White Zucchini Corn Pizza
Use up all your lingering zucchini in the most amazing white pizza! With corn kernels, dollops of ricotta and mozzarella cheese!
Okay, guys, real talk here. This may be classified as a summer pizza but I’m not waiting 3 seasons for this pizza. I’m just not.
Because this white pizza is too good to wait on. The zucchini is perfectly crisp-tender, lightly seasoned with Italian seasoning (but you can use your own blend of spices/herbs here). Plus, dollops of ricotta and fresh mozzarella slices pairs perfectly with these toppings.
Also, I’d much rather have a white pizza than a red.
White Zucchini Corn Pizza
Ingredients
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 zucchini, cut into 1/4-inch thick rounds
- ½ cup corn kernels, frozen, canned or roasted
- 1 teaspoon Italian seasoning
- Kosher salt and freshly ground black pepper, to taste
- ¼ cup yellow cornmeal
- 1 (13.8-ounce) can refrigerated classic pizza crust
- 8 (1-ounce) slices fresh mozzarella cheese
- 1 cup ricotta cheese
- 2 tablespoons chopped fresh chives
- ¼ teaspoon crushed red pepper flakes
Instructions
- Preheat oven to 450 degrees F. Lightly coat a baking sheet or pizza pan with olive oil.
- Melt butter in a large skillet over medium heat. Add garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes.
- Stir in zucchini, corn and Italian seasoning. Cook, stirring occasionally, until zucchini are tender, about 3-4 minutes; season with salt and pepper, to taste.
- Working on a surface that has been sprinkled with cornmeal, roll out the pizza into a 12-inch-diameter round. Transfer to prepared baking sheet or pizza pan.
- Top with mozzarella, dollops of ricotta and zucchini mixture.
- Place into oven and bake for 15-20 minutes, or until the crust is golden brown and the cheeses have melted.
- Serve immediately, garnished with chives and red pepper flakes, if desired.

This is simple and delicious. I tweaked it to meet our taste, making a sourdough pizza crust and subbing peppers for zucchini (my husband hates it). We also added fresh basil to the garnish of chives and red pepper flakes.
Par for the course, I’ve only ever made 1 Chungah recipe that I didn’t love. I’m a mom to 6 and I’ve had to learn to cook a bit more efficiently and her recipes are always quite tasty, meet my standards for whole foods, and they never involve 4 hours in the kitchen. Thank you for providing culinary inspiration and humor.
This was so delicious! I added fresh chopped parsley and a bit of grated parmesan cheese to the ricotta. I also sliced some onion and sautéed it with the other veggies. I will definitely make this again!
I took A LOT of liberties to work with what I had here at home and it was still so good!
I made them on naan bread and didn’t have any ricotta, so I just brushed the naan with olive oil, and tossed some frozen corn kernels in with the zucchini. Easy and delicious!
This was amazingly good. I used a packaged pizza crust and shredded mozzarella along with the ricotta and fresh mozzarella, farm fresh frozen corn, and cilantro on top. So delicious! Prep 10 minutes and 15 to cook. Everyone raved including the kids.
That so great! Thank you for sharing with us!
I like your blog and it is so wonderful. I am a writer and newcomer in my career. For the research work, I have to read so much blog. I hope that your blog will really enhance my career. Thank you so much for sharing me. Visit: https://www.triumphessays.com/
Wow, I can’t wait to try this recipe. Recipes that should be tried for the daytime certainly.
My DD16 said we should try this as tonight’s dinner. It did not sound appetizing to me in the least. However, I am up for trying new things, especially if it gets me help in the kitchen. This turned out to be fantastic!! To simplify for us and cut down on the “bread” factor and bake time, we made mini pizzas using pita bread rounds. The blend of vegetables with ricotta and seasoning worked out perfectly. We love cilantro here in central Florida, so that had to go on top, but this would have been great without it. Thanks for another one for the “keep” file!
Omg… I have something similar to this at a restaurant. It was so amazing, very unique but amazing. I can’t wait to try this recipe thank you !
Would a packaged pizza crust work? Like Boli? etc..
Yes!
