned my IP for two years, and used it about three times, not including the times we made your Stroganoff. Your recipe is (I hate saying awesome) but it’s AWESOME! I don’t want to jinx myself by saying, it’s easy! (And practically Foolproof.) We made it two days in a row, now we’re making three weeks later.
Here’s a few changes I/we made, and things I always do when I use a pressure cooker:
1) sauté in pan, not the cooker (to each his own, this is my method, I get a better sear in Calphalon pan.);
2) things your readers suggested: add dry or grainy mustard (yes); add 2 tsp of tom paste (yes);
3) always use LOW SODIUM beef stock and might need extra(yes);
4) sherry is a must, but if you don’t have dry vermouth, or vodka can work.
Very yummy and so easy to make with the Insta pot
Not good at following recipes so added more wine more mushrooms more H2O more noodles and used round steak. Next time will use yogurt instead of sour cr. And toss in some cream cheese. But you were right! Damn Delicious!
This recipe is delicious! The only changes I made were, I added 1 tsp of dried mustard to the flour, and also 2 tsps of tomato paste after the flour mixture was added. I didn’t have Sherry on hand, so I used Brandy instead. Otherwise, I followed the instructions, and my family could not get enough! This was REALLY great, thank you for sharing.
I have made this twice now. Perfect every time. I halve the recipe for the 2 of us and use (young) lamb stew meet (not mutton). We like mushrooms a lot, so I just chuck the entire 8oz box in too. Otherwise no other changes to the original recipe. Fabulous one pot dinner when it is 90 -humid -degrees and you don’t really want to heat up the house.

I had some cooked turkey breast I had to get rid of so I used this recipe and just subbed the stew meat. I was hesitant to put the egg noodles in with the sauce and cook it, but I was in a big hurry and tried it. It came out just as I expected…over cooked and soggy. As I was stirring the entire dish after putting in the sour cream, the noodles were breaking and dissolving to pieces. 🙁 The flavor of the dish was great, but I even cut down the broth by 1 cup (I had doubled the entire recipe) because I was afraid it was too watery. So I would DEFINITELY cook the noodles separately next time, but not sure how that would affect the outcome of the stroganoff itself…my guess is that it will be too watery since the noodles inadvertently soak up some of that liquid. I would maybe cut the liquid down by half and then cook the noodles separately and see how it goes from there. Excellent flavor, though…it’s just the consistency could use some help.

Had to substitute dried Thyme, but followed the recipe as printed. I know it was good when my husband asks for seconds!

This beef stroganoff recipe is exactly as described. Amazing! Meat so tender, texture so creamy & flavor delicious! Used a Chuck roast a little over 2 lbs, so it was very meaty. We will be enjoying this again & again!
This was delicious and a big hit in our house! We are gluten-free so we subbed the flour and noodles (Grandpa’s Kitchen GF flour and Barilla GF rotini- cooked for 4, not 5 min). We also subbed the sherry for white wine and sour cream for low-fat plain Greek yogurt. We will definitely make this again! Thank you!

Made your beef stroganoff tonight and everyone was blown away. I made a few minor substitutions based on what I had on hand, using bottom round roast instead of stew meat and was amazed at how tender it came out. And so easy the way you add the noodles at the end. I think this is my new favorite IP recipe!
This was the first recipe made in our new instant pot. It was absolutely delicious! We made it as directed except we used sliced button mushrooms because we couldn’t find cremini. The meat was so tender and the fresh thyme, sherry, and garlic really added to the delicious flavors. Excited to try more of your instant pot recipes! Wow. This was great! Followed the recipe almost exactly, just added 2 bay leaves and a dab of Better Than Bouillon Beef constitute to replace some of the salt. And used canned mushrooms. After reading several reviews I decided to use cut up Chuck roast instead of stew meat, and I hand trimmed all the fat and gristle. I decided to pressure cook the meat for 15 minutes instead of 12 to be sure the meat was tender and oh was it ever! It was melt in your mouth good. The only other slight change was that after cooking the meat and broth, there wasn’t quite enough liquid to cover the 12-oz. of noodles so I added the remainder of the 16-oz box of beef broth to just barely come up to the top of the pasta, I pushed the raw noodles into the broth as much as I could. Pressure cooked that exactly 5 minutes and did an immediate quick release and the noodles were just perfect. Everything else was exactly as the recipe instructed, we loved it. I recommend!
This looks so good. Do I reduce the broth if making my noodles separate? My daughter likes the noodles plain so I cook them on the side.

Eve, I just made this and it was great, but next time I might cook the noodles separately. Only because since the noodles were cooked in the broth, they came out brown – my noodles weren’t the color in the photo. It’s just a visual thing, not a problem with flavor. If I do this, I would make a roux with butter and flour and slowly add the broth, to thicken it up a little before adding the sour cream, then ladle over the noodles.
This was very tasty! But unfortunately the second helpings were too dry. How should I adjust the recipe to avoid that? Thanks for the recipe and advice! I’ll definitely be making this again!
Shay, you can try to add a little bit more beef broth + sour cream to your leftovers until the desired consistency is reached. Hope that helps!
My daughter-in-law and I made the Beef Stroganoff tonight. Prep took us a bit longer because my daughter is still learning to use her InstantPot. The stroganoff was excellent!! Will Definitely be making it again!
Beef Stroganoff tends to be bland for me and my husband. I’ve discovered that 1) beef chuck roast pleases us better than any other cut; and 2) a heaping tablespoon (or more) of quality, grainy Dijon Mustard stirred in right before cooking the sauce finishes cooking adds a little sourness which we like. Thanks for your tasty dishes. Oh, yes, I watched a YouTube video about IPs right after I got mine. The woman suggested covering the IP with a kitchen after the timer goes off, whether venting or not. I’ve done that and use a wooden spoon to push venting lever. Safety first.

Made this last night. Easy assembly. Noodles came out just right. Meat could have cooked a few more minutes for my taste. No problems. Experienced user of pressure cookers. Easy clean up.
I’ve made several of your recipes and have loved them all. Including the dog treat recipes! This was my first Instant Pot recipe and it was a hit! Will make it again for sure!
This was good, but I think I misunderstood about the stew meat. I bought the stew beef that is already cut up. I probably should have gotten a chuck roast and cubed it. The meat was tender, but didn’t have a really good flavor. Also, for some reason mine scorched before it was done and I even added more broth because the recipe didn’t call for two whole cans of broth. I must have done something wrong. I’ll have to try it again and see what happens. Even with all that, it was tasty and my husband couldn’t resist a big seconds. Lol
I did the same thing and agree. The beef wasn’t terribly tasty and I guess I’d counted too much on the power of the pressure cooker to subdue cheap bits of meat into something tender and tasty.
Instead, it was bland and chewy. The rest was fine but it took longer than just making it the “normal way” due to the 2x heat and pressurize process.
Did you season the meat before searing on the sauté setting? I used the cheap stew meat and had to cut up some of the bigger chunks but it came out perfect! I did use my homemade beef bone broth, so that may have helped with the flavor, but the meat was still very tender and tasty!
Taste amazing! My hubby loves it! But it made a huge mess in my kitchen with the Instapot! I must be doing something wrong! When I vented the steam it was exploding everywhere! Anyone else have this problem? and how do I avoid the mess next time?
Yes, that happened to me too! I thought – well, what did I do wrong?! I had splattered beef liquid all over my cabinets!!!
With some research and troubleshooting, it helps to let the Instant Pot sit for a few minutes or so (about 5 minutes should be fine) before doing the quick-release.
I think the flour (thickening agent) should be left out of the pressure cooking part due to gumming up the steam release valve. Just add it after you’re done with pressure cooking.

Just okay. I made this with a bit more mushrooms and 2.67 lbs of stew meat and then gave it 16 minutes to cook as the last time I did stew meat, it was still tough after the time noted in the recipe. This was basically soup. I added a lot of corn starch slurry and it ended up okay, but it wasn’t very flavorful. I think maybe 3 c. of broth is too much. We ate it over riced cauliflower and there was a lot left over after dinner for 3. I ended up dumping some of the gravy after we fished out the other ingredients.
Perfect. Made as directed. Family loved it!

This was indeed damn delicious! I made it in my Mini so cut all the ingredients in half except for the mushrooms. Added 1 minute to the initial time and decreased the pasta time by 1 minute – next time I’ll try 2 minutes. Added pasta to the halfway line and added just enough extra beef broth to cover it. Skipped the parsley and added a cup of peas at the end. Hubby loved it so much he ate 3 servings. Thank you for the fabulous recipe!

This beef stroganoff recipe was delicious! I like mushrooms so doubled the amount, and I think I will add more next time. May even try it with potatoes instead of the noodles at some point. (Yes, I just went all hamburger helper over here…lol)
I would only add 8 ounces of cream cheese to the recipe.
Seriously the best I’ve ever had! I had to substitute red wine for the the sherry and used portabella mushrooms because those were the only ones I could find at the time. I thought this was a bit of work because I am generally a lazy cook but OH SOOOO WORTH IT!!! I will be making it again. I only made it because my daughter-in-law requested it – it is not one of my favorites. Correction – it wasn’t one of my favorites but is now! I don’t like mushrooms but in this dish, even they were good! We scraped the pot clean – no leftovers. THANKS for sharing!!!

Hi, I tried this last night and while it was good, I had problems pressurizing the instantpot when adding the noodles. Though the bottom was overcooked it was still good. Any ideas. I have a cheaper QVC pressure cooker and never have this problem. BTW, I halved the recipe.
Hi Turney! What a bummer! Unfortunately, it’s so hard to say as this recipe has only been tested in a 6-qt Instant Pot using the entire recipe. As always, please use your best judgment and be mindful of varying cooking times when halving or doubling the recipe in a non-Instant Pot pressure cooker.

i’d use a shortbread bottom crust and fill it with a ricotta-based batter mixed with bitter chocolate chips, chopped candied orange peel, and toasted pine nuts. serve with lots of whipped cream flavored with a few splashes of Grand Marnier, Cointreau or whatever orange liqueur fits your fancy. me, i’d go for the Grand Marnier for the richer taste. and i’d call it the Damn Delicious Mediterranean Cheesecake.

That’s a nice recipe and it doesn’t need improvement. However, I’d probably use dried wild mushrooms reconstituted in dry vermouth, and then filter the vermouth and add it to the pot instead of the sherry. All I need now is the pot to try it.

I altered the recipe using Avocado oil to sauté, and since I had it on hand I added a cake of Boursin pepper cheese along with a small amount of sour cream. I found I needed just a bit more sherry as well. Thanks for the recipe – it is delicious!
