Easy Instant Pot BBQ Ribs

The easiest and quickest BBQ ribs made right in your pressure cooker! So saucy, sticky, and tender, it just falls off-the-bone!
I’ll be completely honest with you.
We had to recipe test these ribs a minimum of 3 times to completely perfect them. So I came home with 2 racks of baby back ribs on 3 separate occasions. In a span of 2 weeks, of course.
That being said, we can really thank Ben for this recipe. He was an avid recipe tester here, thoroughly eating through all the ribs each and every time.
So, thank you, babe. You’ve helped us create the most perfect tender, fall-off-the-bone ribs each and every time in less than one hour.
I’m serious, guys. This is truly the only way to prepare baby back ribs. The IP cuts down the time by more than half, and the quick broil at the very end helps caramelize the sauce so it’s super sticky, and well, just perfect.
Easy Instant Pot BBQ Ribs
Ingredients
- 1 tablespoon brown sugar
- 2 teaspoons kosher salt
- 2 teaspoons onion powder
- 2 teaspoons chili powder
- 2 teaspoons ground mustard
- 1 ½ teaspoons smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon freshly ground black pepper
- ¾ teaspoon ground cumin
- ½ teaspoon cayenne pepper
- 2 2-pound racks baby back pork ribs, trimmed of excess fat, rinsed, and patted dry
- 2 cups chicken stock
- ½ cup apple cider vinegar
- 2 cups barbecue sauce
Instructions
- In a small bowl, combine brown sugar, salt, onion powder, chili powder, mustard, paprika, thyme, oregano, garlic powder, black pepper, cumin and cayenne pepper.
- Remove the membrane from the underside of the ribs, pulling it down the entire length. Season ribs with brown sugar mixture, rubbing in thoroughly on both sides.
- Add chicken stock and apple cider vinegar to a 6-qt Instant Pot®. Place metal trivet into the pot. Place ribs upright on top of the trivet, wrapping in a circle.
- Select manual setting; adjust pressure to high, and set time for 20-25 minutes. When finished cooking, quick-release pressure according to manufacturer’s directions.
- Preheat oven to broil. Line a baking sheet with foil.
- Place ribs, meat side up, in a single layer onto the prepared baking sheet; brush with barbecue sauce.
- Place into oven and broil until barbecue sauce is caramelized and browned, about 4-6 minutes.
- Serve immediately with remaining barbecue sauce.

My husband said it was the best meal ever! The ribs were tender and well-seasoned. I didn’t have smoked paprika, so I used regular and I didn’t have cayenne pepper, so I threw in some red pepper flakes.
This is our go to recipe, we tried it once and game over, no other recipe compares. This recipe is comparable to what you’d get at a ribfest minus the flames it’s delicious.

I followed the instructions to the letter and the Ribs came out really nice, I would not change the grill ever in the world BUT considering how easy they are to make and how little care you need to put into this, I would definitely make this a regular.

The perfect ribs, the rub is awesome… Never ordering ribs from a restaurant again!
I have tried yours and possibly 20+ rib recipes,only two in an instapot, mine and yours. By combining the two I now have the absolute best ribs in the world of pressure cooking. My secret? Use your dry ingredients as a rub the NIGHT BEFORE eliminating thyme and oregano, adding cinnamon and marjoram AFTER rubbing both side of the ribs with Roses Lime Juice (done first and allowed to dry). Lime is a natural meat tenderizer and the sugar in Roses doubles the action and sweetens the meat to taste like dry aged pork. I use natural unbleached sugar to pick up more caramel taste and smoked paprika. For liquid I use pork stock I made from the fat trimmings mixed with liquid smoke and the same smoked chipotle chili powder I added to the dry rub. I will gladly share the measured amounts in my dry rub for anyone who asks. At the end I use my own homemade BBQ sauce which is a complex recipe I will share if asked. I have been using this same BBQ sauce since creating it for Sewart Aderson’s Black Angus Restaurants in 1968.
Good eating in the neighborhood tonight, thanks to you! One last thing. Use charcol to finish or a 650° gas grill for half the time, about one minute on all four sides of each rib, cut and grilled individually and served with heated sauce on the side and spicy garlic bread.

Basically this is a great recipe, however next time I use it I will halve the thyme and cayenne as they seem to fight with each other. Tender, fall off the bone meat.
What if I am cooking 2 baby back ribs that are each 2.7 pounds. Do I increase the cook time?
The best BBQ rib recipe, the ribs are so tender . My family loves them. I cook my ribs on 30 minutes instead of 25.
How would you adjust the timing if using spare ribs?

By far the best ribs we have ever eaten. We’ve cooked ribs in smoker, on grill, and in oven…and they were all good.
But THESE ribs LITERALLY fell off the bone! We wondered about the vinegar (I HATE the taste and smell)…but there was NO taste of it, and it must have had a purpose, because these ribs were perfect!

I used my IP duo evo plus with only one rack of baby back ribs. I loved the flavors of the rub and they were tender but not all falling off the bones. I think next time I will decrease the liquid. or could you use the liquid after taking the ribs out by reducing it to make a sauce? I will make again soon. The dry rub was great, didn’t even need bbq sauce. Eliminate brown sugar to make keto-friendly. I cooked at high-pressure for 25 minutes and let natural release for 20 minutes. The 3 racks were cooked perfectly (yes, “falling off the bone” perfectly). Thanks for sharing this method/recipe, my son loved it, as did I.

Great flavored rub. I cooked 1 rack for 22 minutes, just right time for meat to fall off bone but not all in the pot as I removed the ribs to a foil lined pan. They were dryer than I like. Will try natural release for 10 or so miutes next time as I understand that will draw some of the moisture back into the meat.

I made baby back ribs in my new instant pot duo nova pressure cooker following this recipe. But, I only cooked one slab, not two, since only me and my husband are home for dinner tonight. I wasn’t sure whether I should modify the liquid amount or the cooking time – so I used a little less stock and vinegar and cooked for only 20 minutes. The ribs were cooked, but they were not “falling off the bone” as other reviews have stated. So, lesson learned for next time, will cook one slab for 25 or 30 minutes and will not modify the liquid. Otherwise, the ribs tasted great!

Delicious! I used riblets and put the rub on the night before. I used one cup of cider vinegar and a little liquid smoke, but I think the next time I might go with 1/2 vinegar and 1/2 broth. Cooked for 25 minutes and natural release for 10 minutes.
These ribs were delicious, tender, flavorful. My 6 year old begged for more. I should have cooked 2 racks but will definitely be saving this recipe. I am new to IP cooking. Thank you for sharing this recipe and method. For newbies, be sure to remove as much fat as possible. Some of mine expelled during the broiling process, but I will remove more next time.

Made for my family who were desperate for something grilled but my bbq is broken. Found this recipe on line already had many of the spices to make the rub. Drop off the bone delicious and if you are looking to make something in the summer and not overheat your kitchen this is the ticket.
Have tried this recipe several times and it always turns out delicious, fall-off the bone tender ribs. I added a little bit of Cabernet Sauvignon wine I use specially for cooking. Also added a few small potatoes. Excellent!!!
I’ve made this recipe several times. I’ve found That adding an extra 3-5 minutes of IP cook time helps make the ribs more tender. The ribs have always been delicious and they’re done super fast compared to using my smoker.

Smoke the ribs on a pellet smoker for 1-2 hours. Pull, follow this recipe (take a few mins off, starting at a higher ambient meat temp) finish at max heat on the grill w/sauce…Wow… Tender. Smoky. Delish af.

I had 3lbs of pre-dryrubbed babyback ribs. I have an 8 qt instapot. I put 2 cups chicken broth, 1/2 cup vinegar as they state but didn’t have anymore broth so just added a 1/2 cup water. Pressure cooked for 35 min and 5 under the broiler with bbq sauce. FANTASTIC! THANK YOU.

This is a great recipe. We usually smoke ribs but I wanted them as a weeknight meal and we didn’t have the time. This was a great alternative to the smoke and you really don’t sacrifice flavor. I had mine under pressure for 23 minutes but they were a fairly thick slab of St Louis ribs. I think I’ll add 4-5 minutes the next time I cook since 23 minutes were still a little tougher than I like. All in all, a fantastic recipe and the apple cider vinegar and chicken stock were perfect for adding flavor. I’ll definitely use this recipe again!

These were absolutely excellent, fall-off the bone tender. We made our own barbecue sauce, using the recipe you have on this site for barbecue chicken. And that was exceptional too.

These are the best ribs I have ever tried and I have tried some amazing ribs in my lifetime. I just wanted to say the the person who said to slow release them…. given I have used this recipe 3 times with a quick release…. you do not need to do a natural release. I agree…. typically it is better but I accidentally did that on my third time around and the meat was falling apart too much….
I highly recommend a fast release so the meat stays on the bone but it is SUPER TENDER AND DELICIOUSLY DELICATE
I Add liquid smoke to the broth and I use less cumin and less bbq but other then that… this recipe is perfect straight to the measurements, I just don’t fancy cumin.

Why would you recommend a quick release for meat.
Doing a quick release raises the boiling point and dries out the meat. I suggest at least a ten minute natural release.

Not to get too deep into the Physics, but PV=nrT where decreasing the pressure while holding all other variables constant directly decreases the temperature. Water boils at a lower temperature as the pressure decreases, which is why it takes so long to cook oatmeal on mount Everest. Quick release slows the cooking process by decreasing the temperature.

Delicious! Ribs are an occasional treat around our house because we are staying away from pork and beef but when we feel like it we go off the grid. This recipe is most definitely a keeper. The apple cider vinegar gives it a unique flavor. I prefer to go lo and slo on the Big Green Egg but when it’s cold or raining or when we want a quick fix this recipe makes our day. Thanks.

This is my “go to”recipe for ribs. Perfect every time. I make it exactly like the recipe and it’s delicious!

quick – easy – tastes great. This is the second time I have made this and as far as I’m concerned it’s the only way to do ribs.
Finally an IP rib recipe I’m happy with! Hubs and I loved these. Used the side ribs we already had and gave them 35 minutes in the IP (they need more time than baby back) with NPR. They came out totally fall off the bone tender.
Next time I would cut back on the cayenne and do probably no more than 1/4 of the amount stated as I am not a fan of heat. Also, I doubled the brown sugar and garlic powder, cause they are both great.
Lastly, add 1-2 tsp of liquid smoke into IP liquid mix for extra flavour!
This worked just as smoothly as described, and the meat was tender and delicious. My one suggestion would be to apply barbeque sauce to BOTH sides of the ribs before putting them under the broiler (the last step). The spice rub on the ribs stays pretty intact while they’re in the Instant Pot, and it’s a tiny bit dry and gritty. Not bad, but where the sauce is applied, everything kind of melts together wonderfully under the broiler. The recipe says to put the sauce on top of the ribs, but next time I’ll put it on both sides.
I will also heat some barbeque sauce and serve it in small bowls, so more can be applied at the table, or the ribs can be dipped.
The flavor was great, though, and this is a really quick and easy way to make terrific ribs.

Modified some seasonings, but used the brown sugar and some rib seasoning from Famous Dave’s here in Ohio, some garlic salt, and that’s all and the ribs were delicious. I used to work at a Damon’s restaurant, and our ribs were award winning for a restaurant, this recipe cuts off tons of time and are just as DAMN DELICIOUS!! Thank you for the great recipe.
Holy YUM!!!…those were amazing!!! I dont have grill and so ribs seemed out of my reach until I saw this recipe!!!! So amazing….I had to trade basil for thyme (didnt have any)…and used a little more chili powder as again no cayenne….but so amazing…..I will keep this recipe for another day…..THANK YOU SO MUCH!!!! Super easy and delicious. Husband was a huge fan of the spice rub and compared these to restaurant ribs. Broiled on low, next time will either leave them in a bit longer or use high setting to really thicken the sauce. We’ll definitely make these again!
Made these exactly as instructed. They were Awesome!! My ribs looked significantly larger than pictured, so I cooked 33 mins. My bad!! Bones literally fell out of the slabs. New instant pot user… I’ll learn
I normally smoke ribs for 5 hrs and wanted an quick alternative to get some on the table fast. This recipe by far exceeded my expectations. I added a little liquid smoke to the broth and they were out of world. Will definitely make them again.
I usually make ribs in an electric smoker using the 3-2-1 method ( 6 hours total smoking time). They turn out pretty good, above average tasting and texture, but not mind-blowing ( if such a thing exists for ribs). But it’s a lengthy process and involves a lot of prep and clean up.
Enter the instant pot, I found this recipe / process to be pretty spot-on , the ribs came out as good as the ones that I typically make in an electric smoker. I was actually kind of surprised , the 25 mins for 4 lbs of ribs was good enough ( I did slow-release pressure for 10 minutes). I doubt I will ever spend 6 hours on the smoker to make ribs again.
I’m not sure I could change anything about this recipe to make it better? Maybe there is some magic in seasoning the ribs and letting them sit in the fridge overnight, definitely a question for the scholars.
Is that 4 lbs of ribs for the recipe? It says 2(2 pound)Does that mean 2 X 2 Lb racks?
Love this recipe. I increased to 30 mins pressure cook because my ribs were much thicker than the photo (Flintstones size racks, 7.25 lbs total for 2 racks). The ribs were melt in your mouth delicious, tender and juicy. Removing the membranes made such a difference. The other advantage of the pressure cooker is that huge amounts of excess fat ran down into the cooking water. This gave the ribs a much more pleasing texture, no more big pockets of fatty bites to work around, yet still silky soft and juicy meat. Great recipe!
Had a 3 lb slab and it didn’t make it to “fall off the bone” but they were amazing!
This is such a great recipe! I had never done ribs in the Instant Pot but I will from now on. So easy and so delicious!
Used St Louis ribs and Sweet Rub of Mine. Lowered cook time to 20 minutes 10 minutes depressure.
Peach glaze sauce under broiler for 6 minutes and they were delicious and fall off the bone tender.
Will definitely do these again.

Insanely delicious! And so easy! Melt off the bone! Definitely will be doing this again! May even have to retire the smoker… no…. not really. I made one rack of 4 pounds of ribs in an 8 quart instant pot.

I have tried a bunch of Instapot rib recipes, and this one is my favorite by far! After trying recipes from various sites on the Internet, these pressure cooker ribs have made my recipe book to “keep.” My family loves the flavor of the dry rub. Yummy! I won’t be searching the Internet for a quick rib recipes anymore.

Tried this recipe for my first experience cooking with my new instapot. It was so good and I also shared with a buddy! I followed your recipe and did not add anything extra. The ribs had a great flavor and just fell off the bones. I also used sticky fingers bbq sweet sauce and broiled them in the Oven to finish. Thank you for the recipe.
Thank you!! I made the run but eliminated the sodium because of my diet. I used 2” slices of pork butt instead of ribs. I put the rub on and let it sit in the fridge for a couple hours (too much time on my hands!) and I cut the fluid down to 1 cup. Made my own BBQ sauce because of the salt. Came out wonderfully! Thank you for helping me learn how to use an IP and the delicious recipe.
Ingredients are PERFECT. Next time I’ll cook them 30 minutes in my Instant Pot. I did cover them with BBQ sauce and baked them for 20 minutes in my oven at 415 degrees. They were delicious!
I have not had very much luck with recipes from the web but this Rib Recipe was out of this world. My family was very surprised at the taste of the ribs but what actually surprise them was that I made them . Thank you so much!

I’m trying this on Father’s Day. My question is that I’ve checked lots of recipes and they go from 20 minutes to 45 minutes of cook time. How do I know which one to go with? I would like to get it right the first time.
With thorough recipe testing using 2 (2-pound) racks baby back pork ribs, we found that 20-25 minutes was truly best. But you can always add additional time as needed to suit your needs/preferences.

My experience is that 2.5 cups liquid is about a 1.5C too much if you don’t want the ribs to be swimming in it. If at all possible, I’d let the rub be on the meat for a few hours (even overnight) if you want to taste the spices later. I marinated the ribs for about 24hrs, and used a cup of apple cider vinegar. 20 min on high pressure/QR and the meat was already pulling off the bones. Don’t get too crazy trimming fat, it’ll mostly render off and it adds flavor. Pulled the ribs out of the pot, painted with Stubbs original and put in a 425 oven for about 12 min which allowed the sauce to reduce and thicken on the ribs. Some call for using the broiler, but mine doesn’t cover that evenly.
This was the first thing I made in my Instant Pot. The ribs were perfectly cooked and absolutely delicious. I have the Instant Pot Ultra and needed a little help figuring out what buttons to press but the end result was delicious.

I followed this exactly and my ribs did not fall off the bone I had to put them in the oven for 4 more hours on low and they still didn’t fall off the bone they had a good flavor but I will not be doing this again! It was a waste of time and money.

No, the timing should stay relatively the same. It would just take a little longer for it to come to pressure.
Is it necessary to submerge the ribs totally in the broth ? Or turn the ribs half way in the cooking? I m concerned the ribs not evenly soaked in the chicken cider mixture.
The ribs are actually not soaked in the mixture. They should be standing upright on the trivet.
Do you think short ribs could be used instead of baby back ribs?

I don’t have a Pressure Cooker of any kind and was wondering if this receipt can be used in a Slow Cooker. I usually boil my ribs first and then season them heavily. I then let them rest with the seasoning for an hour or two and next into the broiler on both sides. Everyone loves my ribs but I usually do 5 or 6 racks and it takes me hours to boil the ribs til their just about ready to fall off the bone. Help..

Hi Rick! All of my Instant Pot recipes have only been tested in said Instant Pot so I cannot answer with certainty. As always, please use your best judgment when using a standard non-IP pressure cooker.
I just rec’d my IP so I’m not that familiar cooking with it. I don’t see the trivet (that you reference in yr BBQ ribs recipe) placement in the picture. How do I use it for the ribs? Perhaps another picture showing that? Love your website!

You don’t understand her question. She’s asking where it should be placed since you can’t see it in the picture of your ribs in the IP. I mean, it’s a pretty silly question considering the only place a trivet ever goes is on the bottom but whatever lol.
On the bottom of the IP. There is nowhere else you can put it. Just open the pot. Put the trivet inside and put your ribs on it. Easy peasy.
