Lobster Grilled Cheese
Make your favorite grilled cheese right at home without skimping on the lobster meat. It’s so stinking easy, and cheaper too!

And you know you can’t have just one type of cheese here.
You need two.
I mean, you can really have three. Or four.
But let’s make this easy on everyone.
And if you’re worried about the lobster meat, don’t be.
You don’t need an entire lobster to cook at home.
Most local grocery stores sell already cooked lobster meat in their seafood department.
Just call ahead and ask before making the trek.
That way, you can make this right at home.
In your waffle maker, of course.
You know me.
And then stuff in as much lobster as you possibly can.
Lobster skimping is simply not allowed.
Lobster Grilled Cheese
Ingredients
- 8 slices sourdough bread
- 1 pound cooked lobster meat, chopped
- ¾ cup shredded cheddar cheese
- ¾ cup shredded gouda cheese
- 2 tablespoons chopped fresh chives
For the sauce
- ¼ cup mayonnaise
- 2 tablespoons minced chipotle peppers in adobo sauce
- 1 tablespoon lime juice
- 2 cloves garlic, minced
Instructions
- Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
- In a small bowl, whisk together mayonnaise, chipotle peppers, lime juice and garlic; set aside.
- Working in batches, place bread slices into the waffle iron. Top with lobster meat, cheeses, mayonnaise mixture and remaining bread slices.
- Close gently and cook until golden brown and crisp, about 3-4 minutes.
- Serve immediately, garnished with chives, if desired.

Did it on a panini press, and it worked great. I’ve done grilled cheese on our waffle maker – which is one that has to be locked down tightly – and it never works well, it presses all the cheese out. So for this I went with the panini press, and it worked great! Awesome recipe!
This recipe is amazing! I found the easiest way to buy the lobster is from MaineLobsterDirect.com where they even have the lobster already picked for you! The lobster is so fresh and good and it is amazing in this grill cheese!
Oh, be still my beating heart. I have never thought of making grilled cheese sandwiches with waffles and now I’m obsessed with doing so.
