Hearty, healthy and light snack boxes for the entire week! With homemade Greek yogurt tuna salad, egg, almonds, cucumber and apple!
Happy almost 4th of July!
I should be munching on some bacon wrapped tater tots…
Maybe some of this beef queso dip…
Or this spinach and artichoke dip pizza.
But, I’ll be good.
At least for now.
But only because I’ll be inhaling all of the above tomorrow.
So I’ll be prepped for the week ahead with my Greek yogurt tuna salad.
It has everything you need in one convenient, portable box.
Cucumber slices, apple slices, a hard boiled egg and some almonds.
Keeping you full and healthy throughout the afternoon.

Tuna Salad Meal Prep
Ingredients
- 2 5-ounce cans tuna in water, drained and flaked
- ½ cup nonfat Greek yogurt
- ¼ cup diced celery
- ¼ cup diced red onion
- 1 tablespoon Dijon mustard
- 1 tablespoon sweet pickle relish, optional
- 1 teaspoon freshly squeezed lemon juice, or more, to taste
- ¼ teaspoon garlic powder
- Kosher salt and freshly ground black pepper, to taste
- 2 large eggs
- 4 Bibb lettuce leaves
- ½ cup raw almonds
- 1 cucumber, sliced
- 1 Braeburn apple, sliced
Instructions
- In a medium bowl, combine tuna, Greek yogurt, celery, onion, Dijon, relish, lemon juice and garlic powder; season with salt and pepper, to taste.
- Place eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil and cook for 1 minute. Cover eggs with a tight-fitting lid and remove from heat; set aside for 8-10 minutes. Drain well and let cool before peeling and halving.
- Place lettuce leaves into meal prep containers. Top with tuna mixture, eggs, almonds, cucumber and apple.

I wasn’t a fan of the mustard but I think next time, I’ll substitute it with Mayo instead
Great, can I make this recepy in a mason jar. In mason jars you can layer the ingredients with the tuna mixture on the bottom, then cucombers, apples, nuts..ect and lettuce in top. Im going to try it today.

I actually don’t have a preferred brand – I typically pick up what’s available at my grocery store.
I agree with the comments about the almonds getting mushy and the flavors melding and this not being as good on day 2 or 3 – BUT, have you seen the meal prep containers with 3 separate compartments? These work great and the bread, almonds, etc. can go in a little baggie. Works great.
Is it 4 servings size per container or 1 serving in each container, I’m a little confused?

A few days at least but as I am not an expert on food safety, I cannot really say with certainty – sorry, Michelle! Methods for optimal food storage and shelf life should be based on good judgment and what you are personally comfortable with.
Is the calories for the whole meal or just the tuna?

Yes, you can really substitute any other fruit/vegetable of your choice!

Love the meal prep containers. The more shallow bowl works much better than the tupperware my husband is currently toting into work.

What is the serving size for the scoops of the tuna salad and what is the nutritional value for this meal prep???
The nutritional information is listed below the recipe. A single serving size is about 1 scoop (using a large ice cream scoop).
Looks fabulous, as all these make-aheads do. But I have a question. Do you really put them all together in their little boxes ahead of time? I ask because many years ago when I packed my lunch for work, I found that if you put everything together like this, it all starts to taste alike — the apples will taste like egg, the almonds like tuna, those almonds will be rubbery & soft from all the moisture, esp from the cucumber. I’ve seen other “box lunches” on your site made with breads/crackers packed in with moisture-laden fruits & veg & have wondered the same thing: doesn’t everything just taste like one swampy mess, especially after sitting for days in the fridge? I can see prepping everything ahead of time **in separate containers** & then making the box lunch the day you’re going to eat it — but even then I’d put everything in its own mini-container or baggie to keep the dry things from sucking up all the moisture from the damp things. What am I missing here? [BTW, your recipes are the best anywhere!]

I get the snack size baggies and put one each in a bag. For my apples I cut up put in a sandwich bag and squirt some lemon juice on top my apples while in the bag. No brown apples and he lemons give them a great flavor, don’t put to much it will be sour apples (only because I did, they were good though).
If you put crackers in box with cheese, I guarantee they will be soggy within a day or two. I’ve tried it. My guess is that you’re not actually eating these four days in a row and just make a batch for your blog.
I actually did have this for the entire work week without any issues! Also, there are no crackers in this particular box but they can always be stored in a small snack-size Ziploc bag to avoid any type of sogginess.
I definitely have this problem when I tried using a metal bento style box. Whenever I tried to pack fresh fruit/veg with crackers or popcorn, it’d be a soggy mess. Even cheese slices would go gross and slimy. And I was only making it the night before and eating it for lunch at work the next day! Can’t imagine what it’d be like 4-5 days later. I do cut up apples and put a little bit in 2-3 containers for work snacks. I squirt with lemon juice. I kind of like the extra sourness the lemon gives the apples.
Try mason jars, putting the wet stuff on the bottom then anything that doesn’t mind getting wet such as cucumbers. Then everything else but almonds and lettuce on top, it will stay fresh for 5 days.
I love the idea of your meal prep bowls. However, I’m wondering what you do to the apple slices to keep them from turning brown so they still look yummy on the fourth day.
