Summer Roasted Garlic Butter Corn

Guys, it’s already June! And you know we’ve all been waiting for this month for one reason.
The fresh, sweet and juicy summer corn, of course! It’s the most important summer staple.
And that’s why I go to Walmart for all my summer needs. Their produce is locally grown, restocked daily, so 100% freshness is guaranteed.
That way, I can make the best stinking summer corn ever!
Not to mention, this comes together so quickly and easily!
Simply roast your corn while you effortlessly whip up the most irresistible garlic herb butter with parsley, garlic, lemon zest and your favorite herbs.
Side note: You can use fresh or dry herbs – whichever you have on hand!
This also makes for the easiest serving of all time for all those summer get-togethers and barbecues!
Summer Roasted Garlic Butter Corn
Ingredients
- 6 ears corn, unhusked
- 2 tablespoons chopped fresh parsley leaves
- ½ teaspoon smoked paprika
For the garlic herb butter
- ½ cup unsalted butter, at room temperature
- ¼ cup chopped fresh parsley leaves
- 3 cloves garlic, pressed
- Zest of 1 lemon
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried basil
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- Pinch of cayenne pepper
Instructions
- Preheat oven to 400 degrees F.
- In a medium bowl, combine butter, parsley, garlic, lemon zest, thyme, rosemary, basil, salt, pepper and cayenne pepper, set aside.
- Place corn husks directly on the oven rack and roast until corn is soft, about 35-40 minutes.
- Peel down husks and spread with butter mixture.
- Serve immediately, garnished with parsley and paprika, if desired.

Made this last night with fresh Jersey white corn. Simply amazing & won raves! I will say that I am not a fan of grilling in the husk, because I don’t like removing hot husks after cooking. So I husked the corn, slathered with the herby garlic butter, wrapped in foil and grilled. The herb garlic butter melted throughout, and then I had reserved a small amount for anyone who wanted extra as they ate. Damn delicious!

It is summertime why turn on the oven use the grill
You can certainly use the grill, of course. However, please be mindful that not everyone has access to a grill. We have a few corn recipes that are made on a grill so we are just mixing things up. Enjoy!
