Roasted Cauliflower
The BEST seasoned roasted cauliflower! Amazingly crisp-tender, golden-brown and the most perfect side dish to any meal!
This has been my go-to side dish for months now. It uses just a few pantry spices – coriander, cumin, paprika, garlic powder, and cayenne pepper – so the prep time is incredibly short here. And the blend of spices is absolutely incredible.
Not to mention the finishing touches of the red onion slices, parsley, mint and freshly squeezed lemon juice.
It is simply perfect, complementing all your favorite mains. I particularly like to pair this with my IP rotisserie chicken for a complete meal, and a glass of wine of course to round it all out.
Roasted Cauliflower
Ingredients
- ¼ cup olive oil
- 2 teaspoons ground coriander
- 1 ½ teaspoons ground cumin
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ¼ teaspoon cayenne pepper
- Kosher salt and freshly ground black pepper, to taste
- 1 ½ heads cauliflower, cut into florets
- ¼ cup thinly sliced red onion
- ¼ cup chopped parsley leaves
- ¼ cup chopped mint leaves
- ½ lemon
Instructions
- Preheat oven to 450 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- OLIVE OIL MIXTURE: In a small bowl, combine olive oil, coriander, cumin, paprika, garlic powder, cayenne pepper, 1 teaspoon salt and 1/2 teaspoon pepper.
- Place cauliflower florets in a single layer onto the prepared baking sheet. Add OLIVE OIL MIXTURE and gently toss to combine.
- Place into oven and bake for 30 minutes, until golden brown and crisp, flipping halfway. Sprinkle with red onion, parsley and mint.
- Serve immediately with lemon, if desired.

Fresh, tasty, easy to make and delicious! The mint, onions and parsley toppings take it to a new level. A spritz of fresh lemon juice livened it up too!

My entire family loved this! The onion and mint complement the seasonings really well. I forgot about the lemon, but the cauliflower was delicious without it. I’m glad to have a great way to use fresh mint, since it’s trying to take over our whole garden.

Dang! These were delicious! A Costco-sized bag of cauliflower disappeared, and we usually have leftover veggies. These will definitely be made again.

Delicious combo of spices! We made it in a basket on the grill which gave it a delicious char. Also used cilantro and yellow raisins in place of parsley, onions and mint.

I made this tonight, it was so delicious! I literally couldn’t just eat the vegetables and no other protien side. I roasted mushrooms along with and it was so good. Its a keeper.
We loved this – great flavor! Didn’t have any mint on hand so I could not follow the recipe exactly. Next time I will reduce the cooking time a bit so the cauliflower isn’t quite as soft.
Great flavor and i loved the accents of the mint, parsley and onion! Served with turmeric chicken, mujadara (lebanese lentils and rice), and a cucumber raita – it was a perfect contrast and went great with the yogurt sauce. My pieces were a bit smaller so I reduced the cooking time by 5 mins. I would either reduce it a few more minutes or cut larger pieces.
I’ve never liked cauliflower – until now! So easy and delicious! Thank you for making it a LOT easier for my family to eat our veggies. 🙂
