BLT Chopped Salad
All the goodness of a BLT in a healthy salad form with a refreshing lime vinaigrette!
I know that we’re in the new year and all and we’re supposed to be eating salads and quinoa casseroles left and right but no one said we had to leave out bacon, right? I mean, you can always sneak it in a salad and make it healthy. And if you really want to take it a step further, you can even add a little bit of an extra crisp bacon garnish. Or am I just pushing it here?
Either way, if all salads were like this, I’m sure I could eat a BLT chopped salad everyday for the rest of my life. From the crisp bacon to the gorgeous cherry medley tomatoes, fresh avocado, and sweet corn kernels on a bed of crisp romaine lettuce, this salad is absolute perfection. And with a drizzle of that tangy, sweet lime vinaigrette, you’ll really want to have this every. single. day.
BLT Chopped Salad
Ingredients
- 4 slices bacon, diced
- 4 cups chopped romaine lettuce
- 1 avocado, halved, seeded, peeled and diced
- 1 cup cherry tomatoes, halved
- ½ cup corn kernels
- ¼ cup crumbled goat cheese
For the lime vinaigrette
- ¼ cup olive oil
- ¼ cup apple cider vinegar
- Zest of 1 lime
- 2 tablespoons freshly squeezed lime juice
- 2 teaspoons sugar, or more to taste
Instructions
- To make the vinaigrette, whisk together olive oil, apple cider vinegar, lime zest and juice, and sugar in a small bowl; set aside.
- Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
- In a large bowl, combine romaine lettuce, avocado, tomatoes, corn, goat cheese and bacon. Stir in lime vinaigrette.
- Serve immediately.

I make this salad quite often. My daughter-in-law loves it and so do it. It’s just the right combination of everything great about a BLT!
We make this all the time when we have guests over, it is so amazing! Make this you will not be disappointed and if you make enough for guests they will be impressed!!!

i have been eating salad for a quite a period of time (as losing weight) and figured out that it’s the best food that one should add into his/her diet. it’s been a month that i have been eating salads and boiled veggies and lost around 8 kg weight and archived great health goals as well. Moreover, i have searched for many recipes to make my salad more healthy and tasty but had to sacrifice one all time, either taste or health coz it’s said that you can’t have both.
Chungah, after reading your post i think i could be able to achieve both. i have tried making many salads and will try this one too, have a kind of intuition that this one will do better. cheers for this one mate!
Do you use fresh corn cut off the cob or canned?
Fresh cooked corn cut off the cobb or canned should work just fine.
The dressing was terrible – the oil/vinegar ratio seemed very disproportionate. I’m glad I tasted it before putting it on the salad. I would recommend finding another dressing.
Delicious salad! The lime vinaigrette dressing reminds me of key lime pie which gave the salad a citrus, fresh taste. You do need to like lime to like this, but if you do, it’s wonderful. At first I was concerned about the equal quantities of vinegar and oil making this too vinegary, but it works in the salad. I did use the 2 tsp sugar, but I might try less next time. Since I do not care for goat cheese, I substituted blue cheese.

wow! I cut the recipe in half bcuz there’s only 2 of us – I kid you not we chased every little bit at the bottom of our bowls.
This was SOOOOOOOOOOOOOOOOO good!!!! I’m not a fan of vinaigrette, but I loved this! I took the advice of a commenter above and added some mayo to the dressing to mimic a BLT. So good! I had some black beans in the fridge, so I just threw them in with it. YUM!
This sounds amazing! I was just wondering if I could store the dressing in my fridge if there is leftovers? I’d hate to throw it away!
The dressing should keep for 1-2 days.

Great recipe! The fresh corn is a smart addition (mild sweetness and texture difference to replace the bread and mayo), and avocado is of course the BLT’s best friend. A few small chunks of the avocado whisked into the vinaigrette will add body and help the dressing stick to the lettuce. Thanks!

Christy, you can use canned corn kernels or grilled corn kernels. It’s really based on personal preference.
