So to kick off this giveaway week, I am sharing a classic minestrone soup. You’ll be shocked to see how quickly this comes together in the IP. And don’t worry – this recipe is absolutely fool-proof so if you need a starter IP recipe, this is it.
The soup comes out amazingly hearty, chunky and loaded with so many veggies. But the real secret ingredient here is the Parmesan rind! That and the crusty bread you’ll serve with this.

Instant Pot Minestrone Soup
Ingredients
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 stalks celery, diced
- 1 ½ teaspoons dried basil
- 1 teaspoon dried oregano
- ½ teaspoon fennel seed
- 6 cups low sodium chicken broth
- 1 28-ounce can diced tomatoes
- 1 16-ounce can kidney beans, drained and rinsed
- 1 zucchini, chopped
- 1 3-inch Parmesan rind
- 1 bay leaf
- 1 bunch kale, stems removed and leaves chopped
- 2 teaspoons red wine vinegar
- Kosher salt and freshly ground black pepper, to taste
- ⅓ cup freshly grated Parmesan
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Set a 6-qt Instant Pot® to the high saute setting. Add olive oil, garlic, onion, carrots and celery. Cook, stirring occasionally, until tender, about 2-3 minutes. Stir in basil, oregano and fennel seed until fragrant, about 1 minute.
- Stir in chicken stock, diced tomatoes, kidney beans, zucchini, Parmesan rind and bay leaf. Select manual setting; adjust pressure to high, and set time for 5 minutes. When finished cooking, quick-release pressure according to manufacturer’s directions.
- Stir in kale until wilted, about 2 minutes. Stir in red wine vinegar; season with salt and pepper, to taste.
- Serve immediately, garnished with Parmesan and parsley, if desired.

My go to soup when I’m short on time but need something delicious! Do not skip the Parmesan rind. The flavor it adds is amazing!
It is good but the flavors are a little muted (and I didn’t even use all 6 quarts the recipe called for). I’m sure the flavors will pop tomorrow, but if you want more popping the night of, you could probably double the seasonings. Family loved it though!
Made this tonight for my family and friends. Followed directions as written. Just added a cup of gluten free pasta to it at end and let the pasta cook for a few minutes. Best soup ever! This will definitely be a repeat!

This soup was so easy and delicious. I added some frozen Italian meatballs and served it with oven toasted garlic bread. My boys loved it. Will definitely add this recipe to my favorite soup list!

This was awesome and so easy! Don’t forget the last step of adding s+p to taste. That’s the only thing I can think of maybe happened to the people who said this was tasteless. Everything really pops after a tsp of salt!

What adjustments would need to be made if I wanted to add pasta?
This is my all-time favorite InstantPot recipe. I rig it slightly to accommodate taste like 2T of tomato paste in the veggies before adding broth and also 1/4 tsp of hot pepper flakes. My husband likes white beans so we opt those in for the kidney beans but the rest is just PERFECT. I could eat this broth all day long. SO SO very good.

I love it!! Unfortunately I only have the three quart. I have medical issues, but cook for all of my family when I’m able. It’s just not big enough. I get by, but I would love a bigger one. I have been a cook all my life and haven’t used the stove much lately. I’ve never been a big fan of kitchen “gadgets”. But the Instant Pot is not a gadget… I love it.!!!
Great receipe, I added sliced mushrooms and roasted then skinned and seeded red bell peppers & jalapenos . Every time I use my instant pot I’m amazed how flavorful it comes out in such a quick time. Tasted like it stewed all day. This actually was my first time making a soup in the instant pot. We have tried quite a few of your recipes and they never disappoint.
Can you make this recipe in a slow cooker? I what would be the time adjustment? I went to but everything I didn’t have in the kitchen for this recipe and have been so excited to try it, but I realized I don’t have a pressure cooker… Still want to try it and I just really don’t want to mess it up. Help please!

My husband and I love this soup recipe! It was awesome for dinner and really delicious for lunch! I added cubed butternut squash since I have so many in my basement from last year’s garden. The squash really added to the bulk and flavor of the soup.
Added chicken bouillon + cauliflower I had on hand. And added mini Italian meatballs. Turned out really tasty.
I actually have a question more than an actual review. What would be a good sub for the beans? i need a cheap protein that, to my taste buds, lacks the waxy skin that pops to a mushy ick. Because the rest of this recipes ingredients sound like it will be a whole caboodle of yum! Help!
You could try Chick Peas. They stay a bit firmer than beans. While still being high in protein and fiber.
Skip the beans and add potatoes instead.
It was good but lacked flavor. We added a small can of tomato paste and it was so much better!
I made this last night and as soon as it was done I had two bowls (I skipped eating before to go ahead and cook this out of excitement). I wanted to get more but was deliciously full! I ended up having to use 3 different tupperware to hold the leftovers! I’ll be eating this for lunch at work all week. 🙂

This was so good! I was trying to used up some random vegetables in my fridge and came across this recipe. I had everything on the list. I also had a lonely green bell pepper, so I threw that in for good measure. The Parmesan rind made this a lot more flavorful than other minestrone soups I’ve made, which frankly were kind of boring. This is a keeper!
Another winner! I pretty much 1.5x’d the recipe and cooked it in the 8 qt (I have both). The only ingredient I didn’t have already on hand was the kale, so ran out to get that. Also, used half low sodium and half reduced sodium chicken broth, and then added a good amount of pepper. Glad to have made a lot, because we are going to want leftovers.
Also, I actually diced everything as it said, and then looked at the pictures on the website after the fact–those veggies aren’t diced! They are big huge chunks. Would have been so much quicker. Definitely doing that next time!
This is the third time I’ve made this- excellent! This time I added 2 spicy chopped, cooked Italian sausages for added richness. A wonderfully fast, easily and delicious weeknight meal.
Easy to make and very good. I added a piece of filet I had and some Ritalin I. This upped the carbs a little, but made a more substantial soup

This was the Minestrone soup of my dreams! I made it during Lent and substituted vegetable stock for the chicken stock. The soup is hearty and filling and it tastes DIVINE! My whole family also loved it! Thank you for sharing this recipe!
Delicious! Whipped it up today and had all of the ingredients on hand. Wonderful soup. I added 1 c ditalini pasta and subbed spinach for kale since we don’t care for kale. Please, no comments about the kale part! 🙂

Well, I did make this minestrone soup tonight but without an instant pot because I do not have one, but I wanted to let everyone know how amazing this soup tastes! I am a soup-a-holic and live in a suburb of Chicago which is still cold and snowy and the picture looks so good. Followed the recipe but at the end I threw in a small handful of mini ziti pasta. I’ve made a lot of minestrone soups before but never one that tastes this great! I encourage everyone to make this soup whether you have an instant pot or not, you won’t be sorry!!

I just made this recipe in my instant pot. I made a substitute because I had a different dried type cheese and I used some canned spaghetti sauce with cheese instead of canned tomatoes. This is amazing! I went out and picked some wintered over kale and added some spinach to the recipe and instead of parsley, I added cilantro. Fabulous!

I love soup…So I would make a vegetable soup…and put in as many vegetables that would make it a very hearty soup. And I enjoy the convenience of being able to freeze a jar of soup for a lazy or quick meal. Since I do live by myself and being a Senior Citizen don’t always feel energetic to throw something together….where that would definitely make it quite quick. I will make a delicious buffalo chicken dip. It is a wonderful recipe for game day and for everyday munching.
I would definitely make Chicken Wild Rice soup as I come from Northern Minnesota where there is a lot of wild rice. Friends harvest it in the fall and I am fortunate to get some wild rice. I might add I am 84 years old and don’t have a lot of time left to cook over a hot stove. An Instant pot would give me more time to enjoy my remaining years. LOL

If I won, I would use it to cook my favorite chili recipe. My favorite way to eat chili is over a handful of Fritos topped with sour creao, jalapenos and grated cheddar. So much yum!

I own an instant pot and have made just about everything in it that will work well with steam: Pasta, soup, eggs, beans, brisket, short ribs, chicken, polenta and porridge among a few. I would like to win an instant pot to give to a friend who is afraid of electric pressure cooking to teach them how easy and safe pressure cooking is now. That may be the best way to introduce people to the instant pot and create some converts. Upgrading the instruction booklet is another project that many new users will appreciate.

The first recipe I would make is a corn chowder recipe. I’ve held on to it for a couple months because I don’t have an instant pot. But it’s one of those recipes you hold on to “just in case” lol.

Since my slow cooker is on its last legs I have thought about putting an Instant Pot on my Mother’s Day gift list to replace my slow cooker and my rice cooker. Chungah, you have an incredible slow cooker french onion soup recipe. I’d like to convert your recipe to the instant pot. I’ve read that the instant pots caramelize onions quickly which would make this soup easy peasy. In fact, it sounds like the instant pot makes everything in 1/4 of the time it takes for most recipes. That’s right up my alley!!
I’d make “Mama’s” Oxtail stew recipe (with short ribs), fall-off-the-bone amazingly good! And a side of garlic mashed red potatoes too. I think I’d have to retire my slow cooker for an Instant Pot!

I would love to get back into cooking like I use too. Family and work eats up my time. Slow cooked meals, everything tastes the same. I have enough recipes saved for the instant pot to print a book, just never pulled the trigger to get one.

I would love to use an Instant Pot to make bone broth. I have this great recipe for Beef Bouguignon,, (I already have the wine!) and I would make your yummy Butter Lemon Chicken from a while back. It’s still one of my favorite go-to recipes. I have a wonderful recipe for braised short ribs that starts with super-browning the onions, an Instant Pot would work perfectly for that! I have a bunch of recipes I want to try! I bought the 8qt IP which works for most things. However, I keep finding recipes that IF I were to adapt the liquid to work in my 8qt then I would have way too much sauce in the end for the amount of meat. Some have suggested doubling the entire recipe but then if we don’t like it we would be wasting a lot! I really would love a 6qt for those recipes.

I would LOOOVE to learn to use the IP for yogurt making. But my true want for an IP is that as a widower, I do not cook much anymore because of the time element and I am exhausted at the end of the day. Yes, I could use a slow cooker, but that means I have to think too far ahead to be able to turn it on in the morning before leaving for work. With an IP, I can come home at night and try one of the many delicious recipes I am seeing and be able to eat that recipe within a few hours of returning home.

First I’d make homemade egg noodles (by myself) and then, after they dry a bit, I’d make either a pot roast or stew beef and cook the noodles in the broth. I used to make this years and years ago with my old Presto pressure cooker and we all loved the dish. Served it over mashed potatoes. Yummy!
We love lasagna but it takes so long to make and I don’t want to spend my weekend just cooking one item.

My first family meal using the IP would be my Mom’s recipe for jook which is a Chinese porridge. I love cooking & eating this but it takes many hours on the stove to make and I see that the IP has a selection for porridge! I love my pressure cooker, however, I can’t control the minutes or the pressure manually. The Insta-pot has these features that makes it more versatile. I would make more variety foods, especially BBQ ribs. I would use the rack and wrap the ribs around. Pressure cook to almost done and then put on the BBQ! I believe you could have BBQ ribs in record time.

I would love to make Maple Smoked Brisket. I love the idea of making something that NEEDS a pressure cooker. I know the Instant Pot can do so much more, but the idea of being able to make something quickly that takes a whole lot of time to make properly in the conventional way is exciting.

I would take an extra pork tenderloin (every package comes with 2 and we only eat one for dinner) and put it in my instant pot with tomatillos, onions, cilantro, cumin, salt and pepper, and green chilies or whatever peppers I have. Make a stew and serve over rice. Top with avocado.
I don’t have a pressure cooker so how long do I make this minestrone without one??? Been cold and rainy here so this soup would be perfect right now.
You can let it simmer on the stovetop for 10-20 minutes, or until the vegetables are tender.
