Easy Burrito Bowls

I finally made a burrito bowl at home. Well, I guess it’s more of a burrito plate. But still. Burrito bowl, burrito plate – I’m in love.
With fresh veggies and just 10 min prep with a creamy chipotle drizzle, what’s not to love?
Plus, this is completely customizable to add in your favorite proteins. Or if you’re like me, you can keep it vegetarian. There’s plenty of goodies to go around here!
And if you really want to go that extra step and make these even healthier, you can use quinoa in place of the rice.
You’ll get that extra kick of protein, and be full for hours on end! So who still wants Chipotle for dinner tonight?
Easy Burrito Bowls
Ingredients
- 1 cup uncooked rice
- 1 cup salsa, homemade or store-bought
- 3 cups chopped Romaine lettuce
- 1 15.25-ounce can whole kernel corn, drained
- 1 15-ounce black beans, drained and rinsed
- 2 Roma tomatoes, diced
- 1 avocado, halved, seeded, peeled and diced
- 2 tablespoons chopped fresh cilantro leaves
For the chipotle cream sauce
- 1 cup sour cream
- 1 tablespoon chipotle paste*
- 1 clove garlic, pressed
- Juice of 1 lime
- ¼ teaspoon salt, or more, to taste
Instructions
- To make the chipotle cream sauce, whisk together sour cream, chipotle paste, garlic, lime juice and salt; set aside.
- In a large saucepan of 1 1/2 cups water, cook rice according to package instructions; let cool and stir in salsa; set aside.
- To assemble the bowls, divide rice mixture into serving bowls; top with lettuce, corn, black beans, tomatoes, avocado and cilantro.
- Serve immediately, drizzled with chipotle cream sauce.

Pro: Quick and easy, pretty healthy, decent taste (needs adjusting), can add some chicken
Con: Recipe makes too much sauce so I would half the recipe. Sauce has too much chipotle heat and needs more flavor.
I had to adjust the sauce because the chipotle was too hot, so added more sour cream, garlic, creole seasoning, smoked paprika. I could not find chipotle paste, so used chipotle in adobe sauce, so maybe this is why is was a bit hotter.
Would make again with adjustments to the sauce.

Love this as an easy, meatless and delicious meal! It’s great that it makes 6 servings, that way we already have lunch and dinner for the next night prepared. Super delicious, extraordinarily cost effective. Accidentally thought I had rice at home so had to sub for couscous which, turns out, I think I prefer?! Thanks as always!
This is the simpliest, yet most delicious recipe you can make in 30 minutes! I used brown rice and didn’t add the salsa. I bought a chipotle-lime mayo and sqeezed a little lime juice over the bowl before eating. OH MY GOD! SOOOO GOOD. YES! BETTER than Chipotle. Save $10 and head to the grocery to make your own burrito bowl.
Our family loves this recipe! We have made it with different meats each time and they always come out great. I believe it’s because of the chipotle sour cream sauce! (Although we use lemons because we don’t have limes where I live, but it still tastes amazing!) We now use it on many other things! Thank you so much for this recipe!!!
Super easy and deelish!
Tasted great. I just don’t understand how you got 6 servings out of these measurements, unless you served this as a side dish. We barely got 3 servings as a main dish. And the Chipotle Cream Sauce was delicious, but made way too much to use for just this recipe. Now I have leftover cream sauce in the fridge. Next time, I’ll cut those measurements back by half or more.
This recipe was phenomenal!!! So much healthier than a burrito bowl from Chipotle or El Diablo and it tastes the same! I cooked my chicken and mushrooms in hot sauce for some heat and it was amazing. The creamy chipotle sauce is phenomenal! I’ve been trying to find a dupe for chipotle ranch sauce at El Diablo and this is so close, so I’m beyond happy I found this.
This recipe is awesome. Love the chipotle sour cream sauce. I think it would be even better if the dish included a cilantro lime rice recipe.
Awesome recipe! I used chipotle seasoning to season the cream sauce and used Greek yogurt instead of sour cream. Sooooo good! I also used brown rice, that’s my fav; and spinach instead of romaine. Thank you for this recipe!!
SO GOOD! im a teen so not much cooking experience but this was so easy to make. i did do quite a lot of substitutions, and i cooked the veggies except for the lettuce. nevertheless it came out so yummy!
That was absolutely delicious! I love the chipotle sauce! I used the chipotle peppers in adobe sauce and pureed it first before adding it to the sour cream. I can’t wait to try more recipes from this site!
This was a hit with my family! Even my pickier eaters went back for seconds. And so easy and quick to make. I used chipotle seasoning for the sauce because that’s what I had on hand and it was delicious! I will put this one in my regular dinner and food prep rotation, for sure!

Great recipe….with such simple nutritious food, the dressing is the star. And this one does not disappoint. Its perfect on it and just adds that zing to it. I use light sour cream and when I didn’t have lime once I used lemon juice….
I also mix it up with slow cooked pork or lamb (that I buy from our supermarket pre slow cooked), fried halloumi, cucumber, baby spinach and throw some wild rice thru the rice.
My whole family love this and with a vegetarian and 2 teen carnivores in the house I love that I can make 1 meal and they choose ingredients to suit. And theres always easy left overs for lunch the next day. Perfect meal I reckon.
We like spicy food, so I added extra chipotle in adobo. This was a big hit and I’ll definitely make again.
I’ve never ever left a review before, but I just had to!! This was absolutely amazing!!! I added beef because we love meat and it just made it that much better!!!
We couldn’t find any of the chipotle paste, so I used a can of crushed tomatoes and green chilies and it was great!! Definitely adding it to our rotation!
