Turkey Taco Salad Meal Prep

A much HEALTHIER take on Taco Tuesdays, except you are meal prepped for the entire week! Less calories and cheaper too!
If you’re a fan of tacos (and why wouldn’t you be?), you’re in for a real treat here.
Because we have a turkey taco salad to-go kit here.
It’s a healthier take on taco Tuesdays.
Except you’re prepped and set for skinny Taco Monday, Tuesday, Wednesday, Thursday and Friday.
What’s so great about this meal prep is that your greens and premium toppings are separated into their own little containers.
So we have no sogginess, no mush, no nothing.
Just a fresh taco salad literally ready at your fingertips!
And there’s no dressing needed here either.
Between the shredded Mexican blend cheese, pico de gallo, Greek yogurt, and lime juice, you have plenty of goods here.
If, however, you are feeling a little bit on the wild side, throw on some guacamole or avocado slices right before serving.
Turkey Taco Salad Meal Prep
Ingredients
- 1 tablespoon olive oil
- 1 ½ pounds ground turkey*
- 1 1.25-ounce package taco seasoning
- 6 cups shredded romaine lettuce
- ½ cup pico de gallo, homemade or store-bought
- 6 tablespoons Greek yogurt
- 6 tablespoons shredded Mexican blend cheese
- 1 lime, cut into wedges
Instructions
- Heat olive oil in a large stockpot or Dutch oven over medium high heat. Add ground turkey and cook until the turkey has browned, about 3-5 minutes, making sure to crumble the turkey as it cooks; stir in taco seasoning. Drain excess fat.
- Place romaine lettuce into sandwich bags.
- Place pico de gallo, Greek yogurt and cheese into 2-ounce jello shot cups with lids..
- Place turkey, romaine lettuce, pico de gallo, Greek yogurt, cheese and lime into meal prep containers.

Love this recipe! It’s easy, quick, and tastes great. Very versatile, it’s going into my lunch meal prep rotation for sure.

Great idea for easy meal prep. For those complaining about plastic—I re-use my medicine bottles for salad dressings and other small amounts of foods for meal prep. I also use smaller glass containers (baby food jars, small jelly jars, jseasoning/broth jars, etc.) as they are very reusable.
What a great idea to repurpose/reuse medicine bottles for dressing in your packed salads!! I’m going to do that and share the idea with others 🙂
OK, love the idea, will be making ASAP. RE containers, Japanese bento boxes have these little sections built in. My other option, all the little condiment jars you get in the kids lunch container section of the store. I brought the a pack of the prep containers shown here 2 years ago, still using them. Cheap people make good recyclers!

I bought these for condiments when packing to go lunches. They do not have lids, but work well if you kind of push them down in the meat mixture and don’t tip the large container over. They go right in the dishwasher and stack in the cabinet easily.

Full disclosure – I haven’t made this but I LOVE Love everything I have made from this site. However, I would get bored with the same thing every day. It would be awesome to get a few friends together and share your preps – each person doing a different prep and sharing with a few other friends so you have a lovely variety all week.
So my plan is to look up a few different prep recipes and do a share!
You could also cut the recipe in half and only make this for three days and alternate with something else. You could use the other half of the turkey to make Chinese lettuce wraps or Chinese fried rice bowls or a lot of other things. Or freeze part of the turkey taco meat and have something entirely different on alternating days. There are lots of ways to meal prep.
My husband works long hours and wanted to send him with something other than a sandwich. This was easy to prepare on a Sunday, loved the little container idea. He really enjoyed these and they were convenient to pack up each night. Will be making them again!

To the folks commenting about plastic – no one is forcing anyone to use it if they want to use another type of container! That’s awfully petty. I would thing that the black photographs better than a shiny surface. That is like if I said she should show every other kind of meat because I don’t like turkey and every other kind of vegetarian option for me without me having to think for myself. She is working very hard to show us a lot of great recipes that are photographed beautifully. We can always adapt the details!!! I appreciate the recipes!

Kelly, you would have to divide the full amount by 6 servings to get the ounces of meat per container. Hope that helps!
This was so delicious and easy! Especially because I used the Trader Joe’s taco seasoning and their mild pico de gallo salsa. I’m not a fan of yogurt so I substituted it with sour cream. I had this for lunch two weeks in a row!
This is a super easy way to prep a week’s worth of lunches! It’s simple and tasty. I used one pound of ground turkey and divided it into four lunch kits. Thank you!

I was just going to leave the same comment – looks delish, but so much plastic! Never mind the meal prep containers, what about the individual containers for the sour cream, etc. and the ziplock bag? It would be amazing if you demonstrated the same meal prep method using fewer single-use plastic items.
Everything she used is reusable. Plastics bags can be turned inside out and washed and the plastic cups are washable as well.
**Jordan… I order them on Amazon, 100 in a pack for I believe around $6, they are just like you get a carryout… small, tight lid, perfect! They are throw aways like restaurants too.
JC – you are missing the point of Jordan’s post. She is looking for an alternative to one-use plastics that get tossed out and destroy our environment.
Jordan – I’m with you. It would be great to see how this salad could be packed without the excess use of plastic.
Turn it into a mason jar salad. Just layer all the ingredients with the lettuce at the top so it doesn’t go soggy and you are good to go. No plastic needed!
I discovered the sample containers that my local grocery store uses are perfect (and just like in the picture, cover and container). I bring home, wash, and use multiple times to use to bring to work.
Why are there always those that need to blow your horn. If it’s offensive to you then use your brain to use what is to your liking, rather then make such a big deal of her ideas to just make a unneeded comment to make a statement to your personal opinions. Such ones always need to let others know unnecessary comments. Environmental issues are important but she is not saying you don’t have a choice, she giving what you can use to have a prep meal that is easy and kept fresh
i was so sick of eating the same old salad for lunch. I needed something healthy low carb for lunch so
I decided to prep these yesterday for the week. Wow, it was delicious! It was filling and so so good!

Aack! So much plastic rubbish. Please consider using reusable plastic or metal ware. A delicious recipe for sure AND we can be good stewards of the earth and set that example for others. Best to you and safe travels!

I like your presentation. I use the same containers. I hate to have my food mixed together before I’m ready to eat it. Because it looks so professional makes me want to eat it even more. I do reuse them also. Please don’t change a thing.
Just made these, such a great/easy idea for lunches during the week. One side note, I bought the containers linked and they do not close set up the way they are photographed. I had to put the little containers of condiments in a ziplock and just have the turkey and lettuce in the big container.

Thank you for the inspiration. I made this with tofu instead of the meat. I also used rices cauliflower, black beans and toppings. This is my first official try of meal prepping for the new year to try to get healthier. Thanks!!
Did your shredded lettuce stay fresh through the week? I find mine gets soggy after just 2 days typically.
It should stay fresh for a few days!
I store mine with some water. A little extra work after to shake it out before serving but saves money and the needed crunch!
Put a paper towel in with your lettuce to keep it from getting soggy so it will stay fresh longer.
